Barbecue update

The barbecue is over and it was a pretty big hit. I thought I had my camera in my purse but I didn't so sadly no pictures. TONS of food.

I made:

Greek potato salad with fresh green beans

6 layer dip, which was seven layer dip minus the bean layer

Calico baked beans (those were a big hit, made with my homeade picalili relish as the flavor base)

Mint lemonade (also a big hit, fresh mint from my garden, with a sliced lime floating in the pitcher)

Tsatsiki (yogurt and cuke raita with scallions, parsley and mint, and lemon juice)

Sliced tomatoes

Red seedless grapes

and the following meat items:

Alexa's kofta recipe (for the ground lamb) and also the other Gyro recipe that Alexa gave me from Nancy, in the form of beef burgers, and then marinated chicken that I sort of made up, with an citrus/white wine vinegar olive oil marinade, with cumin, garlic, tumeric, garam masala, adobo, mural of flavor and corriander for spices.

One of the best hits was boneless turkey thighs that I got at the Farm market, marinated in a mix of homade apricot curry (which I also made with Alexa) and greek style yogurt.

The students and some other staff brought:

Peanut butter cookies

Cherry pie, apple pie and dutch apple pie

Baklava and pita bread from the Middle Eastern bakery and homeade hummus, all courtesy of one of my "American" students who is of Syrian descent

Mixed italian cookies

Coleslaw

Fresh greens salad

Several kinds of flavored ice teas

Corn chips

Boy am I stuffed! I learned a lot about meat. Greater love hath no vegetarian teacher for her students than me this morning cutting up the chicken leg/thigh combos. It took me three tries to get it right! But the "connected" meat had the best prices, .99 per lb. I couldn't afford any fish dishes. I could have done tuna pate but with all the other stuff we had it would have been overkill. I also learned a lot about starting charcoal, lol!

LOTS of dishes to do now, :(

Thanks for all the help folks! Especially you Alexa, I thought of you a lot today! That's the last of the curry sauce we made, I need to start canning again soon. I sure hope my cough lets go soon!
