ISO: Rest. qlty, boneless short rib recipe

I know about sous vide possibilities, thanks to Dcarch, but other than that, how to make them so they "melt in your mouth" like I've had in high-end restaurants? I have a great source for beautifully marbled, boneless short ribs (at our local Costco, believe it or not) and would love to make them with the same result. My typical recipe is, say 3 hours or so in oven or multiple hours in the crock pot. But, they are still STRINGY and just not THAT moist compared to a few rest. where I've had them. Do they ALL sous vide them or IS there another way to achieve that lovely taste and texture? Just not quite ready to invest in a sous vide or try and make one. Any suggestions or recipes?
