Something Interesting in Graham Cracker Crust???

I've got a pre-made crust I need to use up (don't ask).

Any ideas for a quick and easy dessert?

Cheesecake and citrus-y stuff just doesn't sound good today!

This would be just as good in a regular graham cracker crust as in a chocolate one. Very rich and yummy!

Cheddar Pennies Delicious cheddar penny cookies!!! Makes 70 pennies. I think I found this recipe on Allrecipes.com 1 to 1½ cups sifted all-purpose flour 1 pinch salt 1 pinch cayenne pepper 6 ounces shredded Cheddar cheese 1/2 cup butter, melted Mix together the flour, salt and cayenne pepper. Stir in the Cheddar cheese and melted butter to form a firm dough. Roll pieces of dough into ropes as big around as a penny. Slice into 1/4" slices. If dough is too soft, it can be chilled until firm. Place slices on a lightly greased cookie sheet so they are 1" apart. Bake at 325º 20-25 minutes, until the bottoms are lightly toasted and the tops are firm. Cool completely before serving. Store in an airtight container at room temperature. Sesame Seed Whole-Wheat Crackers From a Womens Day or Family Circle back in the 1970's. My kids rolled out a lot of these on rainy Indiana afternoons. Wheat germ can be used instead of the sesame seed. 1 C flour 1 t. salt 1 C whole wheat flour 3 T. oil 1/2 C sesame seeds 2 T. molasses Combine ingredients with 1/2 C water until well mixed. Gather into a ball and knead several times. Divide in half. Roll each half out to fit a lightly buttered 18 x 1 4cookie sheet. Cut into 2" squares with a pastry wheel. Prick surface of each cracker with tines of fork. Bake at 350 for 10 mins or till lightly browned and crisp. Cool and store in airtight tin. Makes about 9 dozen. Oatmeal Crackers Another Womens Day or Family Circle recipe. I made a few variations, and prefer these over the Sesame Seed crackers, which came from the same magazine as above. Notice theres very little fat. 1 1/3 C flour 1/2 t. each baking soda and baking powder 1/3 C buttermilk 1/3 C soy flour (adds protein, but can leave out, just use more flour) 1 C rolled oats 3 T. olive oil 2 T. honey or molasses Combine ingredients with 1/2 C water until well mixed. Gather into a ball and knead several times. Divide in half. Roll each half out to fit a lightly buttered 18 x 14" cookie sheet. Cut into 2" squares with a pastry wheel. Prick surface of each cracker with tines of fork. Bake at 350 for 10 mins or till lightly browned and crisp. Cool and store in airtight tin. Makes about 9 dozen. Sesame Cheddar Sticks This recipe came from a Womens Day or Family Circle, but I found it kind of tasteless, so I changed a few things. The original recipe called for 1/2 C margarine, 3T Worcestershire sauce and 2 t. cold water instead of the buttermilk, brewers yeast, mustard & chili seasoning. Real good with salad. 1 1/2 C flour 1 t. brewers yeast 1/2 t. salt 1 C sharp cheddar 1 t. dry mustard 1 T. sesame seeds 1/3 C buttermilk 1 t. chili seasoning (opt.) Combine all ingredients except buttermilk with pastry blender till crumbly. Stir in buttermilk and shape into a ball. Handle lightly. Roll out on lightly floured board 1/ 4" thick. Cut into 3" x 1/2" strips. Place on ungreased baking sheets and back at 400 for 8-10 mins till golden. Whole Wheat Crackers This recipe came from Grit Magazine, 4/7 - 4/13/91. Makes about 60 crackers. 1 t. dry yeast 1/ 4t. sugar 1/ 4C whole wheat flour 1/3 C warm water 1/ 4t. salt 1/ 4t. baking soda 2 T. oil 1 C flour 1 slightly beaten egg white Dissolve yeast in warm water. Stir in oil, sugar & salt. In medium bowl mix flours & baking soda. Add yeast mix. Knead thoroughly. Chill in plastic bag for 1 hr. Roll out on flour into 12x10" rectangle. Fold in thirds & roll out again. Repeat twice more. Let rest 10 min. Cut in half & roll each into 1 4x 10" rectangle. Cut into 2" squares, prick well & brush with egg white mixed with 1 T. water. Sprinkle with coarse seasoned salt. Bake on greased baking sheet, 350, 10-12 min.

fori, here's one I used and liked, from King Arthur Flour. Beachlily sent me a pile of their "Baking Sheets" and this was in one of them. Graham Crackers Do you know why graham crackers are called graham crackers? Sylvester Graham, a minister who lived and preached in the first half of the 19th century, carried on a dietary crusade in favor of whole wheat flour, arguing that to separate the bran from the rest of the wheat berry was against the will of God. Thus whole wheat flour, or graham flour -- flour milled from the whole wheat berry, rather than just the endosperm. And thus graham crackers -- sweet, crisp crackers made from whole wheat flour. These crackers aren't as light as the ones you buy in the store. But they're crunchy and delicious, just the ticket for spreading with peanut butter and enjoying with a cold glass of milk. 1 cup (4 ounces) King Arthur Traditional Whole Wheat Flour or Whole Wheat Pastry Flour 1 cup (4 1/4 ounces) King Arthur Unbleached All-Purpose Flour 1/4 cup (1 3/4 ounces) sugar 1/2 teaspoon salt 1 teaspoon cinnamon 1 teaspoon baking powder 1 large egg 1/4 cup (1 3/4 ounces) vegetable oil 1/4 cup (3 ounces) honey 2 to 3 tablespoons (1 to 1 1/2 ounces) milk (approx.) additional milk for glaze cinnamon-sugar (optional) In a mixing bowl, combine whole wheat flour, all-purpose flour, sugar, salt, cinnamon and baking powder. In a separate bowl, beat egg till light, then add oil, honey and 2 tablespoons milk. Stir into dry ingredients until you have a fairly stiff dough, adding additional milk if necessary. Wrap dough in waxed paper and chill until firm, about 1 hour (or longer, if it's more convenient). Turn the dough onto a floured surface and knead gently until it holds together. Roll dough out till it's about 1/16-inch thick; make sure rolling surface is well-floured, or you'll have trouble transferring crackers to baking sheet. Preheat your oven to 375ÃÂ°F. Cut dough into 3-inch squares, prick each square several times with a fork, and place on lightly greased cookie sheets. Brush the tops with milk, sprinkle with cinnamon-sugar if you're so inclined, and bake for 15 to 20 minutes, or until crackers are lightly browned. Remove crackers from oven, transfer to a wire cooling rack, and cool completely. Makes about 2 dozen graham crackers. I don't find my raspberries seedy at all. Just little juicy jems. I find my blackberries almost repulsive at times if even slightly under-ripe. Spitters. Probably different varieties. Some seedy berries are furry, lol. Now that is weird. Must be a texture thing some do not like about a crumb crust. I'm not much of a dessert person but do like it. Not a 'sandy' texture that maybe too much sugar brings. I plan on making something like this one, HERE...but less sugar. MarthaStewart's recipe uses 1/4 cup of sugar. I have a dozen meyer lemons on my tree. Maybe make a few 6inch tarts and give to neighbors. Keep one for a taste test.

Thanks for the questions. It's hard to know sometimes what points need to be spelled out. So when rolling out with plastic, there's plastic top and bottom and no bed of flour. This makes for a relatively clean workspace and also saves a lot of wash water, though it does send plastic to the trash. I haven't found thin enough silicone. Bread wrap (beeswax impregnated linen) might work, but it's probably not smooth enough and likely too thick. Anyway, you chill the crust after rolling, either in the fridge or with ice packs, especially when starting with warm butter. I learned from Stella Parks at Serious Eats that the big secret to handling any kind of crust was to chill it all along the way, chill the bowls and tools, chill the work surface (ice packs on counters). Cold is your friend. After that, just remove the top layer of plastic, invert over the dish, and lay it in. For something as friable as graham cracker, you could also put the dish on top and invert them together. The partial advantage of that is that it's for sure centered, but it takes about 5 hands to do, and it's hard to get those hands under the whole crust, because it'll bomb if you just have one hand and it droops, and if you lift the mat as well, and it seals to the dish, then it won't drop in gracefully and fit down in the bottom and up the sides. Some people have the trick and do it that way. They may have bigger hands than I. :) In general, when one flips the crust on plastic right--dish right next to them--and it's centered enough, you just let the center sag into the dish, lay the edges up the sides, and ease the sides into the corners and flat. When it's in position, gently pull off the plastic, and smooth out any oopsies. So, the first 5 TBSP were melted, and got sucked up super quickly. The latter 3 TBSP were in a Pyrex cup (same as the first batch) in the microwave, when the MW committed harakiri. It was 30 years old and had had many lives, and was only in the kitchen because my speed oven needs fixing (and I hadn't yet put powdered dyes in it, which would have made it ineligible for food). So I put put hot (sink) water in a double sized ramekin and set the dish of butter in that. Ergo, softened. I liked it better than the melted. It combined well and had more body, less will to escape. But this is an unimportant detail. So long as the crumbs are moist enough to stick together there's no problem—specifically, yes, the extra butter makes it moist enough to hold together. A bit of water might have done the trick, but with water one would have to worry about it going mushy since crumbs collapse when wet (and wouldn't have turned into caramel!), whereas flour turns to glue. For GF, one uses egg for both moisture and glue. And it's a disgusting sloppy mess, but the plastic wrap method gets it rolled and into the dish. ETA: It occurs to me that the liquid of the melted butter might make the sugar more liquid and work to hydrate the crumbs, and thereby not roll out so dry. There's no way I could have endured a whole quarter cup of sugar with these graham crackers! Sally might use graham crackers more like what I thought they should be like. In the end, the crispy caramel crust, while not what I'd usually make, bears repeating. I use this rolling method for all my crusts. It's so much easier! I finally figured out that a lot of people were developing gluten as they rolled, and were making thicker crusts, both of which made them easier to manhandle. My preference is thin, but still flaky (regular flour crust) which requires not beating up the crust so much while rolling. But then for other non-gluten crusts, one can use the same method, and be clean and easy with the whole thing.

Hmmmmm...See!! You guys have me thinking already....chocolate banana cream pie.......maybe. I've only got one banana left.........IF DD#2 doesn't eat it today.

I'm going to see who else jumps in before I decide.

Make chocolate pudding, the cooked kind....ass extra chocolate chips ands tuf until they melt...serve with shipped cream.
Put a thin layr of caramel ice cream topping in the bottom of the crust, filkl with icecream, freezem cut and top with chocolate sayce....you can also put a layer of nuts on top and push down into the icecream before you freeze it.
Make lemon curd ( or buy some)...half fill crust with vanilla icecream. add a layer of lemon curd, freeze and add more ice cream...
Fill with fresh strawberries, sliced, make strawberry jello, chill until slightly thickened and spoon over the strawberries, chill until set, serve with whipped cream.

I have this recipe in my files, but have never made it.

What about coconut cream pie?

Chocolate Butterscotch Pie

1 cup brown sugar
Â½ cup flour
2 cups milk, scalded
2 ounces chocolate, melted
1 tbsp water
1/8 tsp salt
2 egg yolks, slightly beaten
1 tbsp butter
Â½ tsp vanilla
1 baked pie shell (pastry or graham cracker crumb)
Brown Sugar Meringue (recipe follows)

Blend sugar and flour and add enough milk to make a thin mixture. Combine with remaining milk, add chocolate and stir until thickened. Cook in top of double boiler, covered, for 5 minutes.

Stir water and salt into egg yolks, add a little of the cooked mixture, return to remaining mixture, add butter and cook 1 minute longer. Cool.

Add vanilla, pour into pie shell, top with meringue and proceed as directed.

Makes 1 (9-inch) pie.

Brown Sugar Meringue

2 egg whites
4 tbsp brown sugar
Â½ tsp vanilla

Beat egg whites until frothy. Add sugar gradually and beat until stiff. Add vanilla and pile on pie.

Bake in slow oven (325) for 15 to 18 minutes. Topping for 1 (9-inch) pie.

CREAMY DUTCH APPLE DESSERT

1/4 c. butter
1 1/2 c. graham cracker crumbs
1 (14 oz.) can Eagle Brand sweetened condensed milk (not evaporated milk)
1 c. (8 oz.) sour cream
1 (3 oz.) cream cheese
1/4 c. Realemon lemon juice
1 can Comstock apple pie filling
1/4 c. chopped walnuts
1/2 tsp. ground cinnamon

Preheat oven to 350 degrees. In a 1 1/2 quart shallow baking dish (10 x 6 inch) melt butter in oven. Sprinkle in crumbs; stir well. Press on bottom of dish. In medium bowl, mix together sweetened condensed milk, sour cream and lemon juice and cream cheese. Spread evenly over crumbs.

Spoon pie filling evenly over creamy layer. Sprinkle with walnuts that have been mixed with the cinnamon. Bake 25 to 30 minutes or until set. May be served warm or cold. Refrigerate leftovers.

Variations: Omit cinnamon, substitute blueberry, cherry or peach pie filling for apple pie filling.
Or you could take the crumbs from the pie pan and use them for these: 6 in 1 Bars Â¼ c butter 1\-1/2 c graham cracker crumbs 1\-1/2 c chocolate chips 1\-1/2 c chopped walnuts 1\-1/2 c flaked coconut 1 14oz can sweetened condensed milk Melt butter, mix in cracker crumbs, pat in bottom of 9 x 13 baking pan. Sprinkle chips, nuts and coconut over top. Pour milk over all & bake at 350F 20\-30 minutes or until golden brown. Linda

Now that's easy! I like it. I have all the ingredients.
I think I'll scale it down a bit and just put it in the pie pan (no point in dirtying another dish.... hee hee).

Yeah, Lindac....'splain please???

I used Linda's (doucanoe) recipe as a 'jumping off' point. Boy did I jump!!!

First, I made my own sweetened condensed milk (note to self: lower the heat and pay attention!)

Then I tossed choc. chips, coconut, and chopped almonds into the graham crust and poured the now thickened with browned bits SCM over the top. Baked for about 25 minutes and pulled this out of the oven:

Ugly!!

And only slightly better when cut:

On the UP side.........it tastes like an extra chocolate-y mounds bar sitting on a graham cracker!! It won't go to waste, but a "presentation" recipe it ain't!

Next time I'm gonna...

I was fried! I had cooked and served lunch to 100...
I suspect that was before my nap! And I didn't proof read!
Today was another 50 for a funeral lunch...but I have had a nap and am headed out for a scotch and dinner!
