Serving ice cream

At a funeral reception. A man in our church has died. He was brain injured as a child and worked in a sheltered workshop and lived in a group home. And a lot of the atendees will also be from the sheltered workshop and the various group homes where he lived over the past 25 years.

His sister has asked for icecream and cookies with all the trimmings...especially Reeces Peanut Butter Cups!

So we will serve ice cream and toppings......and I really want to serve it on those sandwich trays.....my co workers think that will be a mess. But I can't see people juggling a plate and a bowl and a glass or cup...

Someone suggested that people would take their bowl to the table and lay their cookie on the table and return for their drink. I think laying a cookie on the placemat is a bit tacky....and I always believe you need an underplate....but juggling a bowl and an underplate as well as a glass or cup is tricky...

Anyone see an easy way to serve this ice cream sundae thing?
