Nancy Question re Lemon Blueberry bread

Nancy, or anyone....I'm just about to start this recipe and wondering what a X loaf pan is as stated in the directions. I'm assuming it may have meant to be the size and not some fancy loaf pan I need to run out and buy....not that that would be a bad thing! LOL

Lemon Blueberry Bread

Topping

1/2 cup sugar

1/3 cup flour

1/2 stick unsalted butter

1 teaspoon lemon zest

1/2 teaspoon cinnamon

Batter

3/4 cup sugar

1/2 cup milk

1/2 stick unsalted butter

1 egg

2 cups flour

2 teaspoons baking powder

1/4 teaspoon salt

2 cups blueberries

1 tablespoon lemon zest

Preheat oven to 375 degrees. Oil a X loaf pan. Stir topping ingredients together until smooth, set aside. Stir sugar, milk, butter and egg together until smooth. Toss flour with bp and salt. Stir into wet ingredients then fold in berries and 1T lemon zest. Transfer to pan, sprinkle with topping. Bake 50 minutes. Cool in pan 5 minutes then transfer to wire rack to cool completely.

I make this wondeful bread all the time and never noticed that. I just use my regular size loaf pan!

Sharon, that's a 9" bread pan.
I made it about 3 weeks ago, it's one of Kim's favorites.

There are several ways of describing the strength of an acid solution. If the label says 50% sulfuric acid(V/V), it can be read as "50% sulfuric acid, by volume." If the label says 50% sulfuric acid(W/W), it can be read as "50% sulfuric acid, by weight." Referring to the periodic table, sodium has an atomic weight of 23, and chlorine has an atomic weight of 35.4. Since we know that the formula for table salt is NaCl, we can add 23 and 35.4 to get 58.4. A 1 Molar solution of sodium chloride has 58.4 grams of NaCl dissolved in one liter of water. If the label says 50% sulfuric acid, and that's all it says, you really don't know if the ingredients were measured by weight or by volume. One liter of concentrated sulfuric acid, added to 10 liters of water, would be labeled "10% sulfuric acid(V/V)." You will notice that there is some heat generated when mixing sulfuric acid with water. This is normal and expected. If you were to add one liter of sulfuric acid to one liter of water, the temperature might get high enough to melt a plastic container. However, when making up 10% sulfuric acid, the rise in temperature would be less than 35 degrees F.

My brother is a big aquarium nut and is always testing the water for hardness, ph etc. He has tested the local water many times for hardness and it goes off the chart, literally his testing supplies canÃ¢ÂÂt go that high. So it just goes back to the view that what works for some people isnÃ¢ÂÂt always going to work for other people. To me using sulfuric acid is no big deal. I have had plenty of experience using dangerous chemicals and I actually already have some sulfuric acid.

You can use the remaining beer in a marinade, like below (source), or I would make 'beer can chicken' - put a whole, seasoned chicken, propped upright, on the grill, 'sitting' on a partially filled beer can (put two more church-key holes in the can). Beer Marinade & Barbecue Sauce Yield: 3 3/4 cups 2 med. onions - minced 2 cloves garlic - minced 1 cup barbecue sauce 1 cup ketchup 2/3 cup beer 1/4 cup honey 2 Tbls. lemon juice 2 Tbls. red wine vinegar 2 Tbls. Dijon mustard 1 Tbls. Worcestershire sauce 1 tsp. hot sauce 1/2 tsp. ground black pepper -Combine all ingredients and coat your favorite meat with marinade; allow to stand at room temperature for up to 2 hours or in refrigerator overnight. -Remove meat from marinade; set aside. -Bring marinade to a rolling boil over medium high heat, then reduce heat to low and simmer for 10 minutes, or until thickened. -Use as sauce for basting or serving with grilled meat.

Here "normal" size (grocery store size) is not softball size. But since I like lemon and lemon flavor in baked things, I would zest the whole lemon for the scuffins . . . then I would squeeze the appropriate amount of juice to use in the recipe.

Okay...my confideence level for baking just went waaay down. I haven't baked much at all since my children were at home and my youngest just turned 45....and...I was never great at baking anyhow.

I just finished making the Lemon Blueberry Bread and it's still cooling. The topping was about the consistency of peanut butter, so no crumbling it and the batter was so stiff I could hardly stir it and folding in the berries didn't go well either. I checked the ingredients of both the topping and the batter and I did both of them right. It may taste fine, I wonder what the texture will be. Just don't understand why I am such a dismal failure at baking.

Apparently no one else had the difficulty I did. Where oh where did I go wrong.

Jude, I'm sure you are not a dismal failure at baking. It is a stiff dough. I just automatically cut in cold butter for the topping, that will keep it crumbly. I also automatically melt butter before mixing it with the sugar, egg and milk. If you put the blueberries in, a few at a time, not a lot of mixing is required.

Nancy, it really is very good. DH loved it and DD and
DSIL did as well.

Yes, my butter for the topping was room temperature so I guess that explains that.

I did melt the butter for the batter but the cold milk caused it to clump; guess I should have mixed the butter and egg before I added the milk, but that's hindsight. However, I will be making it again.

Well I'm just back from the weekend party. The bread was a hit Nancy, I overdid the lemon and added a few extra berries but it was excellent.

Jude the batter was very stiff and adding the frozen berries just made it stiffer but I did get it smoothed out in the pan and the result was delicious. I particularly loved the topping.

Oh yeah, the topping is VERY good and overall I was pleased with the way it turned out even though I dumped the berries in all at one time which made it more difficult to distribute them in the stiff dough. Mine did look very similar to Kathleens and it is a keeper for sure!
