Need help with my menu

I'm having some friends for dinner on Friday and need help with a salad. Tentative menu is chicken fillets, with a sauce, in the oven, a greek dish with potatoes, green beans and zucchini, corn pudding and apple cake with warm apple gravy for dessert. 2 of the guests are very hearty eaters. Any suggestions appreciated. I do better with specific recipes.

I think your menu sounds great the way it is. I'm maybe add some warm crusty rolls or yeast rolls and call it good. What time are we eating?? LOL!

Gosh that sounds wonderful! Apple gravy? I'm not a gravy eater but that sounds wonderful!

The others are correct; not all Jews keep kosher, and even those that do vary in degrees of strictness anyway. For example, some would eat any tortilla or any cheese; some would only eat packaged foods that had a kosher certification. If they accepted your invitation, you can be confident that they are not the strictest even if they do keep kosher. You are probably safest simply avoiding any meat products. People who keep kosher are usually more relaxed about dairy products than meat. For example, your fajita menu would be okay - IF you have kosher meat, not meat from the supermarket, and IF they don't care that you aren't using kosher utensils and dishes. But I think that most people who do keep kosher but who would accept an invitation to stay in someone's home would probably eat anything vegetarian or fish (but only kosher fish like tuna, sole, salmon, trout, etc. -- no shellfish, catfish, or scale-less fish like eels and squid). The only way to know is to ask, though. If you feel uncomfortable asking about kashrut, you can just ask if there are any food restrictions (with that many people, there are bound to be allergies, too!). Personally, I think your challenge is not food, but SIX KIDS! You are really nice to do this.

Update and thanks for the good suggestions I received here. I also did a bit of reading and taking everything into consideration, came up with the following: Mini Croissants, regular and five grain Boars Head tavern ham, shaved Boars Head maple honey turkey, thinly sliced Condiments: several kinds of mustards, regular mayo and mayo with pesto, blueberry and raspberry/cranberry jams Capers, small dill pickles and sweet gherkins Plain and Vanilla yoghurt with organic granolas (plain and dried cherry and almond) and blackberries, blueberries and raspberries as available add ins Tart cherry scones and almond biscotti Blueberry muffins (not very sweet) Scrambled eggs We had a variety of coffees, teas and hot chocolates for the kureig, and individual bottled juices in mango/banana, orange, blueberry blend, greens, etc., and fizzy and still water. One guy got up early and I took him to the local track for a run. The others slept in and they ate around 11:15. Everyone ate some of everything, and I packed up a basket of goodies for their car trip. No one wanted any mimosas or my favorite pink champagne, as they were off to South Carolina where they had another performance the next day. They were all lovely, all very accomplished operatic singers who attended the St. Petersburg Conservatory and absolutely delightful. They all wished they had known we had a tennis court because they all play, and we agreed the next time they come to town we will schedule a round robin tournament with local players. I too think you might want to offer something more substantial as a late-night snack. For one thing, a lot of the kids will probably have been too keyed up to do justice to dinner, for another, they will probably be up most of the night. Your husband's idea is a good one in that with a cheese & cracker tray, the kids can munch as they please...but maybe make it a bit more substantial with the addition of some cold cuts, rolls & a condiment selection? Feeding twenty teenagers can be expensive, so a container of tuna or egg salad could round things out a bit. Lord knows when and how the kids will wake up...early, late, all in a bunch or by dribs and drabs? I think your husband has the right general idea, again. Grab 'n' Eat stuff can work no matter how they wake. Muffins, bagels, doughnuts. Some butter, jam, cream cheese & fruit. One suggestion on the non-menu side, is to have somebody responsible for cleaning up the leftovers before everyone drops off to sleep. Dunno what the varmint make up is on your brother-in-law's land, but one hungry skunk could give them all a graduation to remember. :P

I think I am in good shape for the party (clearly a reference to food prep). The gumbo is made and in the fridge. It has to be heated up and the shrimp and crab have to be added at the last moment. I've partially cooked the sausage so they can finish on the grill. If I didn't do that, my husband would char the heck out of them. I don't know how much gumbo my recipe makes, but to give you an idea, the serving bowl is 11 inches tall by about 11 inches wide. It should feed 25. Thus the 30 sausages. Hearty rolls, mustard... we should be all set. The spiced nuts came out great (thanks AnnT) and the pigs in blankets are waiting in the fridge. Brownies are done and a tray of oatmeal raisinet cookies are cooling. The rice will be last minute as it looks like I may have to hang around afterall (I am not complaining!) Tomorrow all I have to do is some last minute shopping for incidentals and maybe another batch of cookies. Thanks for all the help and entertainment. Jo

I agree with pattie43's suggestion of dinner rolls. I'd go with warm crusty rolls!

I forgot to mention the rolls. So you don't think I need a salad????? The apple gravy is served warm over the apple cake.

I think a simple Greek salad would be tasty, if you are bent on having a salad.

Oh my gosh fresh rolls too, I'm in heaven!

That sounds like a hearty menu. I don't think you need a salad, but if you want some crunch, you could add shredded carrots or broccoli slaw dressed with a light vinaigrette.

How about if you think you need a salad, this cole slaw would go well.

Alaska cole slaw
5 cups shredded cabbage **I buy the preshredded plain, no carrots, etc at WalMart
1/2 cups almond slivers, toasted
1 1/2 cups dried cranberries
1/2 cup celery, diced**don't use
1/4 cup chopped green onions, white and green parts
1/2 cups chopped green bell pepper **don't use

This is the creamy dressing I used and it works great:

mix 1/2 c mayo with 2 Tbl cider vinegar **I used white wine vinegar, 2 tsp sugar, salt and pepper to taste Pour over coleslaw right before serving and toss JUST TO COAT

Combine cabbage, almonds, cranberries, celery, green onions, and green pepper in a large plastic bowl with a snap-on lid.
Combine all dressing ingredients, adding salt and pepper to taste, and refrigerate until ready to serve. Pour dressing over slaw just before serving. Stir well

And if you think you need rolls, Sister Shuberts yeast rolls are always delicious!

I like the idea of a Greek salad.

1 head romaine lettuce- rinsed, dried and chopped
1 red onion, thinly sliced
1 (6 ounce) can pitted black olives
1 green bell pepper, chopped
1 red bell pepper, chopped
2 large tomatoes, chopped
1 cucumber, sliced
1 cup crumbled feta cheese
6 tablespoons olive oil
1 teaspoon dried oregano
1 lemon, juiced
ground black pepper to taste

Directions

In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese.
Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

Glenda, that slaw sounds wonderful and I will clip it for the future and sushipup you just suggested what I had decided on. I think I will serve the feta cheese on the side, though. I know some don't care for it. The some would be my DH.lol

Yum, I love Greek salad. I often just throw some red wine vinegar in some Italian dressing.

I vote for one of the green salads. Greek would be yummy.
Since you are serving potato and corn, you don't really need to have bread, too. What time did you say we should be there?
