need help for menu for 30 men on Weds. night

My dh is in a member/guest golf tournament that begins on Thursday. He is kicking it off with a dinner party for 30 men. I'm making gumbo (serves about that many) over rice and I thought we would suppliment (ie, stretch) it with grilled sausage on hoagie rolls. I need to know how many sausages I should buy (I am wording this with care). Any one have any idea if I can make rice in a slow cooker or should I make it in a great big pot and store it in a crockpot? Haven't given any ideas to dessert or apps? I won't be here, except to set it up and then skeedaddle, so dessert should be very simple.

I wouldn't even think of rice in a slow cooker...I would cook it in a pot in the usualw ay....but I don't know the best way to keep it hot.
Appetziers? Chips and dip, spinach brownies, cheese and crackers, shrimp, little smokies in BBQ sauce...
I am trying to think of easy stuff than goes over well with men.
Dessert? Pie! Or brownies.

I was hoping you would check in. I think I could keep the rice warm in a crockpot on low with a wet tea towel between the pot and the lid. That is how I keep mashed potatoes warm for a long time on thanksgiving and they tasted completely fresh even after on warm for a while.

Good ideas for apps.

If you like the idea of a grain salad, there is one I make that I have actually written down. It is a popular side dish as it is pretty, fairly low-fat but well flavored, and it is substantial enough to be a meal for a vegetarian if any are attending. I have also made it with different roasted vegetables, depending on the season. It's a nice "make ahead" side dish because the flavors blend nicely as it sits and it can be served warm or at room temp. For your purposes, I'd serve it room temp and make it all up ready to go and just toss the dressing in an hour or so before serving. Mixed grain salad with roasted butternut squash A mixture of grainstry to use at least 3 kinds, of different colors. I use varying combinations of basmati rice, long grain brown rice*, barley, bulgar (tabuleh), quinoa, wild rice, millet, and sometimes, to lighten the texture, I add couscous. Onions, celery, carrots-chopped Green peas (frozen are fineÂif you have fresh, blanch them first) Roasted butternut squash cubes** Cranberry vinaigrette*** Chopped parsley & green onions Chopped, toasted nuts (I like pecans or hazelnuts) Cook grain selections separately, according to directions, but remember that they will absorb dressing and soften, so a bit al dente is better than over cooked. Saute onions, celery, carrots until tender, but not too soft. Toss with grains, parsley, green onions and vinaigrette. Gently fold butternut squash cubes in. *Short grain rices are too sticky for this dish, in my opinion. **Roasted butternut squash. Peel squash. Cut into Â½ inch cubes. toss in olive oil and roast in the oven, checking frequently until just cooked, but not mushy. If it doesnÂt brown at all, pass under a broiler after cooking just to brown the edges a bit. ***Cranberry vinaigrette. Make a basic vinaigrette with olive oil, red wine or champagne vinegar, garlic & onion powders, salt & pepper. Put the vinaigrette in a blender with about 3/4 Tablespoon dried cranberries per cup vinaigrette, and puree until smooth. Then, add about a quarter cup of dried cranberries for every cup vinaigrette, and pulse blender until cranberries are chopped, but not pureed. Let vinaigrette sit over night. Before tossing the grain salad in the dressing, taste the vinaigrette for sweetness and add a bit of sugar if need be. It shouldnÂt be too tart or too sweet. Sprinkle the toasted chopped nuts on top and garnish with sprigs of parsley, green onion tassels or carrot curls and a few whole dried cranberries. For appetizers, a bowl of yogurt "cheese" balls with a plate of nice crackers or crouton toasts is always popular and seems a bit fancy without breaking the budget. Yogurt Cheese in Olive Oil w/Herbs Make a batch of yogurt. Line a colander or sieve with muslin or a clean, lint free dishcloth. Pour the yogurt in, fold the cloth over the top of the yogurt & put a weight on top. I use a plastic bowl with a tight fitting lid, filled with water. Put the colander or sieve in the sink or over a bowl to catch the liquid (whey) as it drains. The timing differs depending on how liquid the yogurt was to start with and how heavy the weight is, but leave it until the yogurt has become stiff, like cold cream cheese. It could be a couple of hours, or maybe 5 or 6...just check once in a while. Then, roll the "cheese" into inch-round balls. Put them in a sterilized jar, sprinkling each layer with your choice of herbs & spices. When the jar is full, pour in olive oil until the "cheese" is covered. Store in the fridge. My original recipe said it would keep for 3 weeks, but I have noted that it keeps much longer than that as long as all the balls remain covered with oil. This is a wonderful spread on good quality crackers, baguette slices or toast points...make sure to drizzle a bit of the herb flavored oil on each serving. I like to use fresh marjoram, rosemary and chives from my garden, with the addition of some salt and chili pepper flakes. But really, follow your tastes, it's a very forgiving recipe.

kkny- I do think your point regarding how long SM have been in the picture is valid. My mother remarried when I was 35 and frankly he is my mother's husband not my stepfather. I had a father who died- he respects that but he is my mother's husband and I show him the same respect I show her. A girlfriend,boyfriend is another story still. My SSs have been living with me half their life since they were 4 and 5. I don't expect to be treated like their mom at their wedding but I do expect to be treated like their father's wife and a member of the family. In my immediate family to do anything less would be considered a lack of social grace and disrespectful. I will gladly stand with their father whereever they choose to seat us but I will not be hidden in the back alone just to make BM feel better unless of course I am standing back there with her husband (I would agree to that compromise). It will be a very difficult event as my work involves hosting parties and speaking with people all day and BM is very shy and uncomfortable in social situations. So there I will be in another difficult situation where at my children's wedding I will go all out making people feel comfortable, arranging plans, etc and in SSs wedding I will have to sit on my hands and bit my tongue watching BM struggle. IF I'm too nice I'm trying to take over, if I do nothing I don't want to help. Until you are a SM- you can't even imagine how difficult it is- I sure didn't think it would be this hard.

First, I'd like to thank everyone that has posted comments and suggestions so far. I appreciate them all, and they gave me a lot to think about. Now I think I finally figured it out! After spending an afternoon at the cabinet display with my tape measure and playing with cardboard mock ups for the last few weeks, I think I have a layout that may be it! Thought process below, but here it is, note that I switched over to 10 square/inch paper for more accuracy at this point. 1 square = 3 inches. Starting at the wall next to the range, 12 inches is the smallest cabinet that had a usable drawer in it, and the pull outs likely won't need a spacer by the wall. Range (self explanatory). 30 inch drawers, will provide soooo much more prep space than we have now, even though mot ideal, and was the biggest size that allows the other elements to work. Will hold kife block/utensils, pots and pans. 33 inch sink, garbage disposal under the small side along with most of the plumbing due to the pipe set up, small recycling pull out under the right side. DW. 18 inch drawer, the smallest size I though would be useful for general storage (misc. Items, wraps/baggies, Tupperware, etc). Fridge with full depth uppers. As much as I would Ike to put it next to the utility closet, it is just too much with all the doors in that tiny place. 24 inch pantry, the smallest size I thought would work. I decided against just a pull out because I need some storage below for larger items, and in the end I'm not sure I would like pulling the whole thing out each time. Then the short wall. 30 inch drawers that open toward the DW for silverware and dishes. This also makes the counter space extra deep since the run will be 30 inches deep. Then a mixer lift, then the Advantium. So here are my concerns/questions. - will having the counter overhang and drawer hardware protrude into the aisle facing the DW be a problem or look odd? I really have no idea. - with both the DW and bottom drawer open, the drawer will not be able to open fully by about 2 inches. I don't anticipate this being an issue but please correct me if I'm wrong. I'm still working out what to do above/below the Advantium, and for the pantry. I need to take an inventory and assign items homes to figure those last bits out. I also may be able to get a larger garden window at a good discount, so I will be exploring that with the GC next week when he comes. I have quite a list of questions for him! Any and all additional comments and suggestions are welcome and very much appreciated!

Thank you all so much for the VERY good and VERY helpful advice! OK, the spectators are out. I'm pretty paranoid about my green turquoise jewelry and will probably either wear it just to the wedding and have DD hand carry it home again while DH & I head down to Cancun, or wear one of the others. I've been running errands in town - and cleaning for our house & dog sitter all day today, as we leave tomorrow to move DD up to grad school in Colorado Springs. First we need to pack up the big U-Haul truck, DD's car and our Sierra pick-up. Then it's a 5 1/2 hour drive up there. We'll move her in Friday night, all day Saturday, and head home Sunday. So, please forgive me if I don't reply back here again until Monday. I've read every suggestion and am definitely using them to pack for Austin & Cancun starting Monday, so I'll be back then. Keep us in your thoughts and prayers. This is going to be a marathon moving event! Oh, and did I mention that her new apartment in on the 3rd (top) floor and there are no elevators? I may make my 10-pound weight loss after all (LOL)!

I think your rice warming plan should work well. For apps, you could do a variety of quesadillas, egg rolls, mini tarts, spinach dip, bowls of mixed nuts, crab cakes, deviled eggs...

I'd keep dessert simple. A fruit tray and a brownie/cookies tray.

my dinner party is taking on a theme of its own...I am serving, spiced nuts, mini wieners wrapped in pizza dough, spinach balls (a variation of spinach brownies), gumbo and sausage.
Hmm, nuts, weiners, balls and sausage. Can you tell this is a men's party?

All you need is fish tacos and you're set

To keep the rice hot, would it work to have a disposable steam tray, with a couple of candles or bunsen burners? Do you have Smart and Final or restaurant supply place nearby? I'm thinking a crockpot might not be big enough for 30.

I think gumbo and sausages would be two main courses which would compete with each other, especially if sausage is an ingredient in the gumbo. Better to have one or the other, not both, and supplement with a few appetizer type items like those mentioned above.

Since you have used the crock pot for keeping mashed potatoes, I think it would work just as well for the rice.

Better yet, see if you can borrow some automatic rice cookers. That would make cooking the rice simple and rice cookers normally have a keep warm feature. You need a rice cooker anyway, so buy one and borrow two more to give you enough capacity. :-)

BTW, when you buy a rice cooker, don't get one larger than 5 or 6 cups. I had a 10 cup cooker and only filled it to capacity once. It took forever to heat up with that load.

Think I'll pass on the fish tacos :) My gumbo does not have sausage in it. It has crab, chicken, and shrimp (plus okra,celery, onions and peppers) I thought the sausage would compliment it as it could go in there, but isn't.

I think with several appetizers you don't need to do both main dishes. I also wouldn't worry about the rice temp. I think room temp rice is fine and if not the hot gumbo will heat it enough.
I vote for brownies and fruit maybe watermelon for dessert.

New to the forum here...my culinary training says stay away from the room temp rice....breeding ground for food borne illness. Most home kitchens are equipped to store prepared food. Plan cooking so your rice comes off the burner just before you leave & the guys start eating. No holding needed. Menu sounds good. I take it that you are not sure if you have enough gumbo...I would buy 15 of the sausage & hoagie rolls & cut them in half...serve them with some spicey mustard & some sauteed green bell peppers & onions. Apps & desserts suggested by Linda C sound good. BTW..I am a guy. :)

I think I am in good shape for the party (clearly a reference to food prep). The gumbo is made and in the fridge. It has to be heated up and the shrimp and crab have to be added at the last moment. I've partially cooked the sausage so they can finish on the grill. If I didn't do that, my husband would char the heck out of them. I don't know how much gumbo my recipe makes, but to give you an idea, the serving bowl is 11 inches tall by about 11 inches wide. It should feed 25. Thus the 30 sausages. Hearty rolls, mustard... we should be all set. The spiced nuts came out great (thanks AnnT) and the pigs in blankets are waiting in the fridge. Brownies are done and a tray of oatmeal raisinet cookies are cooling. The rice will be last minute as it looks like I may have to hang around afterall (I am not complaining!) Tomorrow all I have to do is some last minute shopping for incidentals and maybe another batch of cookies.

(in the thick of the party...) the gumbo was a huge home run. I've been making this recipe for at least 20 years and everyone raved about it. Even those who said they don't like things like this. I parboiled the sausage earlier today and all my dh had to do was to brown them on the grill. They came out great. The rice in the crockpot was very successful. I undercooked it just a bit and let it finish in the crockpot. Easy and efficient.
Now everyone is hanging out drinking (we have a keg). I sought refuge here.
