How high should the backsplash go? Help!

We are building a new house. The cabinets are up, the granite will go up on Friday. We have a 36" GE-Monogram induction cooktop. We plan on getting a backsplash with 4" light colored tiles. Then have a few 2" glass tiles behind the cooktop to give it a focus. The backsplash people suggested a simple design in the back instead of one with border, etc since our cabinets are minimalistic (they are a nice 42" maple with deep rose color). The granite is shivakashi.

Our hood is a GE monogram 36" stainless steel hood that goes all the way to the ceiling. My builder suggested the backsplash stop where the hood begins (about 30" above the counter top). My wife wants it to go higher possibly to the top of the cabinets. Which is better? Is it harder to install the hood over tile. Do they leave a gap to install the hood if I put the tile backsplash behind the hood?
