Need a Carrot Side dish

that can be served at room temperature. I don't really want to do a carrot salad or slaw. Is there any cooked carrot dish that would be good served at room temp?

Seems like all of the Glazed-type carrot recipes say to serve immediately.

Anyone have any suggestions or recipes.
