What a great idea. What's not to love about bacon camp.

momj, you just knew it had to be in Michigan, didn't you?

Actually, Zingerman's does a lot of cooking/food classes and seminar type things, from chocolate to bacon to baking.

This type of bacon in the UK and Ireland is called rashers and the bacon we mostly use is called streaky bacon. Because it is so lean it requires much less time to cook and becomes dry and chewy if cooked more than a couple of minutes per side. Canadian style bacon can be made from the pork loin using about the same procedure. It is the pork shoulder the same cut used for pulled pork. We have at least two meat markets here locally who make it and it really is excellent,much better than anything you can purchase at your local supermarket.

We cook everything over the fire when camping but want to spend most of our time doing things away from the campsite. Those wire baskets that clip closed at the handle work for about anything - hotdogs, burgers, steaks, chicken pieces, ribs, pork chops. Get another one for the veggies. Keeps the food off of the in-house grill rack which is often rusted and makes flipping a breeze. Sandwiches don't require a fire. To save time and wood, you can cook some meat for lunch over the breakfast fire. Cold chicken or ribs are delicious and if you're going to eat it in a few hours, it really doesn't need to go in a cooler. Cold sides can be prepared at home before you leave. So can cookies, muffins, trail mix snacks. Fruit that doesn't require cooler space is also good to have.

Hello everyone! I walked in the door last night at 11:00 p.m. after the flight from hell. I white knuckled it all the way home on the plane. Usually turbulence doesn't bother me. Charles didn't wake me this morning with his usual rustlings, so, I slept in and I'm well rested. That dough master named Teresa really cracked the whip and had me worn out by the time I got home ;-). I had such a good time and was sorry to see the get together end :-( Everyone at Paney Camp was a joy to be around and I highly recommend the get togethers. Looking forward to PFPP in Novemeber. When I got home last night I had a box from a CF friend on the kitchen island. OMG, I couldn't believe it! I'll start a thread as soon as I can. omg, omg, omg! Maggie is here and we are catching up on our time we spend together every week so I need to keep this short. I will be back tomorrow with a few more pictures. I'm running short on time today.

Not my preference but many do it...like it Might want to try a simple toss in a 1/4 tsp in avocado oil or plain butter... I don't like oily veggies or beans. Need to find your family preference as some cook to death soft in bacon fat and we like them lightly blanched in water/or steamed quickly, then a simple lemon wedge...some fresh herbs. Crisp. Fresh still. Earthy. I put a lot of garden effort in fresh produce. I want my beans pure and near raw. As we like it...but some like veg cooked to death and fatted. A note to add...my peas and beans this season have been horrid and woody and nearly not edible unless a few shucked for tiny peas...(so few but good)... Not any cooking method would have saved them with such early heat...first year in twenty to have such a bad season...a few meals we had crisp and fresh right off the vine not cooked at all...

I got a Zingerman's catalog in the mail last fall; I'd never heard of them. But I ordered a few things for a Christmas feast. OMG! the bacon was incredible!

There stuff is pricey....but AWESOME! I plan on trying the Nueske(sp?) Wisconsin smoked bacon for BLT's this summer. $17 a pound...so I better stand by the oven and not get distracted...I would cry if I burnt $17 worth of bacon.

Their ruebens are unbelievable. Don't peruse the catalog on an empty stomach or you might be a few hundred less in the bank account...and that is a conservative estimate.

Does anyone find it funny that "Bacon Camp" was founded by Ari Weinzweig? :)

What is it with Jews and pork, we can't get enough of it, lol! It's my dad's favorite food.

For the record, this half jewish vegetarian only like some kinds of bacon on some kinds of things. I find most of it too greasy or too salty. But with a fresh homegrown, it has to be a BLT!

I have it on EXCELLENT authority from a former coworker, who is orthodox (his wife tells him he is, at least) that Jews don't eat pork, they eat PINK CHICKEN...

One of the best food basket gifts that I ever received came from Zingermans from my SIL. Her and her family used to live in Saline and she loved this place. The brownies that were in the basket along w/the bread were outstanding! So was everything else in the basket.
