Comments (7)This is a new addition to my recipe file. Pumpkin Maple Bread Recipe #177225 (The recipe online describes this as making one loaf. The amount given make two. I have cut the ingredients in half and made one loaf.) by Pastryismybiz 1¾ hours : 20 min prep SERVES 6 3 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1 1/2 teaspoons salt 1 teaspoon cinnamon 1/2 teaspoon allspice 2 eggs 1 (16 ounce) can pumpkin 1 cup light brown sugar, firmly packed 1/2 cup maple syrup 1/2 cup vegetable oil 1/2 cup golden raisins 1/2 cup pecans, chopped Preheat oven to 325°F. Grease a 9x5x3-inch loaf pan. Dust with flour. Set aside. Sift flour, baking powder, baking soda, salt, cinnamon and allspice in large bowl. Mix with whisk. Beat eggs with pumpkin, brown sugar, maple syrup, and oil in a medium bowl. Stir egg mixture into flour mixture until just moistened. Gently fold in raisins and nuts. Spoon batter evenly into prepared pans. Bake 1 hour and 15 minutes,or until toothpick test indicates done. Comments (1)This was my mom's recipe. In those days flour was sifted before measuring and as I recall scant meant about 1 Tb. less than level with the top of the measuring cup. She was a stickler for preciseness so the 300 F. baking temp. is correct. Date Bread 1 c. boiling water 1 tsp. soda 1 c. dates butter, size of a walnut 1 c. sugar 1 egg scant 1 1/2 c. flour 1 c. chopped walnuts Preheat oven to 300 degrees; Grease 5x9 loaf pan. Here's a similar variation baked in cans but am sure 2 loaf pans 9" X 5" would work filled half full and baked till loaves starts to pull away from the sides of the pan. I want to try Gigi's idea of using coffee instead of water next time. I've made this recipe for over forty years. Very easy and delicious. Date Nut Bread Generously grease 6 cans, (14 to 15 ounce veggie size) Sprinkle 2 teaspoons baking soda over 1 pound of chopped dates. Pour 2 cups boiling water over dates and let cool. Cream 2 cups sugar with 1/2 cup butter Add 2 eggs 1 teaspoon vanilla 1/2 teaspoon salt Mix well Stir in 4 cups flour alternately with date mixture Do not over beat. Fold in 1 cup nuts, chopped coarsely or just halved. Fill 6 well greased cans half full. Bake at 325 degrees for about 1 hour. Cool in cans for 10 minutes then remove from cans till cool. Comments (11)Grainlady, here the ATT U-verse isn't available, and neither is cable/etc. My choices were dial up or satellite. A new company came in and now I have a big antenna on top of my house and my internet comes to me via radio waves somehow. It seem to work far better than ATT did at the White Cloud house, so I'm happy with that. My Windows 10, though, it's a real piece of carp. I have two son-in-laws who are computer guys for a living, one is the head of the IT department for a large company and the other one writes code and programs out in California. So I know my computer isn't the problem. Windows 10 is worse every time there's an upgrade, my keyboard locks up and won't let me type, the app store has disappeared, won't reload and I can't do many of things I used to do with Windows 7 because the apps aren't available and everything runs on the "apps".
