? re Unbleached All Purpose Flour. . .

I didn't realize until I was putting groceries away that I had gotten Unbleached flour. On the bag it says it is aged naturally, without chemicals, and that it is interchangeable with regular flour.

I had no idea that any flour was aged with chemicals.

Has anyone ever used it, and if so could you tell any difference in taste. etc.?

I'll be grocery shopping again tomorrow and I'm thinking about taking it back and see if I can exchange it.

My last bag was unbleached too. It was on sale (Pillsbury) and all the bleached was gone, so I thought "what the heck...I'll try it".

I've made home made cinnamon rolls and a friend said she thought they were the best ever. I've used it in pie crust and there was no noticeable difference to me.

LOL, CLBlakey, me too, because I'd give it to the local food pantry! L, I think if you are using it with whole wheat you won't notice the difference as much. I also prefer the unbleached but has used the bleached on occasion when that's what I buy by mistake or Elery picks it up, etc. As has been mentioned, a single bag will not bankrupt you nutritionally and if mixed with other items you probably won't notice that much difference. If you really think you won't use it there's always the food bank who would be glad to accept it. I'd eat the peanut butter but not a snowball's chance in ....well...you know, that I'd eat Velveeta Shells and Cheese. I'd give that to Ashley, she loves the stuff! Annie

Hi Monaw, First of all, thank you so much for writing such a great content! I've grown up in a house where my grandmom and mom always had "real" flour sack towels in the kitchen. I've been always a great fan of those wonderful kitchen "tools" and recently opened my own flour sack towel company. We call it Mary's Kitchen Flour Sack Towels. If you decide to use bread flour, one of the tips for using high-protein flour is to add a little more fat - above the amount called for in the recipe. Where the additional fat coats the flour, it blocks the water from being absorbed, so it also reduces the amount of gluten that is developed. Be sure to keep mixing to a bare minimum. You could also use a blend of bread and cake flour and use the regular amount of fat in the recipe. I disagree with Linda about the protein content being "miniscule". There are more baking "mistakes" made by using the incorrect flour. High-protein flour gives you tough pastry, cookies, and cakes..... Hydration will be completely incorrect - as the chart below will show. Information from "CookWise" by Shirley O. It's important to note that this is a voluntary recall triggered by sampling. There are no reports of illness. The source of the e.coli might have been the paper of the wrapper, the hands that handled it, etc. Impossible to know, and it may well be that the flour itself wasn't affected. Or it could have been on a handful of grain that got into one palette full, rather than the whole run. GM are being a good corporation by being cautious and issuing the warning and recall. We want that level of caution, but that doesn't mean I'm not going to taste the batter to adjust the flavor. I'm that way with eggs too. 1 in 20,000 eggs has salmonella, and the ones I usually buy have a lower risk than that. I'm kind of obsessive about preventing cross contamination, especially from eggs and chicken, because I don't want to risk not knowing that there's something nasty lurking. OTOH, knowing that there could be something lurking in the raw batter doesn't phaze me. Because I know the potential is there and can make an informed decision. I won't let kids lick the spoon without their parents' consent, however. In other words, balance reasonable caution with real life. :)

I only used unbleached flour.

Flour is bleached with chlorine or peroxide to whiten it. Unbleached flour is aged to whiten it, instead of chemically bleaching it. Unbleached flour may have a slightly creamier color to it.

There is no nutritional difference between them. They also say that no chemicals remain after the bleaching process.

I just prefer to go the no chemical route and use unbleached.

There is no difference in the end product. They do not bake up different in anyway.

I, too, only buy unbleached. You won't notice any real difference in your baking, and it's much better to go with the healthier, natural product.

Sue, I have always used unbleached flour. I have never seen a difference between the white cookies or cakes that I have made with unbleached flour and the cookies and cakes made by others who use regular flour.

Why do they bleach flour anyway?

I buy only unbleached flour. No difference in outcome.

They bleach flour to make it look whiter.

Put me down as another person who uses unbleached flour. I see no difference between its performance and the "bleached" variety. I like the "no chemicals" aspect.

I have an apple crumble in the oven right now. The "crumble" is made with unbleached flour. Sometimes I use the whole wheat, too.

Never use white flour. The only difference is the bleaching. Whole wheat is my choice when I use flour at all.

I always use "un"bleached or WW especially when I make bread. You can't tell the difference between that and bleached in baking. Try it, you might like it.

Interesting. I'm surprised at how many use the unbleached flour. So I'll keep it and buy it again next time.
