Creative use of smoked beef tri-tip?

I'm a frequent lurker here, and y'all typically have fabulous suggestions when someone is in a rut.

To make a long story short, DH bought a smoker and he has literally been smoking everything he can get his hot hands on (yesterday it was chicken and almonds).

Last weekend he smoked four pounds of tri-tip that I had marinated in a mix of ginger, tangerine marmalade, mustard and beer. We had it with a side of chipotle sweet potatoes the first night, in a Thai-inspired salad the second night, and then in fajitas. I'm officially out of creative uses for it beyond suggesting quesadillas.

Any brilliant ideas? It needs eaten up soon! Thanks in advance...
