Another party idea - Devilled Egg Bar

Maybe you've already seen this done or done it yourself but I was at a party this weekend that had a devilled egg bar as one of the stations and it was the first time I'd seen one.

The filling was a standard mayo-based one piped just to the top of the halved whites of small-sized eggs. They were lined up on long ceramic dishes and next to them was a labelled assortment of toppings that could be sprinkled on and sauces for drizzling.

I'm probably missing a couple but ones I remembered were lump crabmeat, crumbled bacon, minced ham, sliced hearts of palm, minced grilled portobella mushrooms, diced Kalamata olives, sliced hot peppers, remoulade sauce, a chipotle mayo, blue cheese and honey mustard dressings.

Except for the crabmeat and hearts of palm, all the toppings were in small pieces.

Although there was a variety of other foods, that table had the most traffic. When you consider the small amount of toppings that fit on the eggs, it was actually an conomical offering.
