What's for dinner Sunday?

I didn't make it to midnight last night, did you? Tonight we're having pork chops with dressing, creamed spinach, black-eyed peas and cinnamon apples. There's a dab of sweet potato left over for Harry if he wants it.

Hahaha, Midnite! Not a chance! LOL

I took a steak out yesterday, and I marinated it in sesame oil, hoisin sauce, minced garlic and rice vinegar and ginger and some hot chili sauce.

Grilled it sliced it thin and had it with rice and stir-fried cabbage, carrots and onions. Pretty tasty.

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

I've thawed a couple of boneless chicken breasts (I'll save a little of one for a soup for my lunch ala Raven) and plenty of fresh veggies for a stir fry. Robert will be my sous chef.....there will be lots of chopping and dicing and my hands are so sore from yesterday's pruning. He's using my mandolin, so let us pray. Let's see....green pepper, onion, garlic, fresh ginger, broccoli, carrots, Chinese cabbage, shiitake mushrooms, sugar snap peas. I'll season the brown rice with a little sesame oil.....so fragrant.

Sunday was a beautiful, cold, wintry, sunny day. We bought a 2-pack of frozen Delissio pizza when we were doing groceries. It was on sale, plus I had a $2 coupon. Boy have they changed! They are a LOT smaller.......square instead of round. The package said Party Pack but they wouldn't come close to feeding a group of people. With frozen food I always add more veggies, sauce and cheese. Thank heavens for the coupon, we won't be buying that again. We had a salad with it as well. I made an apple crostata for desset.

Laura, your dinner sounds delish--had to LOL at your DD. How soon they forget who taught them everything!! Sue, I was thinking of you, too. Glad you weren't alone when the storm came through and extra happy it missed you. Terri, lucky you to be able to see blue skies from your windows. Mine are so dirty!! I thought about making cc cookie dough. I have peanut butter dough in the freezer but my grandson is coming and I'd like to send him home with a bunch of cookies. :-) and turkey, too. OldFixer, you sure accomplished a lot today. Our electric never goes out for long, just long enough to have to reset the clocks. Hate when that happens! You deserve another happy hour round!! Seagrass, sure hope that storm has mellowed before it hits your area. My niece works in Boston and takes the train. Hope she's safe, too.

Yep we made it! Stimulating conversation with old friends, we nearly missed the ball drop!

We had our pork and kraut for lunch, just had hotdogs with kraut for supper.

Mike is going to grill a beautiful London broil that I have marinated. Right now he has baked potatoes cooking on the grill. I will make a salad to go with it.

We made it past midnight since that is when we usually go to bed even when traveling with the motor home.

I don't know why I fell for the pork and sauerkraut thing this year. I never much pay attention to it. Frankly I would have preferred leftovers. It was just okay. Yes, I did make it to midnight but it was pretty funny. It was pretty much an older crowd at the club. The evening started at 7:00 and all I could think was 5 hours? I'll never make it. Well, pretty much everyone felt the same way but we all hung in there. We reminisced about how we use to dance every dance and would go till 3:00 or 4:00 in the morning. Well, I would say everyone was gone by 12:30 maybe even in bed by then. LOL

yes we did make it and I manged to drink about half a glass of Asti which is a lot for me LOL

today was our big meal day, I had a crock pot loaded last night that cooked on low all night with a big corned beef, baby red potatoes and carrots and onions, I put a pot of blackeyes with green snaps and ham hocks on this morning to cook slow, Made a batch of cole slaw and some sweetpotatoes with praline topping. Man oh man was it good, we both ate so much we then fell asleep in our recliners LOL Not even sure I will want anything tonight for dinner.

Taco's tonight-they were yummu except the salsa had gone bad and we had to toss it :(

We went to a friends house last night for dinner. We played some games with the kids and then by ourselves. Had a good time and got home about 9. Put the younger DD (3) to bed before 10 and older DD (7) wanted to stay up until midnight. We all fell asleep about 11 (LOL) but I woke up at 11:30 so DH and I watched the ball drop!

got a package of turkey from thanksgiving out..layered it with mushroom soup and sour cream. topped with packaged stuffing...added this new salad mix we found with extra veggies...it was easy and quick since we both are fighting colds...

Carol, I thought about getting some smoked salmon and mini-bagels, but that's about as far as it got. Thinking about it!

Glenda, we had Hoppin' John but it was out of a can of Margaret Holmes!

We've about decided we don't like the typical New Years' food, and probably won't follow tradition from now on. I won't miss it. I noticed not many of us had the ususal pork. Only Georgysmom and Lynn d and my house!

Now I have to figure out what we're having tonight. I've got to get back into planning our meals for the week. It makes my life so much easier!

DH's been eating fried Chicken since Friday. He's been hinting about fried chicken and mashed potatoes for weeks. Thursday I told him to pull a chicken out to thaw. Got home too late Thursday for that big of a meal. Friday I got home and pulled the "chicken" out of the fridge. He'd thawed out 4 Costco packs of (huge) boneless, skinless breasts (2 too a package) and 4 Costco packs of (huge) chicken thighs (4 to a package) - so, 24 huge pieces of chicken. I was frying chicken in two big dutch ovens for a couple of hours. I was pissed. That would have been close to a months worth of meals for us. He was so apologetic, and I felt so bad for being mad at him, but ohhhhhhh ... doubt he's going to ask for fried chicken for a while.

Haha, Angelaid. Sorry to laugh, but I'm just imagining the look on your face when you opened the frig! Maybe you should have poached some for soups or casseroles. Cold day in you-know-where for me to fry that much chicken. That should take care of his craving for a while, though!
