Suggestions for Egg Slicer & Measuring Cup

Hi all, I'm in need of a new egg slicer and a 2-cup measuring cup and would like know your suggestions.

I seem go thru egg slicers pretty regularly. I use the slicer just about daily and only for eggs. The problem is that the wires get stretched (usually only the ones on the outside edges) and then start going into the wrong slot. I've tried ones from Pampered Chef, Farberware and assorted cheapies. All seem to do the same thing. Do I need a better quality one, different shape or maybe it's operator error, lol. I would also like to use it for the occasional mushroom and black olives, if possible.

I'm also on the lookout for a 2-cup measuring cup. I would like it to be accurate, microwave and dishwasher safe (where as my current glass one is 'technically' dishwasher safe, the red markings are no longer red and getting slightly hard to read). I've seen some, but haven't found one that covers all three of my wants. I would probably be willing to go to a different size, but find the 2-cup one would be preferable.

Do you have any suggestions for egg slicers and/or measuring cups.

My favorite measuring cup is still my good old 2 cup Pyrex, now made in Pennsylvania afer Corning sold it and the manufacturer changed the name to World Kitchen.

I have an OXO "slanted" cup that you can look down inside of and see your measurements, but I still find myself reaching for that good old Pyrex. In addition to measuring, I use it for pouring pancake batter onto the griddle and for pouring muffin or cupcake batter into the muffin cups and I can melt butter right in the cup and then drizzle it on whatever I want butter drizzled on. Into the dishwasher and it's ready to go for the next use.

That's probably not much help since you already mentioned about the paint wearing off, although the markings on my old one are still pretty good.

Egg slicers? No idea, I've never had or used one, I tend to just hack eggs into pieces. LOL Much like I do mushrooms, now I think about it!

My egg slicers tend to get a bit rusty at the ends where the wires end. I'd probably just buy the cheapest and replace it when needed. And maybe you're using a little too much force on it? You're not buying egg slicers THAT often, are you?

A cuke sprout... and poppies... I am so thrilled. I moved the plants out of my window and set up a VERY makeshift grow light. I hung an old 40W tube light over them and put a small heater by the seeds. I surrounded the group of planted egg cartons with plastic boxes (toolboxes mostly) to trap some of the heat. I have been checking the thermometer about every hour and it is keeping at a nice 80 degrees. I hate... HATE spending money on stuff that doesn't work... but if this works I plan to make the real deal for next year. Will post a photo later. Here's my recipe, from my Mom of course. I'm guessing at the amounts, cuz I just do it my taste and consistency, but lets say you're doing a dozen eggs: Miracle Whip, not mayo: 3/4 to a cup (that's a guess, start small, you can always add more) Finely chopped sweet pickles: 2 tablespoons A little of the pickle juice: 1 tablespoon Just a small squirt of yellow mustard: 1/4 to 1/2 teaspoon Sugar: 2 teaspoons to start From here it's just how sweet you like it, and use the type of pickles you like the best. This is the same "sauce" my Mom used for potato salad too, only she added celery seed to the mixture. Hope you like.

I could have sworn I came back right after submitting the previous post to add the recipe, and submitted it, but the post has disappeared. I even changed the heading just like we're supposed to do. Oh well, here's the recipe. I served it with home fries made with home grown red potatoes and simply cooked fresh spinach. Zucchini Frittata with Marjoram (or Basil) 1 1/4 pounds zucchini, coarsely grated Salt and freshly milled pepper 3 tablespoons live oil 6 eggs 1 large garlic clove, crushed or minced 1 tablespoon chopped marjoram (or a few tablespoons chopped basil leaves) 1/3 cup freshly grated Parmesan or dry Jack Toss the zucchini with 1 teaspoon salt and set it aside in a colander for 20 or 30 minutes. Rince briefly, then squeeze dry. Warm half the oil in a wide skillet over medium-high heat. Add the zucchini and cook, stirring frequently, until its dry and flecked with gold in a few places, about 6 minutes. Transfer the zucchini to a bowl and wipe out the pan. Preheat the broiler. Beat the eggs with a few pinches of salt and some pepper, then stir in the garlic, zucchini, herb of choice, and cheese. Add the remaining oil to the pan and, when its hot, add the eggs. Lower the heat, cook for a minute or so, then give the pan a few jerks to make sure the eggs are loose on the bottom. If theyre sticking, loosen them carefully with a thin rubber spatula. Cook over mediium-low heat until the eggs are set and the top is nearly dry, about 10 minutes. Put the fritatta 4 to 6 inches under the broiler to finish cooking the top. I did make it last night, using the basil, but wasn't up to doing the photography thing. I don't know what a frittata is supposed to look like, and in the recipe, Madison doesn't specify how large of a pan to use, just a wide pan, so my frittata turned out maybe too thin. I used the largest skillet I had that could go into the oven or under a broiler, which is a big 12" (I think), or bigger, enamel covered cast iron skillet. I don't use it very often because it's so #%@!#&^#$! heavy! Anyway, the frittata turned out pretty thin. Are they supposed to be thin? It was fairly tasty. Jerry (DH) liked it, but we both agreed that I over cooked it. As thin as it was, 10 minutes on the stove top plus extra under the broiler was a bit too long. I have never had that happen (knocking wood) but I found the following: How To Freeze Eggs Eggs can be frozen, but not in the shell! It's best to freeze eggs in small quantities so you can thaw only what you need. An easy way to do this is to put them in an ice cube tray. Once frozen, transfer them to a freezer container and label. As with any frozen food, it is best to thaw eggs in the refrigerator and use them as soon as they are thawed. Only use thawed eggs in dishes that will be thoroughly cooked. Following are some easy instructions for freezing eggs: Whole Eggs: To freeze whole eggs or yolks crack them into a bowl and gently stir to break up the yolk somewhat. Try not to incorporate air into the eggs. Label the container with the date and the number of eggs. They can be kept frozen for a year, and should be thawed in the refrigerator the day before you intend to use them. Egg Yolks: To inhibit yolks from getting lumpy during storage, stir in a 1/2-teaspoon salt per 1-cup of egg or yolks. If using for desserts, use 1-tablespoon sugar or corn syrup per 1-cup yolks or whole eggs. Label the container with the date and the number of egg yolks. Use up extra egg yolks in recipes like sauces, custards, ice cream, yellow cakes, mayonnaise, scrambled eggs, and cooked puddings. Egg Whites: Raw egg whites do not suffer from freezing (cooked egg whites are very rubbery). No salt or sugar is needed. Break and separate the eggs one at a time, making sure that no yolk gets into the whites. Pour into trays and freeze until firm. Label the container with the date and the number of egg whites. Use up extra egg whites in boiled frostings (i.e., 7-minute frosting), meringue cookies, angel food cake, white cakes, or meringue for pies. Hard-Cook Egg Yolks: Hard-cooked egg yolks can be frozen to use later for toppings or garnishes. Carefully place the yolks in a single layer in a saucepan and add enough water to come at least I inch above the yolks. Cover and quickly bring just to boiling. Remove from the heat and let stand, covered, in the hot water about 15 minutes. Remove with a slotted spoon, drain well and package for freezing. Hard-cooked whole eggs and whites become tough and watery when frozen, so don't freeze them. Egg Conversions: These approximations are based on a large (2-oz) egg. Other egg sizes may be more or less than the amounts listed below. Whole Eggs 3 whole eggs = 1/2 cup 1 whole egg = 3 tablespoons 1/2 whole egg = 4 teaspoons Yolks 6-7 yolks = 1/2 cup 1 yolk = 1 tablespoon Whites 4-6 whites = 1/2 cup 1 white = 2 tablespoons Dried Eggs 1 egg = 2 tablespoons egg powder + 2-1/2 tablespoons water I would portion them out in small freezer bags and then put them in a large zip freezer bag. I like an all metal egg slicer....mine is vintage....but I have seen egg slicers in other people's kitchens break....

As for a measuring cup, I'm with Annie....good old glass pyrex 2 cupper...I have 2 of them!....the one that was 40 years old with the markings mostly gone got broken so now I have 2 newer ones and the markings stay in the dishwasher.
I use an egg slicer for strawberries and mushrooms.

Sushipup, I usually go thru 2 or 3 egg slicers a year. That seems like a lot to me, but I dunno.

Maybe I need to look at the hinge area better and find one that won't 'tweak' off-center while closing. I'll look into the all metal ones. I was just at thrift store on Saturday but can always use an excuse to go back...

Regarding Pyrex, will the paint fade when washed in the dishwasher? I have a Oven Basic (Anchor Hocking) and mom has Pyrex. I put her Pyrex in the dishwasher ('cause I do that at home) and she said the dishwasher is what fades the paint.

Yet one more person who reaches for their glass Pyrex measuring cups.

I was given a gift certificate to King Arthur Flour and purchased a 3-piece nesting set of Zyliss measuring cups/with lid, thinking how wonderful they would be - light-weight and how much less space they would take up, but was sooooo disappointed! You can't use them in the microwave and the red paint RUBS off just from nesting them together as well as use (I've never placed them in the dishwasher), so it was back to my 4-sizes of Pyrex measuring cups - the two largest ones were my mother's.

I love my little OXO slant 1/4-cup measure and use it all the time. I had a 2-cup OXO slant measuring cup and the handle broke off soon after it was purchased, as well as the printing rubbing off.

Can't help you with an egg slicer. I just use a knife.

FYI - When it comes to dry measuring tools, there is no such thing as "accuracy" for measuring cups and spoons in the U.S. - especially if you purchase "novelty" measuring tools. There are NO standards set for the sizes of them. So if you think one set of measuring cups may hold more or less than another set you own, you're probably right.

marzhere, I put my pyrex in the top shelf of the dishwasher, always. My theory is that if I have a cooking utensil that I can't put in the dishwasher, I usually don't use it, LOL. The only exceptions are my good sharp knives, wooden utensils and my wooden cutting boards.

The markings on my 20+ year old Pyrex cup are still there, while the painted markings on my dry measuring cups are worn away. I think it's handling that rubs off the paint, mostly, at least on those dry measure cups. Now, I'm not going to say that the markings on my Pyrex are going to last through 40 or 50 years worth of dishwasher abuse, but I think they probably wouldn't last that long being hand washed and dried with a towel either.
