Momto4kids (I've got 4 myself), the liners stuck to my cup cakes like GLUE lol. I put the sesame seeds on after. My tops were also a little sticky so they stuck on fine otherwise I would have just used a little corn syrup to make them stick

loves2cook, did you make the brownies in the small muffin tin or did you bake a sheet of brownies and then cut them out? what a great idea for the 4th.

I made the brownies in the same cupcake pan as the cupcakes but next time I would make them in a pan and cut out with a round cutter. I would use a bigger pan so the brownies come out thinner (I had to cut these in half horizontally and it was a nightmare) and obviously cook for less time.

The cupcake recipe was doctored. Gasp, I used a white cake mix (mine was Pillsbury, the new Duncan Hines formulation doesn't work as well for cupcakes), added a cup of flour, a cup of sugar, a cup of sour cream, 1/2 cup water, 1/2 cup pina colada mix (from Sam's), 4 egg whites and 1 Tbsp vanilla. Whisk all dry ingredients together. Beat in wet ingredients just till incorporated, portion out into 24 cupcakes and bake st 325 for 15-20 minutes.

When cool, split the cupcakes, add red buttercream for ketchup, brownie for meat, yellow buttercream for mustard and tinted coconut for lettuce. I needed a little more buttercream over the coconut to hold the top half of the cupcake in place. If the top isn't moist brush with corn syrup and sprinkle on sesame seeds.

The recipe is VERY forgiving. You can sub the entire cup of liquid for any other liquid to flavor the cup cakes so changing out 1/2 a cup for coconut milk should be fine.

Lisa Yockelsohn's Baking by Flavor has some pretty amazing coconut cupcakes. You should see if your library has a copy. Also the new Martha Stewart Cupcakes book has a nice looking recipe. I've made the first and it was good. Haven't made the second one (yet)

The link I added below (from cakecentral.com's lovely Macsmom) is filled with tons of variations of the original white almond sour cream cake batter. These ladies use the recipes to make cakes and cupcakes for weddings etc. You can get LOST on that site for days, coming out of your stupor only when you reach starvation point.

I'm so impressed! Bakerella actually did these along with cake made into french fries and she packaged it all up into fast food looking wrappers she made that said "Happy Father's Day". I was looking at those burgers and thinking who on earth has the patience do that? Your did a great job! Thanks for posting this.

Making them right now. Use a mellon ball scoop to put the brownie into the muffin tin. Cooking for 10 min. Hope they don't stick. I'll post pics.
