Put me down for Mexican, and living in Houston, there are a ton of good Tex-Mex places here.

hmmm if I had to choose...well I'm not sure I could..however there are a few cuisines I've never tried.

I love alot of Asian foods: Filapino, Japenese, Chinese.
I also adore a good plate of authentic Mexican or TexMex.

Oh I just love food.. I'll admit I've never eaten Thai or Indian. Just don't have the opportunity. There is one Thai restaraunt in town and I picked up their menu last week at the Chamber of Commerce..Sounds good..I'll have to grab a 'date' and try it for lunch one day.

Italian is my favourite cuisine, followed by Tex Mex and North American Chinese. Mind you most of my meals tend to be English/North American fare. Meatloaf, roast beef and roast pork, Yorkshire pudding, ribs, roast chicken, pork chops....is that a cuisine?

I enjoy Indian, Thai and Japanese foods but my husband doesn't so I rarely get to enjoy them.

What Sharon said about Indian/Thai/Japanese! (We should live closer, Clive and Ken could dine together and then you and I.)

Wow, it's hard to choose. Indian, Thai, Sushi, Italian, Mexican...I guess I just love food! I'm going to have to go with "all of the above." ;-)

Am I allowed to just say ethnic food? Besides loving to eat it, the topic of food never fails as an ice breaker whenever I meet someone from another place. Everyone loves to talk about food.

I strive to learn authentic preparations. The cusines I probably do best at so far and do most often are Chinese, Mexican, Italian and Soul Food.

Guess I would have to say Italian, Greek, and other Mediterranean countries. Plus, I really like some Middle Eastern dishes. Good Indian is hard to find in my area.

I can usually find any number of dishes to enjoy from almost any type of cuisine. Count me as an "equal opportunity food lover!"

For spicy stuff, Indian and Thai

For elegant stuff, French and Northern Italian

For comfort food, Cajun and Creole

In general, I prefer rustic to fancy. Anyone can steam a lobster or grill a filet mignon, but it takes a lot more inventiveness to make good food out of less-than-wonderful ingredients.

Authentic Mexican first & Tex-Mex second. Those two are way out in front of third which is my ancestral German foods.

This Sicilian likes Chinese food best/most.

Then, I suppose by default, Italian cuisines (note the plural form).

After that, several Asian and southeast Asian cuisines, including Indian, Vietnamese, Indonesian (I LOVE rijstaffel), and Thai.

And then you can throw in Cajun-Creole and Japanese (all the cuisines of Japan except sushi).

I guess my first choice is Japanese, but I also love Italian, Vietnamese (which I don't get enough of), Greek, Cajun/Creole, Korean, Mexican, Ethiopian, and Szechwan. I love some Thai and Indonesian dishes, but none of the ones have coconut milk. I frequently make Indian dishes, but it's not at the top of my list. When I visit Texas, I always make sure that I go to the best Cajun restaurant available, since the ones here can't compare. I haven't found a really good one west of Austin - the ones here concentrate on soul food and generally oversalt the food. I haven't even seen alligator on the menu here. Everything else that I love is readily available here, and most of it in great abundance, although the best Vietnamese restaurants are not that close to me. I've only made a few Vietnamese dishes and probably should get a new cookbook. The one I have is paperback, with NO pictures!

Let's put it another way....because I love almost all food..foodS.
My least favorite would be Indian...but that doesn't mean I don't like a lot of it....but given a choice between a good Greek, Italian, Chinese, French, Mexican, Spanish....etc etc and Indian, I would take anything else first....
But then there is that awful stuff made with canned soup and stock bases and flourey cheese sauce, greasy mushy crock pot meats and over cooked vegetables, library paste potatoes and oversalted everything called "middle American foods" that I would put waaay further down the list.......blech!

Thai, mexican, chinese, japanese and then just plain american. A good rib eye or hamburger on the grill will please me anytime.

We loved the BBQ meats in Brazil and Argentina and the seafood in Alaska was so good.

It would probably be easier for me to say what I don't like, which isn't much.

Thai is my very favorite. Followed by Italian, Spanish, and TexMex (especially if it is from May's favorite TexMex--cant' remember the name).

Southern upscale.

I want to add that I left out Lebanese. It should be near the top of my list, and there is a new Lebanese restaurant (or brand of a restaurant in Culver city) just a couple of blocks from my house, and so it's very convenient. I make hummus on a regular basis and falafel and Tabbouleh occasionally. I guess it's not terribly different from Greek, but it's definitely my favorite Middle Eastern cuisine, although I like Persian also. I like everything I've had at Afghan restaurants, but the one I go to most often is in San Diego, and I only get there once or twice a year.

Northern Italian, Thai, Japanese, Mexican, Cuban, Greek and Indian. Lars, I had a wonderful dinner at an Afgan restaurant in D.C. years ago - a small restaurant in Georgetown - I do not recall the name, but the dinner was just excellent!

It's a tie between Italian and Tex-Mex. Like Sharon mentioned, North American is what I cook on a day to day basis for the most part. I love the few Thai things I've tried but am challenged in finding friends or family to explore that or others with me. Chinese would come in third.

I must say, my favorite is of the "when in Rome" theory of eating.
On those hot sultry nights... Indian, Thai, or especially Cajun/Creole...
hot and dry Baja nights?... ceviche and cervezas
Winter night comfort food? my roots... Polish food... kielbasa, pierogi and soups
Balmy, dry, Mistrals blowing?... Think Mediterranean... Greek, Tuscan, Provencale, or possibly Moroccan...

Middle Eastern, Japanese and Thai. Since I'm a veg, it's so easy to eat healthy vegetarian fare with these particular types of cuisine.

Donna, don't forget the Italians. They have a great appreciation of vegetables. It's hard to find a cuisine with a greater variety of vegetables and ways of preparing vegetables. That fact is often overlooked because the veggies usually are side by side with great meat dishes, but they don't have to be.

Unfortunately, Italian food in America is too often stereotyped as something with red sauce on it.

Nothing beats good old southern cooking. It is in a class of its own.

I would have to say Tex-Mex. Not because my most favorite dishes are Tex-Mex, but because it is the one cuisine I could eat all the time and not get sick of. Breakfast tacos in the morning, enchiladas for lunch, chile relleno for dinner. Yum! Tortilla soup is the best when you're sick, and nothing cures a hangover quite like chips and queso (did I mention margaritas?).

I would say Mediterranean cooking as a general type of food is my choice and in that I would say my favourites are Spanish, Italian and especially the cooking of the Spanish Balearic Islands, primarily from the island of Mallorca.
That's fresh, rustic Med cooking at its best....extremely simple, basic ingredients, crisp and fresh, eaten while sitting at a wooden table under an olive tree or at an outdoor seafood bar with feet in the sand. And together with a bottle of local wine, a plate of cheese and the local small, bitter brown olives mmmmm.

Would/could someone define "Tex-Mex" cuisine for me, please? Actually would/could SEVERAL people define Tex-Mex cuisine for me, please? Please -- no cut-and-paste definition from a cookbook or the web; I think "Tex-Mex" has many connotations.

I think it's kind of hard to specifically define Tex-Mex since within Texas, even within one city, the food can vary quite a bit from one restaurant to the next. Generally speaking, I think it's Americanized Mexican food that's still pretty heavy on the spice, not yankee Mexican food. It's made mostly with chicken or beef and heavy on the cheese. You won't find much seafood or pork on the menu, and almost never goat like you would at an interior Mexican restaurant. If it's a good Tex-Mex place you won't find too many healthy options on it's menu, but it is greasy comfort food at it's best!

Here in this part of Central Texas, you eat Tex-Mex or barbecue or eat at home. There is not one, and I do not exaggerate, not even one decent restaurant between Dallas and Austin. For the definition of Tex-Mex--well, it is basically a blending of the rice/tortilla/bean Mexican with the hamburger/sauce/salt Texan cooking. As you can tell, not my favorite.
However, we are in a wonderful growing area with lots of fresh vegetables almost year around. My very favorite cuisine is anything Italian, closely followed by French and Spanish (and thank you, Canarybird for the link). Caribbean is pretty good, too. Anyone for Jerk Chicken?

Joe, I don't know if Tex-Mex can be defined precisely. I'll do my best. To me it is food using the same basic ingredients that are used throughout Mexico, but with its own regional style. Mexico itself has many regional styles and I think of Tex-Mex as one more of those. For instance, Tex-Mex style chile con carne is not found in Mexico, that I know of, although similar dishes are. Some regions favor flour tortillas, in others it's corn. Each region has its own type of tamale. A few things are universal to all regions. The details would probably take pages to itemize and I don't know enough about Tex-Mex to do that.

Sankum, I enjoy Indian food and have made some progress in learning to cook it. However, it has been one of the more difficult cuisines for me get a solid understanding of. The cooking techniques and recipes are generally quite different from other cuisines. My favorite Indian cook book is Classic Indian Cooking by Julie Sahni. I like the videos by Manjula.

I could never choose one favorite. I just love to eat! Besides, I've not eaten in other countries and who is to say what I've eaten here has not been Americanized until it tastes nothing like it would in Japan, Mexico, Thailand and most all of the other countries. I don't much like what I've had here that is Chinese. I'm also pretty sure it isn't really like the Chinese prepares.

I could come nearer saying which dishes I like from different countries. Example is Italian. I love some of it, can hardly eat the stuff with the red sauce on it. I love some of the German, can't take the red cabbage. I don't like seafood no matter which cusine it is.
