We cook everything over the fire when camping but want to spend most of our time doing things away from the campsite. Those wire baskets that clip closed at the handle work for about anything - hotdogs, burgers, steaks, chicken pieces, ribs, pork chops. Get another one for the veggies. Keeps the food off of the in-house grill rack which is often rusted and makes flipping a breeze. Sandwiches don't require a fire.

To save time and wood, you can cook some meat for lunch over the breakfast fire. Cold chicken or ribs are delicious and if you're going to eat it in a few hours, it really doesn't need to go in a cooler. Cold sides can be prepared at home before you leave. So can cookies, muffins, trail mix snacks. Fruit that doesn't require cooler space is also good to have.

We like to make baked potatoes. Wrap a whole potato in aluminum foil, and burry in coals of fire for a good 30-40 minutes. We also like to bring pre cut veggies in a zip lock like zucchini, squash, onions, peppers and mushrooms and cook in a grill basket... Or a foil bag for that matter. Another good one is chili in the crock pot. I'll make the chili ahead of time and then put it in a zip lock and then freeze in a box (small enough for the inside of your crock pot). So you have a frozen block of chili that will fit inside of your crock pot. Then the morning of, plop your block of chili in your crock pot. You'll have hot chili that evening!

This is the dish that can literally be cooked by itself. We also like to eat potatoes cause it is easy and very fast prepared. This is a very simple and delicious recipe, I hope you'll like it!

You need: Large baking potatoes, whole (red or yellow) onions, dill, parsley, bacon bits. First you slice potatoes almost all the way through but leaving ample amount to hold it all together. Then cut the onions, put one slice in between each of potato slices and sprinkle the potatoes with bacon bits and some dill. You can wrap the potatoes well with heavy aluminum foil and bury in the coals of the fire/campfire for around 45 minutes.

Try to make this, you will not regret!

We now also do kabobs (pork/beef/chicken) on wooden skewers in the camp fire. YUMMY

I love doing tin foil dinners. Usually we put carrots, potatoes, beef, and corn in the dinners, with some seasoning. It is delicious! We also really like to get dutch ovens and cook peach cobbler. Yum.

Maybe it's a carry over from my military days (eating out of a mess kit), but when we are out on our camp/fishing trips, I often like meals served in one dish.

One particular dish/meal I've always liked that's hearty and sort of quick to prepare (that I first had in the military), and that would be "shepherd's pie" ...

Some lean ground beef (I always add garlic while cooking) -
Mashed potatoes (instant will work, too)
can of peas
beef gravy (since I'm a lousy gravy maker I use canned)

Plop the mashed potatoes in the middle of the dish, add a spoon of peas right in the center, then add the ground beef and top it all with the gravy.

Good hearty meal for some worn out fisherman that can be eaten from one dish fireside (while telling fish stories).
