Picnic foods that 'Hold' well???

I have a family reunion on the 19th.

In a park, no cooking facilities, 2 hour drive to get there, couple of hours there and 2 hours back.

I need some foods that hold well...really well!

We are supposed to bring a main dish, side and dessert.

Not large quantities, just enough to feed our own family (4 in our case). It will all be thrown out on a big table and shared.

This is NOT a gourmet crowd, but they appreciate homemade, unique stuff...just not too "out there". Traditional picnic stuff is fine. I am just challenged by the distance. Some of the others will bring their motorhomes....maybe. I can't count on that! Some live much closer.

So far, I am thinking about strawberry shortcake for the dessert. I'll be picking fresh strawberries the day before anyway!

Either a 4-bean salad or Black bean/corn/tomato salad.

It's the main dish I'm struggling with.

I am a meat lover.

Any ideas? I know it's going to be hard to "hold" anything that long. But, if I can ice it, transport in a cooler, then be able to get it iced back down for the trip home, it may work!
