LOOKING for: Recipe for Date Nut Bread

We really enjoy Date Nut Bread and can never find it in the supermarket any more. The kind we used to buy and enjoy was very dark and moist. I have tried a number of recipes trying to find something close but everything we have tried has been light colored and not very moist. If someone has a recipe that might fit that description, I would LOVE it!

i don't remember where or who i got this recipe from, but it's pretty good. hope you like it.

Date-Nut Bread

3/4 cup chopped walnuts
1 cup dates cut up
1/2 T baking soda
1/2 tsp salt
3 T shortening
3/4 cup boiling water
2 LG eggs
1 tsp vanilla
1 cup sugar
1 1/2 cups flour

Mix nuts, dates, baking soda & salt w/ fork. Add shortening & water, then let stand for about 20 minutes.
Beat eggs w/ fork & add vanilla, sugar & flour. Mix w/ date mixture until just blended.
Pour into greased 9x5-inch loaf pan & bake at 350* F for 60 to 70 minutes or until done.
Cool in pan for at least 10 minutes before removing. Cool overnight before slicing.

Looks like it has all the right ingredients. If it is anything like my banana nut bread recipe, I found that the step of cooling it in the pan..sometimes instead, I wrap it in aluminum foil right away and it holds the moisture in. Maybe cooling it in the pan does the same thing. I have a feeling looking at the list of ingredients, that the bread turns out light colored, would I be correct? I can't seem to find the missing ingredient that makes it dark. I am wondering if it might be molasses? But that would give it a pretty strong taste maybe? Hmm...maybe a different dark flour? Your recipe is nice because it has less fat and less sugar then some I have seen. Always a plus!

Brownies, most cakes, quick breads & chocolate chip cookies can all be made without nuts. For the rest, you'd just have to use your own judgment. Mexican wedding cookies wouldn't work as well as pecan pies (obviously, LOL) wouldn't work either.

Teresa, this bread is so good even after making major screw ups. Decided to try it in the bread machine on dough cycle with baking in the oven. Just as I was preparing to drain the fruit and add it, I found out a person I'd contacted about getting some fertile chicken eggs from to set under my broody hen had six for me. Out of show quality roosters and for free. And he said come and get them now. The bell rang for the addition of the drained fruit and nuts. I knew I hadn't drained the fruit enough, but I was in a hurry. Took off and halfway to my destination realized the dough cycle would be over a good while before I'd get back home. Sorry, but I really wanted those special eggs. The guy showed me all his show birds and got a lot of info from him. By the time I got back home I think the dough cycle had been done for two hours. I had a very wet dough that had risen in the pan then collapsed. Oh well, try to save it. Dumped it out on a liberally floured surface and kneaded in more flour, put it in the pans and let it rise. It did rise a little over the top of the pans.Tried my best and stuck it in the oven. It came out at 25 minutes completely done and beautiful except I didn't get the fruit and nuts distributed well. I've already eaten nearly half a loaf. Love it! Next time I think I'll add more cinnamon, follow the recipe on draining the fruit and not running out in the middle of it to get fertile eggs. Madonna

This was my mom's recipe. In those days flour was sifted before measuring and as I recall scant meant about 1 Tb. less than level with the top of the measuring cup. She was a stickler for preciseness so the 300 F. baking temp. is correct. Date Bread 1 c. boiling water 1 tsp. soda 1 c. dates butter, size of a walnut 1 c. sugar 1 egg scant 1 1/2 c. flour 1 c. chopped walnuts Preheat oven to 300 degrees; Grease 5x9 loaf pan. Combine water, soda & dates in flat bottom bowl; set aside. Mix other ingredients in order. Mash dates in water; add to dough. Bake for 1 hour.

I eat a piece of this 1/2 hour before a meal, and I do eat less, and am not hungry afterwards. It works better for some people than others. sorry not to e-mail this, but my e-mail hasn't been working right. HUNZA DIET BREAD RECIPE Hunza Diet Bread is a delicious, dense, chewy bread that's very nutritious and is almost impervious to spoilage. The following recipe makes a huge batch of approximately 60 (sixty) 2 inch squares, high in protein, vitamins and minerals. Keeps weeks at room temperature, even longer in the fridge and indefinitely in the freezer. The recipe for this wonderful bread is as follows: - * 4 cups of water * 3.5 (three & one half) to 4 pounds of natural buckwheat or millet flour * 1.5 (one & one half) cups of canola oil * 1.5 (one & one half) cups of natural unrefined sugar * 16 ounces of honey * 16 ounces of molasses * 4 ounces of powdered soya milk (half cup) * 1 teaspoon sea salt * 1 teaspoon cinnamon * 1 teaspoon ground nutmeg * 2 teaspoons baking powder (non aluminium) Hunza Diet Bread has a taste that is very satisfying and chewy all on its own, but you may also add if required, apricots, raisins, chopped walnuts, almonds, sliced dates to the above ingredients. Mix ingredients. Grease and lightly flour cooking pan(s). Ideally use baking trays with about 1 inch high sides. Pour batter in pan(s) half an inch thick over the base. Bake at about 300 degrees farenheit (150 C.) for 1 hour. After cooking, dry the bread in the oven for two (2) hours at a very low heat - 90 degrees farenheit (50 C). After it is cooled tip out and cut into approx 2 inch x 2 inch squares. Store it wrapped in cloth in a container. You may need to repeat the baking depending on the size of your baking pan, and oven, until all the mixture has been used. Hunza Diet Bread is made from natural buckwheat or millet flour. It is rich in phosphorous, potassium, iron, calcium, manganese and other minerals, as nothing has been destroyed in the preparation from the wheat. Thus it contains the essential nourishment of the grain. This is why you must ONLY use natural buckwheat or millet flour to make your own Hunza Diet Bread..... Good luck and good health .. bon appetite :-) Suggestions to lose weight with HUNZA DIET BREAD There are many ways to do it. This is another benefit. It's flexible. Here are some typical plans. Each piece of bread is thinly spread with butter for a total of approximately 100 calories. Plan A: Eat 1 piece every 5 hours of the 16 hours you're awake. That's 3 pieces which total 300 calories. This is the fastest way to lose weight I know of. It works faster than any high protein diet. Why? You have more energy and burn more calories. Second, the high fiber bread keeps your digestive system regular. Third, your body stays healthy. A healthy body means a properly functioning metabolic system. Plan B: Really gorge yourself with the bread. Two pieces every four hours for a total of 8 pieces but only 800 calories. You'll feel full all day. In fact, I doubt many people could eat this much of the bread. Plan C: Eat a piece in the morning for breakfast and a piece 3 hours before your dinner and you will eat a great deal less. Plan D: Eat a piece of HUNZA DIET BREAD, 10 minutes before you eat your regular meal. When we do this we eat only a fraction, such as 1/4 of what we would normally eat. If we wait longer than 10 minutes we don't want to eat at all. Plan E: Eat the bread at the end of meals that don't fill you up enough, such as low calorie meals. This is a perfect way to use the bread. You eat a low calorie meal, enjoy it, then eat a piece or two of bread to fill you up. Perfect! No suffering and no urge to snack. Plan F: Alternate Plan A, B, C, D. We recommend an alternation of the plans, but some people who just want to get the weight off as soon as possible will use Plan A exclusively.

This recipe is from my GrandmotherÂs Recipe box. I have made this bread for over 20 years now. A great change of pace from Banana Bread.

Date Nut Bread

Sprinkle 1 tsp baking soda over 2 cups chopped dates. Pour 1 cup boiling water over mixture and let cool.

While cooling, cream Â¼ lb butter and Â¾ cup brown sugar. Beat in 1 egg. Stir in date mixture.

Add 1 Â½ cups flour, Â¼ tsp salt, and Â½ cup chopped nuts (optional).

Pour into lightly greased and floured pans. (I spray the aluminum ones-no flour-3 1lb loaves)

Bake 50-60 minutes at 325Âº.

Hello...

lil...I tried your recipe last weekend. For some reason the bread was cooked all the way through in 10 minutes less time than the recipe suggested. It tastes good but it was a little dry and I am not sure if that was because it was overcooked. I have an electric stove and I don't think that it is normally running too hot. I added brazil nuts to the mix instead of walnuts and I am enjoying it for breakfast. I will try it again and take it out sooner. :-)

I have been making this Date Nut Bread since I received the recipe from a friend in 1965 - the year we were married! I cannot imagine that there is one more moist or dense or delicious! Last week I made four loaves to have around for our Thanksgiving weekend guests. Even our youngest grandchildren love it!

DATE NUT BREAD

2 cups chopped dates
1 cup strong hot coffee
1 tsp. baking soda
1/2 cup butter
1 cup sugar
2 eggs
2 cups flour
1 tsp baking powder
1/2 cup chopped walnuts
1 tsp vanilla
1 tsp nutmeg
1/2 of a 27-ounce jar mincemeat

Soak dates in hot coffee and baking soda until cool. Cream butter, sugar, and eggs. Add flour and baking powder. Stir in date mixture and remaining ingredients. Bake in large greased loaf pan for 1 hour at 350* or until done.

A double recipe makes 3 10-inch loaves. Makes great gifts!

It seems we all have fond memories of this bread. Here's a similar variation baked in cans but am sure 2 loaf pans 9" X 5" would work filled half full and baked till loaves starts to pull away from the sides of the pan. I want to try Gigi's idea of using coffee instead of water next time. I've made this recipe for over forty years. Very easy and delicious.

Date Nut Bread

Generously grease 6 cans, (14 to 15 ounce veggie size)

Sprinkle

2 teaspoons baking soda over

1 pound of chopped dates.

Pour

2 cups boiling water over dates and let cool.

Cream

2 cups sugar with

1/2 cup butter

Add

2 eggs

1 teaspoon vanilla

1/2 teaspoon salt

Mix well

Stir in

4 cups flour alternately with date mixture

Do not over beat.

Fold in

1 cup nuts, chopped coarsely or just halved.

Fill 6 well greased cans half full.

Bake at 325 degrees for about 1 hour.

Cool in cans for 10 minutes then remove from cans till cool.

Store in cans.

I like it chilled, sliced and spread with cream cheese.

Well...more recipes to try! I have stalled with my recipe trying since we have so much food leftover from Thanksgiving that is just about finishing up now. I will have to try one of these recipes for Christmas.

Gigi...coffee and mincemeat...I really want to try that one too. I have never had mincemeat so it will be an adventure.

kathy...about the only cans we buy are whole tomatoes for sauce. I imagine those would work? Otherwise, I will try them in a loaf pan and let you know how it works out.

It might take me awhile to try out all these recipes. Maybe I could try them for gifts for the holidays?
