every year, what cuts can I request in place of the "fresh ham"
I just don't like those things, no matter what I do to them, and I get four of them every time we order a pig.

OK, since we have such a "regional" thing about names, I'm going to ask whether this is the traditional ham, i.e. the back leg/butt of the pig, or is it the picnic, i.e. the front shoulder?

Amanda gets both cuts (2 hams and 2 picnics) smoked and cut in half, because they like smoked pork.

If you are talking about the picnic cuts, they make a pretty decent pork steak. The actual ham makes a relatively lean steak, so that would not be my first choice, I usually have the hams smoked and then cut into "ham steaks", which the kids like for breakfast or for scalloped potatoes.

So, your choices are somewhat limited here. You can take it as a fresh ham, you can have it cut into "steaks", you can have it cubed for use in chili and stew, or you can have it ground for sausage or for ground pork to use in meatloaf, etc.

Or find someone that will swap you for something you do like, even up for venison or salmon, if you know a hunter/fisherman.

I'm going to get pigs processed next week, hopefully, and any cuts I really don't like I have ground. Hams get smoked but I usually end up giving those to the kids for dinners because they love 'em.

Have no idea what part of the pig it came from. They are just marked "Fresh Ham". They look similar to the picture, but twice as thick. They are not smoked.

Pigs have higher feed conversion ratios than ruminants, but lower ratios than poultry. The ratio depends on the quality of the feed, but I think it runs in the 3-5 lbs. of feed per pound of gain range. Because pigs aren't ruminants, they don't digest forages as completely as sheep and cattle or produce amino acids as in the rumen, and thus generally require higher quality feeds and have higher, more complete protein requirements. Be sure runoff from the pigs pens doesn't flow directly to surface water. Your plans would meet the requirements of an animal feeding operation, even with a couple pigs. An AFO that discharges to surface water is required to get a permit which will require you to eliminate the ability of untreated runoff to get to surface water, at which point you are no longer a regulated AFO and don't require a permit--so, just skip the regulatory process and make sure no runoff gets to surface water. Pig manure is high in nutrients, particularly phosphate and high in nitrogen when the liquids are retained. Because pigs don't normally consume high fiber diets (like humans they don't digest the cellulose), it isn't as high in organic matter compared to cow or sheep manure. They will heavily fertilize the garden and add organic matter, but they won't add the degree of organic matter that ruminants can. Biologically they are relatively close to humans. I would fallow the pens for a year before putting it back in garden to make sure there aren't any diseases or parasites passed to the garden produce. Good luck!

We get a lot of wild pigs which have been eating guavas. Yum! It is almost worth while to let them dig up the garden a bit so we can trap them. We've just started avocado season now, though, so the pigs won't be as sweet. Fatter, but not as sweet. We will probably start smoking the meat or making sausage since it won't be as sweet. I've heard that if pigs have been eating acorn mast before slaughter, then the fat won't congeal properly and sort of be a dark oil. Not having any acorns to feed the pigs - which are wild and feed themselves anyway, I can't personally test this theory. Some folks prefer sow meat to boar meat, although I'm not sure if there's a difference.

I would go with a classic white subway tile. It will never go out of style and always look classy. As for the cabinets, although I do like white kitchens I'm starting to see lots of beautiful kitchens with medium stain cabinets like yours. Have you seen the kitchen by Minnesota designer Todd Hansen in the Jan/Feb 210 Better Homes and Gardens magazine "Kitchen and Bath Ideas"? It is my current dream kitchen. It has white/cream cabinets for uppers and a light/medium wood (similar to your oak) on the bottoms. A few ideas: 1.) leave the bottom cabinets as is but paint the upper cabinets a white/cream color 2.) don't paint any cabinets but put a few glass panel/glass doors on your uppers. Either solution will solve the problem that you don't like all the graining on the oak cabinets. Most people in your kitchen looking at the cabinets are going to notice the uppers more than the lower cabinets. If you change out the uppers you will create the look you want. No matter what, I agree with the other posters that you should wait and see how you feel when your island is painted and your new counters are installed. Be sure to show us the pictures. It is going to look great. You have a very nice space to work with.

Hi - I am also in the process of choosing a butcherblock top for my island. I looked locally and called Grothouse. They said I could go direct thru them but said a local dealer might also be worth a shot. I went to one of the two in my area and looked at samples... Bottom line I called Grothouse back and ordered 7 samples so I am sure that I like what I buy. Given the total cost of the top, buying a couple samples is well worth it. Plus Grothouse will apply the price of some of the sample to a purchase. I called Boos and they have standard sizes that they sell so if you want that size, great. Otherwise you need to cut it and "that voids the warranty". At least that is what they told me. Grothouse will make the size you want. Good luck

angelaid, that looks like a picnic to me, a shoulder cut, which is more fatty than the hind leg/ham portion. I can't guarantee that, but it's not the right shape for the hind leg, and doesn't appear to have the round bone that a slice of the back leg would have.

I usually have that cut into pork steaks, although Elery likes to put it into the smoker for pulled pork, the fatty streaks and collagen break down into a moist finished product. I like the America's Test Kitchen recipe for pork steaks done on the grill in a pan with a tomato based sauce, so we're going to have to compromise. (grin)

And, as I said, if all else fails, it gets ground. I never get the ground pork seasoned, I can season it as I wish, making Italian sausage or breakfast sausage or whatever, or I can put it into a sauce, make sausage gravy, well....you know.

You are welcome, and I hope you are enjoying the rest of the pork. I was reminded by Elery that the old Italian grandmothers he knew when he was a kid would put a pork roast into the "Sunday Gravy", so that might be a good use too.
