Question for bakers

I don't bake much so would like to know how, when handling refrigerated dough that you then roll into balls, can you prevent the dough from turning to mush from the heat of your hands?

Not exactly dough, but I was making Buckeyes today. I had refrigerated the peanut butter mixture overnight. After a few balls, the mixture would just start dissolving into my hands....what a mess, and a lot of waste. Thanks for any suggestions for next time.
