Beef back ribs, what to do with leftover meat?

And what a dissapointment. They were on sale so bought them. After cooking half the package in the slow cooker yesterday, found out they had very little meat and lots of fat and bone. So cooked the other half over night in the slow cooker.

What would be a good use for the meat I just took off the bones? And how do I separate the fat from the meat - except by hand? And is there an easy way to get the marrow out of the bones? I have lots of big bones!
