yummy.........how about on a salad??
or make tacos with them.

Spread a little cream cheese on a cracker and top with a bite of the salmon.

Mix it with some mayo and finely diced onion and celery and make salmon sandwiches. I like to grill mine, like a grilled cheese sandwich.

This is a recipe that Nodakgal posted. Just substitute the shrimp or chicken for the salmon and add it in at the last minute (since it's already cooked). Sounds just yummy to me.

Chicken or Shrimp ALfredo Pasta courtesy Nodakgal at KT

skinless boneless chicken breasts or shrimp
1/2 cup (1 stick) butter
2 cloves garlic, minced (I always buy the little jar minced garlic in the refridgerater section and then i have it)
2 cups heavy cream
1/8 tsp pepper
pinch salt
1/2 cup grated parmesan cheese ( I used shredded I am sure and probably a little more than 1/2 cup! LOL)
1-12 oz box fettuccine pasta

First I cut my chicken breasts into chunks and browned good with a little marg, not alot.

1. Melt butter in a medium pan over med/low heat.

2. Add garlic, cream, pepper and salt, and bring mixture to a simmer. Turn the heat down if mixture reaches a rapid boil or it could boil over. You just want a simmer. Add the cheese, and continue to simmer sauce for 8 minutes or til thick. Then I added my cooked chicken.

3. While sauce cooks, bring water to a boil and add pasta. Cook pasta for about 12 minutes (?) or until done, then drain and spoon pasta onto serving plates with Alfeado sauce poured over the top.

2 -3 large servings

oh yes the alfrado sounds good, I am always up for pasta!
Thanks all for the ideas... everyone here is always SO helpful !!

Whenever I buy salmon, I always get one large piece or two smaller ones and cook both. The next day I cook some farfalle pasta and crumble the salmon into it along with some onion and celery. I then add mayo, ranch dressing and other spices to taste. It makes a delicious cold pasta salad.

If you have any some left from the pasta, you could make salmon patties.

Definitely atop a tossed or caesar salad, and also as suggested, mixed with some mayo and spices.

1- Salmon Caesar salad

2- Pasta dish - bow-tie pasta, diced red pepper, peas, salmon (cut in cubes or diced) and a cream sauce and parmesan.

3- Wraps - spread a thin layer of mayo on a flour tortilla, sprinkle with curry powder. Then layer black beans, salmon, lettuce, avocado, tomato and maybe some shredded cheese.

4- Put it into a seafood chowder. I make my chowder with shrimp, a can of minced clams and chunks of left-over salmon.

5- Just warm it up as is. If that dries it out too much, I stir some tarragon into a little mayo and spread it over the top of the salmon. Serve with steamed veggies.
