Easter snippets

I headed out to the farmers' market this morning for what my great-aunt used to call "snippets" - the little bits of meat or poultry left from more popular cuts of the animal. There are always plenty around Easter time.

And wow, did I find them. I came home with 12 lbs. of lamb leg bones left from boneless leg of lamb roasts. I also got a dozen large fresh ham hocks @ $1.29 a pound.

Fresh unsmoked hams are a popular Easter dinner in our area and the hocks are usually cut off the ends. I froze all except one.

I put on some great northern beans to soak and skinned and tied the hock. Then I browned it in the oven at 450 while parcooking the beans and mixing up a spicy sweet and sour braising liquid with leeks, celery leaves and carrots. Ready to go into the oven.

Cooked them at 300, then 275 for about three hours and it was the best snippet dinner I'd had for a while. (Also had a spinach and mushroom salad.)
