It's a good thing if you have a Goodwill store near you. You can find all kinds of amazing deals.

It's a bad thing if you have a Goodwill store near you. You may end up with all kinds of kitchen appliances with no place to store them.

A pasta machine for $8.50!

Making your own pasta with a machine is easy. It gives you another way of using up leftovers. I had some leftover beets, so I made beet pasta.

Served with watermelon rind/surf clam/leek soup.

I think Annie's granddaughter wants pink pasta for her birthday! :-)

Looks great Dcarch - I have a goodwill a few blocks away from my house. We stop there several times a week and are always coming home with something. We found a new pre-lit Christmas tree there several weeks ago for 99 cents. Ours sometimes has good kitchen gadgets -the one I most often see are breadmakers. If I ever feel the need to buy one I know there will be one at the goodwill.

Sometimes a recipe may seem superficially risky but testing determines it isn't. However, I'd need to know something much more specific from BH&G re their testing and also the qualifications of their staff before accepting at face value the assertion a recipe is fine to can. I've purchased the last two annual BH&G canning special issues and in both cases I've seen recipes I wouldn't trust without some data. However, I've had difficulty emailing BH&G and getting any kind of response. Maybe someone else will have better luck. I think things have changed in the food publishing world. It used to be that Sunset, for example, had excellent testing facilities and experienced staff and I trusted their recipes. However, a recent recipe for canned tomatoes called for Fruit Fresh to acidify. That is not equivalent to citric acid and told me they're no longer reliable. Similarly, our local paper, The Oregonian used to have experienced canners on staff and good links to OSU Extension, but last canning season they published a melon jam with 1 teaspoon of lemon juice. I never did get a reply as to how the author of the book they reviewed determined that amount was sufficient for a low-acid fruit. And Penzey's a few years back published a home-canned mayonnaise-type sandwich dressing. I told them it posed risks but I never heard anything. Sorry for the long hiatus in getting back to this post. After some initial research, I may have been mistaken calling the one kind of pasta I find most versatile "rotini" because apparently that's not Italian, and the correct nomenclature is "fusilli." Anyway, what I am talking about is the loose spiral pasta, not the tighter version. That would not be very good for a noodle pudding. FOAS, that post on cascatelli was very interesting. I have not seen it around, but I could special order some I suppose. A dish I like but rarely make is "skillet lasagna" which you can make many ways. I like to make it with pasta in the shape of small wavy lasagna strips. I used to think that was called "tagliatelli" but now I see that tagliatelli does not have the wavy sides, and that it is called maybe "mafalda." I eat past a LOT and enjoy pairing shapes with sauces and themes. So here's my noodle pudding recipe, which I know as "lokshen kugel" although when my grandmother made that, she just mixed a little cinnamon sugar with some of her little home made egg noodles and cottage cheese. One could use fusilli or other pasta but it wouldn't be quite the same. I usually use med. egg noodles. Not the most wide or the thinnest, I go for middle of the road. I like the pudding with raisins but Dad doesn't so I usually add a small can of crushed pineapple if I want to snazz it up. It seems overly creamy but it sets up over time. In fact, you often have to add more milk to reheat the leftovers. Creamy Noodle Pudding 8 ounces medium egg noodles 3 eggs, well beaten 1/3 cup sugar, heaping if you like sweeter pudding 1/2 lb. cottage cheese salt to taste 3 oz cream cheese (can use neufchatel) i pint sour cream 1 tsp. vanilla 1 cup milk Combine all ingredients except noodles in a large bowl. Parboil the noodles and add to the mixture. Butter a baking dish and put the mixture in (I think I use an 11.x 13 pyrex one) Bake at 350 for i hour. I top with a dusting of cinnamon sugar. Let sit at least 10 min. before serving. Serves 8-10.

In my 'job" as receptions chair for the church i made a LOT of pasta salads. Very often we needed a lunch at noon for 60 to 120....so do ahead was a must. I cooked the pasta ahead of time, al dente, a bit under cooked. Added enough dressing to coat and refrigerated, then cut and bagged separately, cucumbers, sweet red onions, various colored peppers, halved cherry tomatoes or romas, with the seeds removed and cut in chunks and for green I often used broccoli blanched for about 1 minute then flash chilled in ice water.. Bagged the prepped veggies and refrigerated. In the morning put any juicy veggies in a strainer to drain before adding to the salad, didn;t use spinach because it quickly becomes like bits of green saran in the salad.... added more dressing to coat and a handful or chopped parsley...or sometimes mixed herbs....like parsley basil and dill. Myd ressing was always home made.... 1 T dijon vinegar, 1 T honey 1 crushed clove of garlic (or grated) 3 T of rice vinegar or cider vinegar and 1 T balsamic, and 1/2 cup olive oil....whisk or shake well. double or triple ther ecipe....extra keeps. Salt the water well when you cook the pasta and taste the finished salad for salt....black or red pepper according to taste, and finish with grated cheese....parm...peccorino...asiago....feta....whatever.. I often added some blanched carrot buttons and some zucchini chunks. You have to make the decision if youa re making a pasta salad with veggies or a marinated vegetable salad with pasta. Often had extra cooked pasta on hand to add if the crowd was larger than expected.

Price point is an issue for me. I buy whole wheat and usually the cheapest brand I can tolerate. That is often Barilla or Ronzoni. It is what it is. Yes, that whole Guido Barilla comment on homosexuality was bizarre, why should he care one whit about the sex lives of his pasta customers, and why alienate a whole set of them. Discretion is the better part of valor, and a wise man knows when not to pick up a hand grenade laid at his feet. PR was obviously not his strong suite. I love that they addressed the problem and made changes.

Kevin came home with a huge bag of basil leaves (for $2) from the farmers' market in Culver City yesterday - I think I should make some basil pasta, but of course I'm also going to make a bunch huge batch of pesto. I wonder how pesto would taste on beet pasta!

I have an extruding pasta machine in the back of the cabinet above the refrigerator, but I seldom take it out. I recently bought multi-colored Zitti, and I could have made them with the extruder. I might make pasta dough tonight and extrude it tomorrow.

Your pasta is very beautiful, but it doesn't look Kosher.

Lars, I make basil pasta, I like it much better than the plain white stuff.

The beet pasta looks good too, I love beets, but I'm not sure how basil pesto would be with that. Or cheese, which is the only way the Princess likes pasta, in the form of macaroni and cheese, pink is preferred but not required.

Teresa, It is fun to make multi-colored pasta.

Melissa, it's true. The Goodwill here also has many bread machines.

Lars, the beets only give the pasta color, they don't have a lot of beet flavor in pasta.

Annie, I can see basil pesto with beet pasta. The colors would be so dramatic.

Can you make vegetable pasta with enough percent content of the veggies (or herbs, or whatever) to significantly change the nutritional profile of the pasta? For example, to reduce the calories or carbohydrate content by, say, a third? Or is the effect limited to color and some taste?

I like pasta, and would like to eat more of it, while not eating more flour, if you get my drift.

And, while I'm asking silly questions, can you incorporate stuff other than veggies and herbs in pasta dough? For example, could you make pasta incorporating ground mushrooms, pulverized bacon, finely minced ham, purÃÂ©ed salmon, etc?

Definitely interesting!

But I'm a bit disappointed to find the beet flavor
didn't carry through in the pasta.

Guess I'm going to have to make it a point to check out
Our local Goodwill store more often.
They very rarely have any usable kitchen appliances.
Although I did get a new in the box toaster oven there
About 15 years ago.
And it is still going strong!

John, I have two pasta machines, one is hand crank which makes flat pasta for ravioli and spaghetti, one is motorized extrusion which squeezes out all kinds of shapes with the ten dies. Basically anything can be mixed with the dough and the outcome can be very interesting; i.e. texture, taste, color. Meat, veggies, soup, etc. depending on the shape of the pasta, you can change the mix proportions. For instance, if you use soup, just don't add water.

Rusty, around us we have a Goodwill, a Salvation Army and a Habitat For Humanity. There is always something interesting.

I wondered how you made the tube shapes. My pasta machine, an attachment for my Kitchenaid, only makes ribbons of various widths.

Sally, there are two ways to make pasta with Kitchenaid.

Roller type, which is what I think you have.

Check out eBay or Amazon for Kitchenaid Food Grinder Attachments. You will find attachment dies for making all kinds of pasta shapes.
