Brad, as I've mentioned, I only had them with canned pineapple, never with pie filling. If I remember correctly, though, they were a bit crumbly, we needed plates and forks.

I don't think I'd refrigerate them, because it might make the top of the cake sticky. I'd maybe put one in the fridge and see how it affects texture. (if it's not too late for that)

Sorry about the cake bars, sometimes an unfamiliar recipe just doesn't turn out like you want them.

Hi Annie,

They are in the fridge now. I did sprinkle the top of them with powdered sugar. They are a little sticky on the bottom, and they are crumbly. Watching mom cut them into squares was not fun. They taste wonderful though, so they're not a total loss. The tea turned out beautifully as well. My one friend from the theatre said the theme of the party is "redneck party food", which makes me weary of what will be served LOL.

Ah, but Brad, I LIKE redneck party food. To me it's black eyed pea dip and cornbread, sweet potato biscuits with slices of ham, maybe some pulled pork or smoked brisket.

Then again, it could be possum pie and beer.....

Annie, how tempting it sounds to have some pulled pork and brisket. I enjoy those, too. It's usually some good eats at the theatre. The last cast party was all Mexican foods, save for the cobbler I took for dessert lol. It'll be a very fun time, regardless of what is on the menu.

Deli salads from Piggly Wiggly or the equivalent (I'm not talking Whole Foods quinoa here), hotdogs, grocery store cupcakes, and mayonnaise are high on the ingredient list.

I guess it depends on your own definition of "redneck". My brother says that NASCAR stands for Non Athletic Event Centered Around Rednecks, and he loves it. However, you check those parking lots and there are a lot of briskets over coals and chicken with various homemade rubs and sauces, whole hams and fresh breads, some darned good food going on accompanied by copious amounts of beer and soft drinks. There will occasionally be wild game, but not often, although I think that a nice rack of venison would not be inferior.

Things like "Duck Dynasty" and other reality shows, "My Big Fat Redneck Wedding" and that ilk have made a caricature of the redneck today, but I grew up in a family of "rednecks" and it basically meant we all worked hard, went to church, didn't smoke pot and weren't afraid to get dirty. Red neck was either a reference to union activity or people who worked outside in the sun enough to get a "red neck" Now television has made redneck seem like something else all together. Wikipedia explains "The term is used broadly to degrade working class and rural whites that are perceived by urban progressives to be insufficiently liberal."

It all depends on the redneck!

You're so right, Annie! Brad, the cake bars sound delicious.

Well, everyone, the play and food were both big hits! It's always fun spending time with good friends :). Some of the food included KFC (chicken, mashed potatoes, gravy, cole slaw and mac and cheese), taco salad, assorted desserts, beer, some wine, baked beans with hot dogs. It was quite a spread. The tea and cake bars both got compliments. I can't wait for the next cast party!
