Roasted fish tacos?

When we were in Mexico this winter we had roasted fish tacos that were amazingly wonderful! It looked like the boned fish was roasted with seasonings and the mixture was served open face on miniature tacos. They were so wonderful! I've seen grilled fish tacos, but this was more of a shredded fish roasted with seasonings until it sort of fell apart, and the flavor was more intense. Anyone ever make these and have a recipe?

Karen, take a drive to the north. Taste of Charlevoix is this Saturday and I happen to know there will be Fish Tacos at American Spoon starting at 11:30 am. I will be there, so please introduce yourself to me.

Hi Nancy! I'd LOVE to meet you Saturday, but my husband and I are on granddaughter babysitting duty, as our daughter and son-in-law are going out of town for a wedding. Sounds like we're close thought - we have to get together sometime - I'd love it! Are you every in Traverse City or Old Mission Peninsula?

Hit the nail on the head Stoney! Pam: I grow onions. But this past crop were all small. I think it's because I took a chance by planting them in a pretty shady spot last October and they just never got good growth as the sun got even worse as winter approached. Live and learn. It's always a quandary with them. I'm supposed to get them in the ground in Sept/Oct, but my good spaces are always being taken up with my summer veggies still. Oregano, well.. I like the Mexican stuff for one. Two, I hate starting a lot of herbs from seed because they take so damn long. So, if I have my choice, I buy starts. Which leads me to three-- I haven't found a start for the Mexican oregano anywhere. And 4.. I get a bag like that in the pic for 3 bucks. I grow SOME herbs... Rosemary, French Thyme, Cilantro, Parsley, and sometimes Basil. If I had more space, I'd have a ton going all the time. That reminds me... my potted Thyme took a crap. need to pick up another one. I make this quite a bit. You can use any mild white fish -- I usually use tilapia because I buy it in bulk at Costco and freeze it individually. I serve it with a Mexican Rice dish and shredded cabbage. If you don't like chipoltes, just stir in some of your favorite salsa into the sour cream. Snapper Tacos with Chipotle Cream The fish cooks on top of the vegetables in one skillet. Break the fish into chunks to finish the filling. 1/2 cup fat-free sour cream 1/8 teaspoon salt 1 canned chipotle chile in adobo sauce, seeded and minced 1 1/2 cups chopped onion, divided 1 1/2 cups chopped tomato, divided 2 tablespoons butter 1 teaspoon ground cumin 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 4 garlic cloves, minced 3 tablespoons chopped fresh cilantro 1 pound red snapper fillets, skinned 1 teaspoon grated lime rind 2 tablespoons fresh lime juice 4 (8-inch) fat-free flour tortillas Combine sour cream, 1/8 teaspoon salt, and chile; set aside. Combine 1/2 cup onion and 1/2 cup tomato; set aside. Melt butter in a large nonstick skillet over medium heat. Add 1 cup onion, 1 cup tomato, cumin, 1/2 teaspoon salt, cinnamon, and minced garlic; cook 5 minutes, stirring frequently. Stir in cilantro. Arrange fish over onion mixture in pan; cover and cook 3 minutes. Turn fish; cover and cook 2 minutes. Break fish into chunks. Stir in rind and juice; cook 2 minutes. Remove from heat. Warm tortillas according to package directions. Fill each tortilla with 1/2 cup fish mixture and 1/4 cup reserved onion mixture; top each serving with 2 tablespoons chipotle cream. Fold in half or roll up. Is this Taco Sauce safe?

It is basically just a slight modification of the standard NCHFP recipe for Tomato Taco Sauce. All they did was reduce the amounts, switch to roasted cumin seeds, and add roasting of the tomatoes and peppers. All of that could be done using the NCHFP recipe too. So assuming you leave all the other ingredients except for the onions and garlic the same - no reducing of the called for acids - then safety isn't an issue. Dave

Karen, I head north periodically too, I'm 90 miles south of Traverse City, so maybe we can meet at some point too.

So, how's the cherry crop this year? Here my local orchard says the crop is a total loss, I'm hoping the lake moderated your freeze?

Hey Annie! That would be great! We could have a Garden Web reunion! The cherry crop varies in the area. We have a small orchard (55 trees - mostly apples but a few cherries & peaches). The tarts are O.K. and only about a third of the sweets were frozen. We have neighbors who didn't suffer any cherry damage and others who did. The Leelenau peninsula, just across the bay from us, had terrible hail this week, which ruined much of their cherry crop. They say it will be the worst crop since 2002 when we had a heavy late freeze. It has been a challenging year. I have about 100 roses in my meadow garden and they've had a triple whammy this year - a rough winter resulted in my having to prune most of them almost to the ground. Then, just when they were full of wonderful new shoots and basal breaks, we got a 26 degree night and they froze. Then, just when they began to recover with lots of new shoots, the deer got into the garden and 'pruned' them again. We've never had the deer come all the way into the garden in 20 years. Sigh! The woes of the farmer and gardener!
