Paella Salad...How many does it serve?

Does anyone know about how many servings you get out of Deborah_ps's Paella Salad?

1 cup good olive oil

2 cups long grain rice

5 cups chicken stock

2 generous pinches saffron

1-1/2 teaspoons salt

1/3 cup red wine vinegar

1-1/2 pounds medium sized shrimp, cooked, peeled (Costco)

1/2 cup julienne slivers red pepper

1/2 cup julienne slivers green pepper

1 cup green peas (I use uncooked frozen)

1/2 cup halved black olives (a mix of greek olives are good)

1/4 cup chopped parsley

1/4 cup chopped chives or green onion

1.In large heavy bottomed pot with lid, heat 1/4 cup of the oil over medium high heat. When oil is hot add the rice and cook, stirring until it is opaque, 2-3 minutes. Add the stock, saffron, and 1/2 tsp. of the salt. Stir well to dissolve saffron and bring to a simmer. Lower the heat and cook, covered, until all liquid has been absorbed, about 20 minutes. (try not to over cook)When rice is cooked, remove and turn out into a large shallow bowl or pan and let cool to room temperature.

2. To assemble the salad, place the vinegar and the remaining 1 teaspoon salt in a large mixing bowl. Whisk in the remaining 3/4 cup olive oil. Add the shrimp, red and green peppers, peas and olives. Let marinate 10 minutes. Then add the rice, parsley and chives. Mix well.

3. Serve at room temperature or slightly chilled.

How the heck did I miss that recipe? It sounds delicious, I'm saving it right now.

I haven't made it but I'm assuming you're serving this as a main course? You're going to have 4 cups of rice after it's cooked, and 2 1/2 cups of vegetables, plus the shrimp. I'd say 6 servings, probably, that would give each person 1/4 lb. of shrimp and about a cup of the rice/vegetable mixture.

More, of course, if it's a side dish, fewer if you have big eaters that just love shrimp.

It's to be a side dish, but I suspect since it has shrimp in it, people will take larger-than-normal side dish portions!

I think I'll double it, just to be sure!

Well, we had a good week. Let's see, what about the eating part . . . we had ginger-garlic stirfry chicken w/ candied walnuts, classic hot and sour soup, abondigas (Mexican meatball) soup, pesto both normal/basil and tomato/trapanese, seared salmon with sweet sauce that I'd call ''semi-sashimi'', broiled beef short ribs w/ hoisin/BBQ sauce, miso soup, slow-cooked beef brisket, tomatoes baked and broiled w/ cheese and mayo, some excellent couscous in a great chicken broth, lots of tangy salads, orange cake, peach cobbler, spicy marinated and grilled steaks which put me in a food coma, two chicken and chorizo paellas which worked out even though we used long-grain rice, and some other stuff that I forget. Poor dishwasher worked overtime. Even though we dined like, well, oinkers, the total food and wine bill for the whole week was probably the equivalent of a couple of group dinners out. Doing your own cooking just beats restaurants all day long. Took a five hour kayak trip, mis-timed the wind (lake wind advisories the last couple of days) and paddled our arms off to get home before the whitecaps and waves got too bad. Some mild sunburns. A cigar and scotch night, which basically means me and W_____ being banished to chairs way far downwind, out where the coyotes prowl. Lots of ''stitch and b*tch'' circles, there was quite an obsessive knitting group - which is why we resorted to the cigars in the first place. Fixed some plumbing leaks - it is a very old cabin, and something always has to be mended. Some serious napping. Got caught up on our friend's lives, mid-life menopauses, growing kids, and how everyone is coping w/ the current economy - lots of ''re-inventing oneself'', ''consulting'' and ''living more simply'' going on, but things are okay. The BP oil spill cleanup looks to be a surprise positive for one guy's research funding, glad someone I know is benefiting from that. 13 y/o R_____ has become quite the jazz pianist. 11 y/o C____ does a mean Michael Jackson dance routine. Found a quirkly old-time gun and blade store that had a particular discontinued Forschner Chinese vegetable cleaver that I've been looking for. Then a 12 hour drive back to Portland, kayaks on the roof killing the fuel economy, and back to work today. The best thing is that we are all getting together in a month to rebuild a rotten deck at another cabin. And there's an excellent little oyster farm just five miles down the road . . .

Here's a recipe which is pretty typical of the paellas served here in Spain. Your son could leave out the squid if he doesn't care for it. Does he like mussels and prawns? Still there are many ways to make a paella, other than the traditional Paella Valenciana which uses plenty of seafood. If you don't have a paella pan then any wide, shallow round heavy bottomed pan will do. A large cast iron frying pan with shallow, sloping sides should be fine. PAELLA Ingredients: 1 dozen clams or mussels 1/2 kilo/1 lb prawns 1 small chicken cut up 200 grams / 7 oz boneless pork 75 ml/ 2 1/2 fl oz olive oil 3 cloves garlic 1 bay leaf 1 small onion, minced 2 green peppers 1 squid (about 300 gr/10 oz) 2 large tomatoes, peeled 1/2 kilo/1lb short grain rice 1 1/4 litres/2 1/4 pints hot liquid 1/2 teasp saffron (1/2 gr) 10 peppercorns 1/2 teasp sweet paprika 2 teasp salt 1 small tin red pimento 100 gr/3 1/2 oz cooked peas 1. Scrub the clams or mussels and steam them open. Black mussel shells with their creamy-orange flesh are especially attractive. Remove a half shell and discard, reserving shellfish on one shell. Strain and reserve the liquid. 2. Peel the prawns, saving several, unpeeled, for garnish. Cook the unpeeled ones in a little water and set aside. Prawn shells can be boiled in water for 15 minutes, then strained, and the liquid reserved for cooking the rice. 3. Cut the chicken into very small serving pieces. Typically in Spain it would be hacked into tiny pieces for quick cooking, which unfortunately makes for bone splinters. If desired, wings, back and neck can be cooked separately for stock. Cut the pork into small cubes. 4. In the paella pan heat half the oil and in it toast the garlic and bay-leaf. Remove and set aside. 5. In the same oil, slowly brown the chicken pieces with the pork. The chicken should be half-cooked in the browning process. 6. Now add the minced onion, and green pepper cut in strips to the oil. Sauté a few minutes. 7. Add the pieces of cleaned squid and fry for several minutes. 8. Add the chopped tomatoes and raise the heat to high so that they 'fry' in the oil. Add remaining oil at this point and heat well. 9. Combine the reserved cooking liquids - prawn, mussel and chicken - plus water. You should have approximately double the volume of liquid to rice, i.e., 2 cups rice, 4 cups liquid. Add the liquid to the paella pan and cook on a high heat. 10. In a mortar or teacup crush the saffron, peppercorns, paprika, garlic, bay-leaf and salt. Dilute with a little liquid from the pan, or in a little white wine, and add to the paella. Stir it in well. Cook on a medium heat until chicken is partially cooked. 5 minutes. Add the peeled prawns. 11. Add the rice to the boiling liquid in the pan and stir it to distribute evenly. (Or, add rice to the pan first and then add boiling liquid.) 12. Cook for a few minutes at high heat, then turn the heat down and let the paella continue cooking. Shake the pan occasionally, but do not stir the rice, as this breaks the grains. The rice will crust slightly on the bottom, but should not scorch. Add a little more liquid into the centre as necessary. 13. Decorate the top with the reserved clams and mussels on the half shell, cooked, unpeeled prawns, strips of red pimento and cooked peas. 14. Remove the paella from the heat when all the liquid is absorbed and rice still slightly resistant. Let it sit 5 - 10 minutes before serving. (You may place it in a very low oven for 10 minutes.) Thankfully, it is cooling down this week, and we should get some rain for the weekend. Crazy hot for the first week of June in Portland, record breaking actually. The weather really has changed here. My former neighbor was born here in the 1950s, and when he was a boy, snow was a regular event. My Helpful Friend who was visiting this weekend was born here in the 1960s, and during his childhood there would be snow every winter. In the ten years I've lived here, we have had snow only every four years or so. The summers are longer and hotter, the winters warmer although no less wet. This isn't just fallible memory; I've seen charts of weather data back to the 1800s that confirm the warming trend in the Pac NW. At least climate change is making the Oregon weather merely more temperate, actually "improving" it by some standards, and our coastline is steep so a few feet rise in sea level won't be a problem . Unlike other areas of the country, where the new normal will be stifling and floody in a couple of decades. On the employment thing, I've had an interesting and ultimately wonderful year. My company folded last summer, so I took some time off while looking for a new job. That search turned into a period of self-assessment and direction change. I learned that my former niche of the industry is almost non-existent in Portland, with barely fifty people in the whole city doing what I did. I also learned that in that niche, the opportunities for a fifty-year old are thin; it is a youth-oriented business in which companies want to hire twenty and thirty-year olds who will be cheap, not a threat, and do as they are told. Finally, I was reminded that the niche is not growing; actually, it is a shrinking business, due to changes and concentration in the industry that have been going on for decades. So I had to decide how much I wanted to stay in that part of the industry and whether I was willing to uproot from Portland. For some months, I planned on commuting to work in another city, with an apartment in San Francisco or even New York and a weekly flight to/from the family. But reason won over inertia, and in March I decided to switch to a different niche of the industry, which values experience more and isn't so concentrated in the money centers. Some good luck then came my way and I started interviewing for a local job in April. Two months and some ten interviews later, I am about to start a new career, one which I think will be better suited for the phase of life that I'm in now. I'll learn new things, won't be getting up and 4 am to work 14 hour days, and will have less (none?) of the stress that came with the old career brought. (I used to take my blood pressure during the day. In the afternoon, which is when things tended to blow up, I would sometimes see 200/120, even while my pulse was only 65. I looked and felt calm, but that just was a trained reaction.) In the meantime, I've thoroughly enjoyed my sabbatical. I've spent a lot of time with my kids, as cliched as that may sound. I made my son breakfast every day, worked Saturdays building the sets for his high school plays, took him to school and dance and helped him learn to drive. My daughter came home from college every few weeks and we cooked, planned her upcoming "year off" in Europe, shopped, taught her to drive, and played with the cats. SWMBO is perhaps a little tired of having me around - but she hides it well. I go back to work in two weeks. Life is packed right now. The kids are finishing the school year,. We've had friends visiting. I'm shopping for dress shirts and getting my "respectable" car running again. SWMBO is planning her summer, which may include a trip to Ireland with a girlfriend! Portland's bike festival, Pedalpalooza, is starting this week and I'm leading a few of the rides. On Sunday my daughter and son will drive to California for the summer, and dad will go along - not going to let two new drivers tackle a 600 mile road trip alone - then I'll fly back and enjoy the last few days as an unemployed man. Wow! I don't have magic massage. Magic massage sounds good! So great that Ice Cream Boy enjoyed the trip. They grow up so fast. Thanks for the explanation of the dish. I could definitely taste the honey. When I've had it before, I think it was probably more authentic to standard, but the honey before was kind of lost, the shrimp smaller, the sauce thicker and too much, and the shrimp and nuts definitely fried. Last night's (okay, and today's breakfast) had larger shrimp, big, flat, nicely curled to about 2” in diameter, nicely crisp on the outside but no discernale crust, very tender and delicious. Not deep fried, probably lightly through a wok. Maybe pan fried. The sauce had the expected flavor and clung perfectly, but was thin and light. None of that can't eat another bite of mayo feeling. The walunts were perfect halves, tasted very walnutty, and honey, but not oil. I think they were roasted or air fried. And instead of the usual bed of shredded iceberg lettuce, it was full on salad with baby butter lettuce, carrot and purple cabbage strings, and nice big slices of seeded cucumber. It was a perfect catch for the sauce drips playing dressing, and delicious in its own right rather than just garnish. Authentic to its history, perhaps not, but an excellent treat! I agree it does sound good. Based on the rice amount I, too, was thinking 6 servings, but that for six servings I'd bump up the shrimp amount to at least 2 pounds.

It also sounds like a high stock-to-rice ratio to me.

Y'all eat bigger than I do...I would say 8 as a main dish and 10 to `12 as a side...
For 8 that would be 1/2 cup of cooked rice about 6 shrimp, 1/2 cup mixed peppers adn 1/4 cup of peas.......with salad and bread that's a decent sized meal.
However, if you serve 6 you could have seconds.
That'll go into my "bridge luncheon" department!

My thought was 10-12 because it strikes me as a side not a main. Two cups of uncooked rice cooks up to a lot of rice! Mind you I might bump the shrimp up to 2 pounds.

A a main I would say at least 8.

Sounds like a great recipe!

Goodness...a day of log in problems!

I'm taking it to a school function where they asked groups to bring different foods. I got bumped (again, sigh!) from desserts. I need to take a side dish. I was trying to go outside of my usual "go to" pasta salad [that's easy, visually pretty, and never fails me]. I'd seen Deborah's pictures and thought this would be pretty.

I only need to bring one "batch," but I thought I'd double it since my serving bowl is rather large. That's why I was trying to figure out the volume I'd have when finished.

Of course, I'm always open to suggestions! :)

This does look like a great recipe. I think it would serve 6 hearty portions and 10-12 small portions. I would greatly reduce the olive oil, 1 cup is a huge amount -- too oily as well as too many calories in an otherwise nice dish. You could saute the rice in 2 TBSP oil easily and then use another 1/4 c. for the salad and you'd be fine.

I forgot to add that several of my favorite salads that I got on this site & other places might work here. If you want any recipes I'm happy to post them:

wild rice salad with pecans, golden raisins, fresh mint and an orange vinaigrette (I think it's a Silver Palette recipe)

tuna & white bean salad (has grainy mustard, red peppers, grated carrot, olive oil, vinegar, canned white beans, good tuna)

orzo salad with garbanzo beans, feta, grape tomatoes, & fresh basil & a lemon/red wine vinegar/olive oil vinaigrette

jasmine rice salad with peanuts, cilantro, red onion, grape tomatoes and a lemon vinagrette

Thanks Rose! Yes, I thought the same thing about the oil. I had planned to cut it at least in half if not down to one-third. I like the other suggestions you made, too! Thanks!!

I make the Paella Salad often and it makes a LOT!
(And it is delicious, by the way! LOL)

Depending on how many people you expect, I am not sure you would need to double it. It fills my largest Tupperware bowl, and easily serves 10-12 people a generous portion.

When I make the recipe, I reduce the rice to 1-1/2 cups and the stock to 4 cups, and I am generous with the veggies. The amount of oil is not an issue at all, the salad does not come out "oily".

I'm flattered that my salad is making the rounds :)
It serves 6-8 main healthy portions...I always include a rustic bread though.
I do not use the full cup of oil...I do use a bit less than a 1/4 cup to saute the raw rice. And 2/3 for the dressing.
I normally double this recipe, because I'm able to send some home with friends and still have left overs for lunch the next day.
I like to make it the same day as serving (chilled in frig)because the peas stay a bright green. The day after they turn that "canned" green color, but still tastes nice.

It was a HUGE hit. I definitely should have doubled it. I really, really regret not doing so. It's that shrimp-thing, I suppose. It has shrimp so everyone wants some. It was gone FAST relative to all the other dishes. So a BIG THANKS to Deborah _ps!!

Guess what they asked me to bring to the next function?!! A 2-litre bottle of soda!! We don't drink soda, so maybe I'll start a new thread asking advice for which kind to bring! LOL!

LOL, Deb, take Diet Coke. At least that's what I drink, although I'm usually asked to bring A&W Root Beer and vanilla ice cream so we can make floats. (grin)

Tell Gigi that the costume is still hanging in Makayla's closet, waiting. She's still wearing a size five toddler, but she might be in a six by fall, she's going to be Aunt Ashley's size, I think, not her mother's. Ashley is 5'2", I'm 5'2", my mother is 4'10". Amanda is an "amazon" among us, she's 5'7"! Poor Makayla doesn't have much of a chance of being tall, I'm afraid. She's worn the wig a bunch of times though, LOL.

Oh, and she LOVES the bread machine and makes a Frisian Loaf all by herself. It has a tablespoon of cinnamon and a cup of cracked sugar cubes, so how can it be bad? She's now trying to convince me that she "needs" a bread machine of her own. (grin)

Annie, I did end up taking Diet Coke! Easy-peasy!

I did not realize Makayla is such a peanut of a princess! Well, maybe it'll be her prom dress! LOL! I can just see her in that wig...! You tickle me to death about that bread machine! It probably wants to come back here for a rest! It gets quite a workout! I am so pleased it has a happy home!

As for the paella salad, I made this salad again for today's teachers' luncheon at our middle school. I doubled it and the amount was perfect! I worried at first about the oil amount...but it is perfect, not oily at all. I also wondered about the other liquid. I need that much because my burners run pretty hot. I also changed the recipe to be about 1/2 to 1 cup of white wine and the balance being stock or broth. I really, really like the flavor the wine imparts. The salad is really good, though, I admit to picking out the peas!

Deb, that bread machine makes loaves weekly for me, for Elery, for Amanda, the Monkey Princess' "sugar bread", all the sandwich rolls we use, and now I've been making honey wheat for Elery's Dad, he loves the stuff.

It made all the rolls for the sandwiches at our reception and for the wedding guests at the "Redneck Bonanza", plus all the dinner rolls for every holiday since I've gotten it. It's made at least 500 loaves of bread and THOUSANDS of dinner rolls, cinnamon rolls, sandwich rolls.

Dishesdone even sent me a book called Electric Bread and I made every single loaf in the book, starting at the front and working my way to the end.

Oh yeah, I use it a lot and haven't found a single recipe or dough that it doesn't excel at, so I think of you often and I can't tell you how much I appreciate it. Elery says it is the one kitchen appliance that he knows we'd replace immediately if something happened to it.

And the Princess? She weighs a red hot 42 pounds. Bruvver weighs 39 and he's two years younger. Just like me and Aunt Ashley, she's the smallest one in her class, but not the quietest. (grin)

Now, just to keep from hi-jacking the thread, I made the paella salad last weekend when Elery was here. Yes, I have a picture, I'll post it tonight. We both loved it, and leftovers went to Amanda, the only other person in the family that eats shrimp. She loved it too.
