For just 4 of you I think it's enough food but it seems to sweet to me.

I'd go for a simpler quiche and substitute bagels or croissants for one of the sweet breads.

If you are in love with the quiche then I'd do a vegetable salad instead of the fruit salad.....maybe a spinach salad ...and serve sliced cantaloupe as the fruit offering.

I think it needs a side of bacon.

The chicken quiche has cheese in it and also cheese and pecans in the crust. So I thought I needed a little "sweet". But I think the croissants are a good idea along with the breads, since I already made them.

I thought about bacon or ham, and may still do that, but I don't want to overload, if you know what I mean.

Glenda, that salad would be wonderful, but we're having sweet-spicy pecans as one of the snacks the evening before and there's a lot of pecans in the quiche. I c/p'd it though for another meal. Be great when our California kids come in May since she's gluten-free.

patti, I've made pig candy quite a few times and always a hit.

Pig Candy aka Brown Sugar Bacon

1/4 cup light brown sugar
1/4 teaspoon fresh ground black pepper
1/2 teaspoon cayenne (optional)
1/2 pound thick-cut bacon, 8 slices

Preheat the oven to 375 degrees F. Mix brown sugar, cayenne, and black pepper together in a medium bowl. Add bacon and toss. Line a baking sheet with a wire rack and lay bacon on the rack. Pat any remanding spice mixture on the bacon. Put the baking sheet on the top rack of the oven and bake until crisp, about 15 minutes. Remove from the oven to a serving dish and let cool slightly before serving.

*****I always turn mine midway cooking

*Note: If using thick cut peppered bacon, omit the pepper in this recipe.

I also think too much sweet....leave one of the breads in the freezer and add something crunchy like bread sticks...croissants are really rich to me and will only add to the richness.
Then add a veggie salad of some sort...perhaps that broccoli salad with the bacon and raisins, or that bok choy salad with the fried raman noodles...or even a simple green salad with a simple vinaigrette dressing.

I don't think I'd add a meat since there is chicken in the quiche. I think a veggie salad or roasted asparagus and a simple fruit side (grapes, sliced melon, or fresh strawberries) would be perfect. With the crust on the quiche and one or both of your breads, you really have plenty of starch - I wouldn't add croissants; with the cheese in the quiche and crust you have plenty of dairy/buttery richness. I'd keep it simpler rather than more complicated.

The pig candy is just a novelty, but a great conversation piece and really is good.

The amt of cayenne pepper you use is according to your taste.

I make it for potluck, as an extra, and for family fun.

Your food no matter what you prepare will be delicious. You are such a wonderful cook.

I think bacon would be a good side addition and I would prefer a sticky bun instead of the two breads.
It would give you a nice sweet as the quiche already has enough carbs.
Roasted asparagus wouldn't be wrong either.

I agree with ynnej, I think some potatoes would go well with the rest of the brunch. It's my Irish side, I can't help it.

Yes, I KNOW there's enough starch, I just like potatoes, LOL. I'd add potato pancakes or hash browns, something crunchy.

I would add a side dish of some sort. It does seem like the menu is missing something. Quiche, fruit and bread is what you have. I also love potatoes of any sort for brunch. Roasted veggies with a mustard and shallot sauce. For such a small group it wouldn't be that hard to make something else. NancyLouise

Chicken-Pecan Quiche (DebbieD/Alabama)

1 c. flour
1 c. (4 oz.) sharp Cheddar cheese, grated
3/4 c. pecans, chopped
1/2 tsp. salt
1/3 tsp. paprika
1/3 c. vegetable oil

Combine first 5 ingredients in a medium bowl; stir well. Add oil. Stir well. Firmly press mixture in bottom and up the sides of a 9" deep-dish pie plate. Bake at 350 for 12 minutes. Cool completely.

1 c. sour cream
1/4 c. mayonnaise
3 large eggs, lightly beaten
2 c. cooked chicken, finely chopped
1/2 c. (2 oz.) sharp Cheddar cheese, grated
1/4 c. minced onion
3 drops hot sauce (optional)
1/4 c. pecan halves

Combine sour cream and next two ingredients; stir with a wire whisk until smooth. Stir in chicken, 1/2 c. cheese, onion and hot sauce. Pour into prepared crust. Arrange pecan halves over chicken mixture. Bake at 350 for 55 minutes or until set. Let stand 10 minutes before serving. Yield: 8 servings.

Note: You can substitute any deep-dish pie crust. Just sprinkle the bottom of the crust with 1/2 c. shredded cheese and add the whole cup of cheese and pecans to the chicken-sour cream mixture. Prebake the pie crust 10 minutes.

I can't thank you all enough! It really made me think and rethink my menu, so here's my semi-final menu.

Chicken-Pecan quiche
Caprese salad
Plain fruit salad (orange sections, bananas, fresh pineapple and marachino cherries) no sugar or yogurt dressing
Pumpkin and date-nut bread with cream cheese
Bloody Mary's
Coffee

I did need a salad and the tomatoes are so good right now.

Sounds great......but I would still add a non fruit bread of some sort. Mini Croissants or mini bagels.
