What's for dinner 1/8/11?

We're having leftover pork roast and roasted vegetables from Thursday night. Need to use them up. What are you having this cold and windy night?

Good question! My son and daughter-in-law are coming for dinner at 6:30. I was making a favorite dish, Monastery style lentils, figuring we'd have that with a salad and popovers. But at 5:00 p.m. I remembered Monastery style lentils is definitely not a favorite of my son's. Oops!

Quick change of direction. Now I'm making tofu and broccoli over spaghetti. No popovers.

Date-Oatmeal bars for dessert.

My creamed spinach Creamed spinach 2 packages frozen spinach, (10 oz each) 6 ounces cream cheese, softened ^^I use fat free 1/2 cup butter, melted, divided 1 cup seasoned bread crumbs Dash of nutmeg: optional PREPARATION: Thaw spinach and press or squeeze to remove excess water. Grease a casserole dish and set aside. In a large mixing bowl, combine the spinach, cream cheese, and 1/4 cup of melted butter and nutmeg. Spoon into casserole dish. Toss remaining butter with breadcrumbs and add to top of casserole Bake at 350 degrees for 25 minutes. Serves 4

LOL Glenda is that at a fair grounds??? Have you eaten it I would love to have that~~ We have soup from my last nights experiment of making mixed bean/ham soup~~~it was good:)So it is on for tonight too. I was excited it was good last time I tried it tasted like water soup no taste at all.

Regarding Wed. - no idea. Regarding Thurs. - no idea. Prob. a bowl of soup, prob. with cheese on toast, then microwaved to melt. Maybe applesauce or piece of pie, coffee, milk. ole joyful ... whom some claim may be losing a little weight

Kathleen, I've been wondering how you've been doing, both with your surgery and the exchange students. Sure would like to hear all the news about both! I love salmon patties and also any kind of salmon served with peas. That sounds so good, schoolhouse. Nita, I bet you're over the moon having your son home. Roast beef, potatoes and gravy, green beans and I bought some great rolls at Walmart earlier today. I love their bakery bread!
