Goodness, I sure do have some catching up to do. We've been trying to finish up outdoor chores in between raindrops.

Cooking has mostly been on the grill:

Grilled chuck roast, grilled asparagus, grilled red potatoes, and yes, grilled garlic bread LOL.

Trying to use up the garlic scapes while they're fresh, so the next night was the rest of the asparagus, scapes, and grilled chicken thighs.

Planked tilapia, skewered spicy shrimp, and a "dump some" stir-fry to clean out the veggie drawer.

And last night, I got tired of eating healthy food, so it was hot dogs, baked beans, and Cheetos!

I Only have a few minutes.
Getting things ready for my Niece visiting from
Laguna Beach, Ca.
Made some Meat Sauce to top the Ravoli's, we are having for
tommorrow nights Dinner.
Made a CheeseCake topped wit Peach Preserves for Desert.
I'll have some Photo's tommorrow nite.

This evening I had a 10 in Pizza with Sausage.
Chopped up some Sharp Provolone to add around the Sausage
and Parmesan sprinkled also.
Topped with New Yorker Provolone.

I had to test the Cheese Cake tonight, so I would be sure it was OK for my Niece.

I'm behind again too, but have read and been made hungry by all the above goodies. I haven't been doing much in the kitchen because we were nearly 24 hours with no water the other day so I pulled a small emergency pizza from the bottom of the freezer, sliced some tomato, beets, lettuce and peppers and that was dinner. Had to leave the dishes to wash the next day, ugh.

Annie ..oh yes my instructor Maria actually posed for that photo along with others that I took specifically for my blog post about Pilates classes.

We've also have had men working in the house here the last few days, so one day we went to a nearby terrace restaurant which does the escalope in green pepper sauce that Wolf likes so much. I wasn't very hungry so had a meatball tapa which came with some chips, vegetables and (too much) gravy. I think next week I'll be better organized.
This morning I bought two small beef fillet medallions which we'll have for lunch today with mixed veg, salad and peas.
The escalope and meatballs from the other day are diner food and hardly photogenic, but here they are:

I have been cooking, but since it's been so nice out we've been staying busy and having dinner later and later and forget to take pictures.

We did have chicken shish ke bobs, pasta salad and corn one night

Another night was black beans and yellow rice-

Tonight will be grilled tri tip roast with sweet potatoes, corn on the cob and salad.

Oh, and on my way home today I met our new neighborhood pet.

Our neighbors' dog Lily "adopted" this fawn. She mothers it and takes very good care of it!

Everyone's food is making me hungry. After one snack?? Malna I could really go for that tilapia and shrimp. And the asparagus with the scapes. Nice.

Sharon with all the great food to eat out near you, even I would eat out often. [I almost never eat out] That does look like a lot of gravy but it makes me smile with the peas in there and all over the potatoes.

Well I finally made my chili. I ran out of room in the pot so the eggplant and yellow squash didn't make it. Ah well. I've been wanting fried eggplant so maybe tomorrow. At least I found room for a bit of corn and green beans. It is very good. Hit the spot.

Sharon, for some reason I never think of something like meatballs with french fries, I'll bet the kids would love that.

Di, I love beans and rice, no matter how they are cooked.

Yesterday Elery grilled some of the salmon we caught. He marinated it in teriyaki and Michigan maple syrup. The freshly caught salmon doesn't taste anything like commercially available salmon, even the wild caught stuff. The Lake is about 45 degrees and the salmon was mild and delicious, more like a white fish than commercial salmon. Elery says it was the best thing he's ever put in his mouth, and now he knows why I spend hours standing in the river in waders in the fall.

I made Ruthanna's spinach timbales to go with the salmon but I didn't have spinach so I used a pint of home canned collard greens, well drained and then chopped. They were delicious and didn't need any sauce at all. Elery's dog, Pancho loved them and ate a whole one himself:

I made a salad of sliced romaine, celery, vidalia onions and peas, dressed it with some of my homemade yogurt mixed with horseradish mustard and maple syrup, and topped the salad with homecanned pickled beets and pickled eggs. The eggs are just hardboiled eggs, submerged in pickled beet brine for 3 or 4 days:

We picked 20 pounds of strawberries at the local u-pick today, so we had fresh strawberries for dessert. I'll be making jam later today:

We had gotten those Urad wafers at the Mediterranean Market and I couldn't figure out what to do with them until another poster here told me to fry them quickly and they became papadums. Sure enough, about 5 seconds per side in hot oil and I got these:

They're good by themselves, but Elery topped them with white cannellini beans and some farmer's cheese and made a sort-of nacho. They were so good I didn't even think to take pictures.

This morning we had baked eggs, fresh bixcuits with sorghum and freshly roasted local Paramount coffee. Yum.

Now, off to wash those berries, I'm all caught up on What's for Dinner.

Annie the meatballs and fries were decadent....it's chips and gravy and pure kid stuff! I would love a taste of that salmon, followed by some strawberries yum!

We had things to do out yesterday so it was a quick lunch out again, where the daily special was fresh gazpacho followed (again) by meatballs, this time with sauteed potatoes and a lovely tomato sauce. Wolf had his ever favourite ham omelette with potatoes and salad.

Today was fish but haven't checked the photos yet. Leaving that for tomorrow.

Back again next morning and will post photos of yesterday's fish dinner with salad now, since I have painters here who want to come into my computer room to paint the ceiling, and I have to turn off.

So it was baked frozen fish with a saucy crust topping with yam, potato, green beans and salad.

I hope everyone was able to get out and dance in the midsummer moonlight last night to celebrate the Summer Solstice!

I've been awol for a few weeks, but am excited to be back! Of course all of the meals look great as usual!

Our youngest son is home for the summer, so I imagine that I might be cooking more than I'd like! Last night we had a real unexpected treat: Speckled Trout that was swimming in the Gulf just a few hours before. A friend's husband had gone on a fishing trip and we were the lucky recipients of a big bag of trout and another of redfish that I'll put in the freezer. Already fileted and cleaned too!!

I had some almonds in the freezer, so I whipped up a quick trout almandine along with pan sauteed potatoes with brocolli.

Send Ashley and Cooper this way Annie. I'd love the company and the dog hair. Been awhile since I've had any on the bottom of my sock or floors in general. I see you had a jamin' weekend and the food looks good too.

Not much to report back here folks. I've been eating out for various reasons or having big work lunches and just having a sandwich or snacks later in the evening. I did have a few friends over this weekend and we made one of my faves on the grill. Teriyaki chicken and pineapple on the grill. Sides were rice and brocoli. We had dinner pool side on plastic but here is a pic from earlier this year.

Shaun I am really hungry right now and since I am always so far behind these days on this board I just go directly to the bottom and work my way up. LOL:) That pizza looks great! as well as everything else.

We are going out to dinner tonight with friends - seafood. I can't wait to have some fun, nice conversation and good food.

Shaun, I used muenster on a pizza yesterday - at your recommendation on one of these threads and I agree!! It was great. I used a bag of shreededmozzarella and provolone, and a bunch of hand shredded muenster.

So many wonderful meals. I now have a craving for Sharon's Shepherds Pie, Davids Pasta, Annie's roast chicken and Di's black beans and yellow rice.

I hadn't planned anything for dinner last night so I went with something easy. Pizza.

The last few pizzas I've made have had a crust made with dough that had been in the fridge for at least two days. Last night I made the dough a few hours in advance. The crust was good but not nearly as good as the crusts made with dough that have had the longer fermentation.

Tonight was ceasar salad topped with some grilled chicken I had leftover. Followed by ice cream and oreos...LOL! Not picture worthy but it fit the bill for tonight and used up the leftover chicken and CS dressing.

Lou, the dough I used last night is the one I typically use when I'm in a hurry. It is basically the same as yours except I use olive oil rather than vegetable oil. A minor difference. Makes a good crust, but I much prefer a crust that has been left in the fridge at least 24 hours if not 72. Big difference in the flavour and the texture. Maybe you should try something new.

Dinner tonight was grilled New York Strips.

Mmmmmm! Pizza!!! Why am I craving pizza? ....ooooo, and steak! Right now, I want some steak too!

Anyway, tonight we had a friend come over, and I put together chicken salad sandwiches--doctored them up with candied pecans and dried cranberries, chopped jicama and a dash of Frank's red hot sauce. Dessert--can't go too far wrong with chocolate mousse, topped with a thin layer of raspberry puree, fresh whipped cream, cinnamon and shaved dark chocolate. We had a tossed green salad as well, but I didn't photograph that.

Oh boy Ann, I'm going to have to hide this pic from Christy. NY Strip is her favorite. Have to check the freezer, not sure I have any left.

Yes, Lou, how bout giving the refrigerated doughs a chance. Smiles.

I just bought the Artisan Bread in 5 Minutes a Day book. It was on sale on Amazon for a new copy from one of the used dealers. I had only made the regular recipe so now I'm going to try some of the other recipes too. I definitely plan to make some pizza out of some of it. Maybe on the grill.

Tonight poofed some pierogies. Just boiled and served with a butter and sour cream sauce. A small bowl of applesauce alongside. The Carnivore had some poofed chicken with hers. No pics.

Trying to make a bit of room in the freezer for the next week or so. I joined Costco and it's about 30 miles from here so we are waiting till Christy is on vacation the week after next so we can check the place out for the first time together.

Sooz... swoon. I love chicken salad and yours looks great. Maybe I can make some out of the rest of the chicken Christy poofed tonight. Yay... chicken salad and lentil soup for breakfast.. lol.. And chocolate mousse. We both love it.

Grace that trout almadine looks a perfect light dinner for warm weather and we love fish at any time!

David thanks..our leaky roof is repaired...new ceramic tiles in place outside and the ceiling inside is all scraped and painted. We were lucky to have an ideal team of men working this time. They even wet mopped the back patio when they finished, and replaced light bulbs in high outdoor lamps which I couldn't reach.

Sooz those chicken sandwiches look good and Wolf would really dive into that chocolate mousse....he's an addict!

But we had to go down in the town for paper work a couple of times this week right at our lunch/dinner time, so we ate downtown in a couple of touristy places and had some touristy food: chicken breast, salad & chips while Wolf had burger patties, salad and chips. Cute place but food was just so-so.

Today I made an everything-in-it salad: romaine lettuce, mixed green & carrot salad, scoops of potato salad, tomato, cucumber, avocado, red pepper, olives, cocktail shrimp, and the best of the Canary fresh goat cheese: Maxorata. It was wonderful together with tall glasses of gazpacho from the deli.
I had Pilates and grocery shopping this morning so lunch had to be easy to put together.
Warm here too but not as bad as some of you have over there.
Around 30C (86F) today.

Lou, as long as you are happy with your dough that is all that matters. Not sure about secret ingredients though. Does that mean you are one of "those" people that share recipes but leave out an ingredient on purpose?

We had a real feast last night. Clif and Barb our next door neighbours picked up 8 live dungeness crab from a fisherman down at the docks. I cooked them. Par boiled and then cleaned and split, tossed with melted butter, olive oil, 2 heads of chopped garlic, lots of fresh ground black pepper and hot red pepper flakes, then roasted at 500°F for about 15 minutes. Must have been at least 14 pounds of crab.

Lou your chicken with potatoes and celery look lovely and golden crispy! How can you put on an oven in this weather....or do you have it cool there?

Ann what a great pan of fresh dungeness crab. Delicious. I do miss those west coast crab feeds!

Today was a day of rest and not much movement. It was too hot to make pesto as I'd planned (!)
So that will be for tomorrow, our Sunday lunch of fettucini and pesto. Must make it early in the day.

Today was more of the same salad ingredients as yesterday, with added tuna and hard boiled eggs. Tall glasses of chilled gazpacho, red wine and then a siesta zzzzzzzzzzzz!

I even use Vanilla Ice Cream in my Cheese Cake.

I would never leave out an ingredient on purpose.
Everyone has my Secret Ingredient but don't always use it.

I love the Dungeness Crabs but can't eat to much of the Hot Stuff.
So I took the one on the right , it didn't have too much Red Pepper.
Speaking of different.
I've done them in a large pot with rack in the bottom and a lid.
Split the Crabs first and cleaned them.
Then lay the Crabs in layers in the Pot, sprinkling Spices
in between each layer.
Put a half cup, of water on the bottom and stoke up the flames.
They will be steamed in a few minutes.
Then Roast them.

I guess you have already done them this way. Maybe not ???

I only went to 69 Degrees today, so it was good for using the oven. It is 60 right now.
But I'm not going to bake anything else tonight.

It's been a long time since I've posted here. I figured it was about time! As usual, lots of great-looking and great-sounding dinners. Some wonderful photography, too!

Malna, did you grow your garlic scapes from seed? They look wonderful, something I could easily incorporate into a lot of dishes!

Lou, do you often have access to dungeness crab? I would have thought that you'd be able to obtain blue crab a little easier from your neck of the woods. I don't remember ever seeing it when I lived in NY.

I tried a Food Network recipe (Party Line with the Hearty Boys) for artichoke fritters. I was going to serve them as a side dish, but ended up nibbling on them for dinner instead. The good thing is that they're supposed to reheat well in a 350 F. oven. We'll see - I'll definitely be making these again.

Artichoke Fritters

vegetable oil
1 (18-ounce) can artichoke hearts, drained
2 garlic cloves, minced
3 scallions, chopped
1/4 cup milk
1 large egg, beaten
1 teaspoon lemon zest
2 teaspoons lemon juice
1 cup all-purpose flour
3/4 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 lemon, to squeeze over fritters
Kosher salt, to sprinkle

Lemon Cream, recipe follows, optional

Pour 3 inches of vegetable oil into a heavy bottomed pot and place over medium heat until a bread cube placed in the oil browns within 1 minute.

Coarsely chop the artichokes (or alternatively crush by hand) and put them in a large mixing bowl. Add the garlic and scallions, milk, egg, lemon zest and lemon juice. Mix the flour, baking powder, salt and pepper in a separate bowl and quickly mix the dry ingredients into the artichoke mix.

Drop the fritters by the heaping tablespoonful into the hot oil and fry until golden brown, about 5 minutes. Work in batches until all the batter is used. Keep warm in a low oven until ready to serve. Immediately before serving, squeeze a little fresh lemon juice over all and hit with a bit of kosher salt. Serve with a dollop of Lemon Cream on top, if desired.

Lemon Cream:

1 cup sour cream
1 lemon, juice
1 teaspoon kosher salt

Whisk all ingredients together in a small bowl. Refrigerate until ready to serve.

Sharon, as everyone knows by now I'm not a big salad eater, but I would be very happy with just about every salad you make. Since Dungeness crab is available year around here on the West Coast you will be able to enjoy it when you are home this year.

We had rack of pork for dinner last night. It was suppose to be dinner on Saturday night but was postpone due to "crab". I had presalted it on Friday so it actually benefited from the extra day.

Served with mashed potatoes, southern style green beans and new carrots in a butter and maple syrup glaze.

Haven't posted in a while to what's for dinner. Everyone's recipes and pics are great.
Yesterday we had for lunch:

Pasta Fagioli Soup/with fresh basil and parm (didn't have any white beans on hand so used black. Still very good.

You're right, I haven't had Dungenous Crabs in years.
But I have cooked them the way I explained.

At one time I had a friend in the Crab business.
He could get me anything I wanted, even African Lobster Tails.
What I really liked were Alaskan King Crabs.

We bought Blue Crabs by the bushel . He moved and opened a large Crab Wholesale business in Fla.

I still do the Blue Crabs that way except when they are cooked in Spaghetti Sauce.
My BIL went back and forth to Seattle and brought back,
Dungeness Crabs and Salmon.

Speaking of Spaghetti Sauce, Did you find the
Spattini Spaghetti Sauce mix yet!

They stopped making it but there are still some suppliers
with a Stock pile.
Shame! A lot of people liked it.

Don't bother me anymore today, I found a Jar of Artichoke Hearts, to try the Fritters.

Let's see. Friday I was going to make gnocchi with the leftover potatoes from the pork roast from last weekend but we had a couple of eggplants that needed to get used. I made friend eggplant and we made pigs out of ourselves eating it. Just that for supper. We will do that sometimes when we have friend food. Just have the one thing. It turned out great but no pics. I was too hungry after making Christys pan full to take pics before I started making mine. Smiles. Yesterday I made a big pot of meatballs and sauce and the gnocchi. They turned out great.

Can you smell the basil and garlic?

I get addicted to these things. I might have to go out and get a few as a midnight snack! Sigh...

Linda, I LOVE the look of your very berry sorbet! I just got an ice cream maker last week and have made a batch of blueberry ice cream, but would love your recipe for the sorbet. Mind sharing it?

I've done a bunch of cooking and baking the last few days, so tonight I went super simple: chicken tacos. Once the chicken finished poaching, it was just a matter of minutes to chop up the chicken, season it with lots of ground cumin, chop up some tomato and avocado, and shred a little cheese, and fry up a couple of corn tortillas. Squeeze a bit of fresh lime juice over it and dinner was done. I love that somedays!

Here's a pix of what we had tonight before I added more of the sauce (Daube Provencal--a stew), but not pictured are the steamed & buttered broccoli, mixed sweet bell peppers with Maui onions and avocado with balsamic vinaigrette, and a tossed green salad with warm blackberry pie a la mode for dessert.

As always it all looks good. Man, what I wouldn't give to get a camera. Had coq au vin last night, with my fresh herbs. Yea summer!

I'm way behind so will just say that everyone is outdoing themselves in luscious food and photos! And thanks for kind comments on mine. I'll just catch up on a couple of quick meals.
One was pasta with home made pesto....one of our favourite lunches, since I picked the basil only minutes before we ate. Still it doesn't look especially photogenic but we loved it!

Yesterday we had to go out again so ate a small dinner in a neighbourhood restaurant where I again had pasta....this time with green vegetables, asparagus and cheese sauce, and Wolf had bratwurst with potatoes and red cabbage salad. Plain food but it's so warm here at the moment we don't know what to eat at midday. Salads and cheese in the evening for our light supper.

Today we're having fish at home with salad, avocado and ripe tomatoes. Melon and papaya for dessert.

Hey Lou, I've never had eggs cooked in sauce...that's next on my list of things to try.

Coconut I love anything with basil and garlic, great pic. I have a large pot in the backyard with tons of basil growing.

Lori, here's the recipe for
Very Berry Sorbet
3/4 cup sugar or Splenda
1 cup water
Dissolve sugar in water in saucepan and cool.
3 1/2 cups of berries (I used frozen) any combo.
Put into a blender and puree with the sugar syrup.
Add 1/2 cup heavy cream (I use my homemade plain yogurt.) You can omit the cream, but is does make it creamer.
Pour into ice cream maker and process until thick. Put in freezer container and let set for 2 hours.
You may have to soften it in the microwave for a few minutes as it does get very firm.

I simmer them in a skillet, just large enough to hold 2 eggs. Put Sauce in the bottom.
Nuke the Sausage till cooked and simmer in the sauce a little, then take the sausage out.
Let it bubble a little and drop in the eggs.
( with out shells ).

Put on a SS pot lid , just large enough to cover the eggs
and Sauce.

I hold the lid down tight , for a minute, then peep to see if it is done enough.
Good for a Quick small meal.
