It's Picnic Time!!!

Hi everyone,

If all goes well, Saturday is the date of the picnic a few of my old friends (from high school) and I are having. As of now, here is the menu.

Gram's Lemonade
Alabama BBQ Ribs (in the oven. I'll be making a double batch)
Twice Baked Potatoes
Veggies and Dip
Buffalo Chicken Dip and various flavors of chips (tortilla chips are a must lol)
Peanut Butter and Chocolate Rice Krispie Bars

It will be a very fun day. There will be 8 of us in all. If it rains, we'll eat indoors, talk, and watch movies. The friend and her husband who's hosting us said that if it's not a blowing rain, we can eat on the porch.

For the ribs, it doesn't say to do this first, but after I fry the bacon slices for the potatoes, I think I'll brown/sear them before placing them into the oven. Not very healthy, yes I know, but that idea just came to me a few days ago lol.

It's been years, since I had a donut... but I do the local donut ride often, where we ride to the donut shop, and then depending on the mood, a different route back. BBQ pork..... Put the roast in a covered roaster and put into a 350 oven with a bit of broth or wine for moisture and roast for about 20 minutes per pound, or until very tender. Let it cool enough to handle, cut it up....slice it and drain the fat out of the roaster and put the meat back and follow the recipe below. his reheats very well....isn't really a BBQ but just great meat for sandwiches.....and it also works well with turkey. you'll want to double the recipe. Danne's BBQ'd pork ( works well with turkey too) One Large onion,. chopped 1 stalk celery, chopped 1 green pepper, chopped 1 1/2 cups broth 2 cloves garlic, mashed ( I like more) 1 T salt ( less or to taste) 1 small bottle catsup ( or a bottle chili sauce) about 14 oz 2 T brown sugar 2 T vinegar 1 tsp allspice 1 tsp dry mustard 1 tsp chili powder 1/2 tsp tabasco 1 bay leaf 1 tsp paprika. Cook about a 5 pound pork roast, covered with some water until very tender. Cool and cut up, Simmer for about 3 hours with the sauce ingredients. Serve on a bun.

Thanks, Michael/Lyra! (grin) she's darned expensive and time consuming for an imaginary child, sheesh. Nope, L, no plastic containers of potato salad in the refrigerated section. I suppose I should be grateful, I did find a plastic container of that ground up bologna and pickle with mayonnaise "sandwich spread" once. The grocery store originally had a small bakery and deli, with rotisserie chickens, but apparently those items spoiled before they could be sold and became a big loss, so now I can get a cold pre-cooked chicken on the weekends, donuts only from Sara Lee and sliced lulnch meats and cheeses. They have a small "hot" section" at lunch time, usually chicken strips, corn dogs and pizza rolls. I can get canned Bush's baked beans, though, and ice cream. Two brands, either Country Fresh or Hudsonville. tricia, I never said I was a manager. I'm a Mom and a farmer and at work I'm "Angela, The Pitbull". My employees know their jobs well, so I don't delegate very much, they just do their jobs and I make sure they get paid. I spend most of my time doing legal research, drafting briefs and motions and trying to make sure the criminals get locked up, while simultaneously trying to wipe the images of their abused wives/battered children out of my brain, along with the memory of the autopsy photos and the drunk driving victims. I'm not good at delegating, I'm good at doing whatever needs to be done to help those who need it. That, and I'm good at cooking, so i do what I'm best at. At least I enjoy the cooking! Annie

Picnic Roast Skin/fat: What to do with it?

I had a recipe that used all the meat from a shoulder/picnic roast. All I have left is the raw skin. I wonder if I could wrap it around a different roast and bake it. Not unlike using caul fat. I know I can attach it to a roasting pan and broil it. Fat side down as it was on the roast or fat side up for a difference? I have read that I could render it down for the lard and still have the fat for a cooking adventure. Anyone with any other insights?

Unfortunately, with my friends experiencing car troubles/transportation issues, the picnic will have to be rescheduled for a later date. At least, I have a planned menu all ready to go! :-)

Ooh darn, cancelled before I even found out about it.

I agree, the menu seems perfect to me and be sure to make LOTS of lemonade.

I'll be watching for the rescheduled date, and hoping the weather is wonderful, as I know the company will be.

Annie, yes, I'm a little disappointed that I won't be seeing my friends as soon as I thought, but it'll be worth the wait. I think three gallons of my gram's lemonade will be enough for everyone to help wash down their meals with lol.

islay_corbel, I surely won't forget the finger wipes! Glad my menu is meeting approval from all around :-).

I was going to say that I was glad the picnic is finally happening after so much anticipation and planning, but I guess I'll have to postpone that statement!

Anyway, how are you going to do the ribs... do you boil first or no? I like the tenderness that boiling provides, but some people say it compromises the flavor. Are you using BBQ sauce or a dry rub?

Hope it gets rescheduled soon.

I am going to bake them in the oven, but I am going to brown them first in the bacon grease from the bacon slices for my twice baked potatoes. The recipe is bottled BBQ sauce, Worcestershire sauce, and a can of cola. I'll season the ribs with some garlic powder and black pepper (of course) while searing them.

Well Brad, you never know.

Reminds me long time ago of a friend who had missed a major event because of last minute car trouble and missed the flight.

That plane crashed.

The day of the rescheduled picnic, go get yourself a Lottery ticket.

dcarch, They say, everything happens for a reason. You telling that story reminds me why there should be nine (or even ten) of us at that picnic instead of eight. We lost a dear friend in a car accident the summer before senior year of high school. She was on her way to her summer job, and the road was wet from the rain we were getting. Nicole was like a sister to me and we all miss her so much. Sorry to ramble, but losing someone that close to you that young, it stays with you. I only remember her fondly now :-).

The one thing we were going to do was take her flowers when we all got together, since her younger brother suggested the idea, and we all have absolutely no rejection at all.

Anyways, back on track. Still no official date for the picnic/get-together, but I hope it'll be at least sometime this summer.
