What's for dinner Saturday?

It was a beautiful day today. High here at the house was 73. Getting rid of leftovers tonight. We're having the rest of the chicken wild rice soup and a grilled ham salad and cheese sandwiches.

What are you having tonight?

Tis a beautiful day and I ventured down by the Farmers Market to Nikki's West.

As usual, their 7 layer salad, and with it I chose roast beef. So good

We are having ham, mashed potatoes, and fresh Brussel sprouts that I bought at Trader Joe's yesterday. They are still on the stock they grew on. I have never cooked fresh Brussel sprouts.

Gadgets I am not sure where I read or heard what to do with it. It was either googled or from my brother who knows a lot about saving food. I think he learned it from my DM. Tonight I had the second piece that was supposed to be my DH until he told me he was going to be gone and it was just as delicious. I just used flour and Lawry seasoning salt and fried it. I think I have about 8 more pieces. Because we are Catholic I will try to use them during lent now on Friday's because we don't eat meat.

..Asking me for a recipe isn't usually something I can help with. But I'll try! And I know that I said orzo but I MEANT coucous! But it sure would work with orzo. Fix 1 cup coucous and 1/2 cup red quinoi according to the directions on their labels. Be sure to rinse the quinoa first, and I prefer the red....it tastes nuttier to me. I cook both of them in chicken broth. This salad can be made just with quinoi, but I didn't want to scare my guests. :-) Veggies....to equal about two cups or more : chopped green onions, red bell pepper, english cuke, chick peas (rinsed and drained), halved cherry tomatoes. Use your favorite vinaigrette . I made a lemon dressing with quarter cup fresh lemon juice, quarter cup olive oil, two cloves minced garlic, chopped fresh oregano, sugar, S & P to taste, and a splash of balsamic or other vineger. I didn't use all of the dressing. Add it to the couscous and quinoi while still warm, cover, and chill. When ready to serve, stir and taste to add more dressing if necessary. I added a bit of lemon zest on top for serving and fresh mint from the garden .

Gosh, everyone's dinner sounds so good! I swear that I'm going to get a slow cooker; I must be one of the few that don't. I'm looking forward to those cool autumn evenings. I sort of miss our little outdoor chiminea....it was enjoyable to sit around a fire and chat over drinks. Jasdip, my eyes are FABULOUS! My vision gets sharper and brighter every day. I asked Robert this evening if he noticed that the TV reception had improved and he just laughed at me. I simply cannot believe that I have this vision out of my own eyes. My doctor somehow managed to finess my new lenses so that I feel like I have almost infinite far vision but still can see well enough close up that I've only needed readers for very small print. I can put on my makeup, read most things without my new little readers. I will donate all of my eye glasses next week. Pretty amazing. I had him, his technician, and myself dabbing our eyes last week at a checkup visit after my second surgery. I made him stop what he was going, I took his hand in mine, leaned close to him and told him how much my new vision meant to me, someone who had really been so burdened by terrible vision since I was a little, tiny girl. I wanted him to know that my life was changed.

Today was a gloriously sunny day and for some reason I was in the mood for cooking and baking. I made my regular 2 loaves of bread and I had a bunch of ham stock from my boiled ham yesterday. So I made a big pot of cabbage soup and another pot of potato soup, using some ham stock. I also threw some ham pieces in the potato soup. We had a well-done roast of beef with carrots around it. I boiled some Yukon Gold and a sweet potato. While the oven was on, I made some butter tart squares. Here are the fruits of my labour today!

Chuck roast with veggies, including a new one for me: turnips. I think I'm going to cook them in the oven and then put them in with the roast. Someone had roasted veggies with turnips over the holidays and made me think how good it sounded.

Made a big pot of homemade spag. sauce as I had no more in the freezer. For dinner it was chicken parmesan with spag. Dessert it was espresso angel food cake with cho. chips.

Nita, do you always buy frozen Brussels sprouts? I've never cooked anything but fresh. Try them roasted sometime, they are amazing. Sliced thin and sauteed to. Yummy. We love B. sprouts.

I took a teeny pork chop out yesterday and since we ordered Chinese instead, I just cut it into chunks and pan fried it, and had it along with the leftover rice, chicken balls and bean sprouts.

Feels like it's time for my tea and maybe some ice cream.

My son would go back for seconds when I served brussel sprouts with maple syrup and toasted pecans. yumly!

Everything sounds a lot better than our dinner. But the leftovers are gone anyway.

Sue, any time I can't figure out what to have for dinner I think of pancakes. Makes Harry so happy!

Jasdip, I thought "we" liked Brussels sprouts, too. Turns out it's only me.

How did your turn out, Nita? I've never seen them on the vine like that.

Mary3444, your chicken parmesan sounds good, but that cake sounds wonderful!

Glenda, I know I've said this before, but I sure wish we had restaurants that serve food like 7-layer salad here. I just love that stuff.

How'd you like the turnips, Kath? I think I'd like to be at your house for dinner!

Patti, they were good. I roasted the veggies in the oven before putting them in with the roast in the crockpot. I like it better this way, the potatoes don't disengigrate (sp?) that way.

I served it with rice even though it had potatoes in it because there was a lot of gravy-like sauce with it. It was so good.
