DH requested tator tot hotdish. So its meat, potatoes and veggie all in one here!

Left over raw veggies from yesterday. I made veggie flour tortilla wraps for lunch with salsa. Very light and filling.

Spray butter Pam 2 tortillas
Put one on med heat in pan on stove
Add cheese and precooked chicken
Done. :)

We're just having left over scalloped potatos.

Broiled salmon. DH is having leftover vegetarian split pea soup as he does not like salmon.

grilled pork chops and brussel sprouts!! ha, ha! Got so many great responses on my brussel sprouts thread that I have that on my mind.

Nothing light here....sorry.
We are having grilled NY strip steak, potato salad, green salad and broccoli. (But no dessert unless I decide to make some sugar free, fat free instant pudding.

Just reheated pork roast and gravy! That's all I have left, from yesterday.

Cold here so I made potato chowder--not light by any means but nice and warm going down. Leftover sweet potato pie and cool whip for dessert.

Broiled salmon here as well - the local Albertson's prepackages it with pesto butter - YUM! They had it buy-one-get-one-free last week so I have another one in the freezer :-)

I think tomorrow's going to be crock-pot chili, we're finally getting some COLD weather down here (gonna be in the 30s tonight!!!)

Lloyd's baby back ribs, rice and sauteed zucchini and onions.

This afternoon I was thinking about ground beef patties with ketchup. I was so hungry for them. So, since I'm home alone tonight that is what I am eating.

I am cleaning out the bad stuff (in me) so I had roast boneless chicken breast over half salad greens/half raw baby spinach with some "light" ranch dressing. I did the breasts (hubby had one too) in the electric roaster and put them in the freezer to cool them off they were nice and tender. Mmmmm.
It felt good to eat light again.

We did "light", too. I called Pizza for Less and they delivered! LOL

Lentils with corn bread and raw onions. Mac and cheese for the kiddos.

We had homemade Crab Imperial, mashed potatoes and corn. The Imperial had too much spices
in it so the little ones had a slice of leftover meatloaf from last night. No dessert for them, they
have been bad and they will be going to bed early.

Cup of vegetable soup for appetizer, I had Chicken cordon bleu, Tom had filet mignon tips and mushrooms in demi glaze. And grilled asparagus. No desserts.

Me cook this ???? Heck no. Went to the restaurant in the country club next door.

I walked over to the adjacent hospital's cafeteria and got a big beef enchilada.

We had leftover killer Shephard's Pie from last night. I wasn't sure how to make it...so I "winged it". Used a little white wine to deglaze the pan, which makes me feel like a gourmet cook. And I never eat leftovers...ever. I didn't use leftovers in it, although it seems most people do. It was very good.

I made a pot roast today, also baked cinnamon apples, rolls, and a chocolate/peanutbutter fudge dessert thing (it was a box kit).

DH got home from work very early and walked in on me in the kitchen making his favorite meal... only to find out it was for someone else. I felt like he caught me cheating on him! I really did think I was going to get it delivered and back home and he'd never know what he was missing. I took the meal to a friend & family, their 3rd child was born a week ago (12/26, almost a Christmas baby). I gave them choices, and they voted the pot roast.

Then I came home and made a potato cheese soup from a package and sandwiches, with the option of leftover sloppy joes. I'm lucky I'm not sleeping in the car tonight. LOL.

I used the leftover ham to make a boiled dinner-soup. Added cheese to give it more flavor and leftover mashed potatoes to thicken it.
