Tip: Cucumber storage!

Finally....finally!!!...I have hit on a method to keep a cucumber stored in the fridge longer than half a day! So, I thought I would share it.

First, I buy the seedless English cucumbers wrapped in plastic. Yes, I know they are expensive, but at least I'm not throwing out slimy, unusable cucumbers. Keep the plastic wrapper on! Yes! Cut off only enough of the cucumber that you need for that salad for two people or a small amount of dill sauce for salmon or a cucumber sandwich for your lunch. Take off the plastic wrap and wipe off the cuke with a damp cloth, then chop or slice. If you plan to use the entire cucumber, then go ahead and take off all the plastic.

Now, take a paper towel and wrap it around the bare cut end of the cucumber. I secure the paper towel with a rubber band, you can do this or not. The next time you take the cuke out of the fridge to add it to a salad, just cut off a thin sliver of the slightly dried end that has been next to the paper towel. Then cut off the portion of the cucumber that you need.

I'm working on a cuke that is a week old and almost gone. I may be able to get 1 or 2 more salads out of it after I put some chopped cucumber in the Claremont Salad I made this morning.
