What's for dinner 1/25/11?

Went for a haircut this afternoon, then the grocery and got home just before the storm started. We were under tornado warnings for a while so I turned off and unplugged the computer for a while. Looks a little better outside now.

We're having something different tonight. It's called Taco Rice and it's basically taco-seasoned hamburger over rice with taco fixings on top (cheese, lettuce, avocado, etc.). Hope it's as good as it sounds!

Roast chicken with a little smoked paprika, homemade mac and cheese and creamed spinach.

Was over to see Mom in hospital today. She asked if I'd go to her home, get a roast out of the freezer, cook it well-done, have mashed potatoes, carrots around the roast etc. When Wally gets home from work the 3 of us can eat dinner then. I did, and Wally was surprised and thrilled. Mom's been in the hospital 10 weeks, and Wally is still loving his pasta. He feels much more comfortable eating at home than at other people's places, even ours, so I didn't mind cooking for him at their home. Dinner was good!

LOL Glenda is that at a fair grounds??? Have you eaten it I would love to have that~~ We have soup from my last nights experiment of making mixed bean/ham soup~~~it was good:)So it is on for tonight too. I was excited it was good last time I tried it tasted like water soup no taste at all.

Kathleen, I've been wondering how you've been doing, both with your surgery and the exchange students. Sure would like to hear all the news about both! I love salmon patties and also any kind of salmon served with peas. That sounds so good, schoolhouse. Nita, I bet you're over the moon having your son home. I am in a cooking rut.
Meatballs in gravy, mashed potatoes, corn and peas and dinner rolls.

Hartley's for home cooking: fried chicken breast, field peas and half a Mexican corn bread muffin.

My creamed spinach

Creamed spinach
2 packages frozen spinach, (10 oz each)
6 ounces cream cheese, softened ^^I use fat free
1/2 cup butter, melted, divided
1 cup seasoned bread crumbs
Dash of nutmeg: optional
PREPARATION:
Thaw spinach and press or squeeze to remove excess water. Grease a casserole dish and set aside. In a large mixing bowl, combine the spinach, cream cheese, and 1/4 cup of melted butter and nutmeg.
Spoon into casserole dish.

Toss remaining butter with breadcrumbs and add to top of casserole
Bake at 350 degrees for 25 minutes.
