I hosted a theme party years ago. The guy I was engaged to was in the music industry and was throwing a party for a punk musician who went on to become really famous - in another music genre. I got a styrofoam woman's head. I made guacamole (really thick) and gave the head a beehive hairdo. I put retro sunglasses on it and put tortilla chips around the base/neck.

There were so many other wacky things going on at that party but I don't have time to add them. I am going out for a run. Maybe I will stop back later.

The only thing that comes to mind is LindaC's caramel cheesedoodles. The chips might be too thin though to make a carmel sauce for chips.

How about do.
You do the prep before and when the sliced potatoes are gone...un plug the fry daddy....cool, cap and take your mass home. it yourself chips?
Take a fry daddy and a container of thinly sliced potatoes in water.....a roll of paper towels to dry them and another container of quartered tortillas and fry as you munch.

What about chips on a stick? I saw these recently with individual potato slices spaced about an inch apart. Here is a video of them done in a spiral, perhaps cut on an apple corer thingy.

I like Linda's idea. Homemade potato chips are the best.

If you do end up wanting to do something with a 'filled' chip, keep in mind the scoop type tortilla chips. They're great little cups that hold just the right amount of something. You could probably stack them quite nicely. Maybe some avocado salad in them then topped with lobster or even shrimp.

There's a candy shop up north that is famous for their chocolate covered potato chips, the girls loved them and I thought they were completely disgusting, LOL. Now, just recently, I saw a recipe on line that took cinnamon and sugar tortillas or pita chips and dipped those in chocolate. So, there's dessert....

I also like the homemade potato chip idea, and you could take those little tortilla cups that coconut mentioned and fill them with sloppy joe mixture or chili with a dollop of sour cream and sprinkle of cheese, or some black bean and corn salad kind of mixture.

There's also Frito Pie, or a walking taco kind of thing and, of course, taco salad.

OK, I'm out of ideas, LOL.

Thanks everyone - great ideas. Now to decide which I am going to make for tomorrow! I think frying them to order might be fun... but a lot of work! I think there are going to be about 30 people so I may save that idea for when it is just a few of us.

I am leaning towards the filled tortilla thingies.... avocado and lobster sounds sublime!

Alexa, These were a big hit.

Shredded lettuce in the bottom, a dollop of guacamole, topped with either shrimp or crab and finished with homemade salsa.

You can make these with baked tortillas or with won tons.

Alexa what about combining the ideas. Have the scoop tortillas and then a "salad bar" of interesting and differtent fillings fillings that folk can choose from. Make the choices exotic and fun...even chopped egg and caviar!

I'd even add those fancy dancy potato chips like Miss Vickies that are hard...ooops crisp... enough to withstand a scoop of this or that.

I didn't mean a scoop as in dip but rather more like a topping.....but you knew that ; )
