Question about Lemon Meringue Pie

How do I store my Lemon Meringue pie overnight that I just made this morning. I have read that you shouldn't leave it out because of the egg whites in the Meringue. Then another site I read said that you shouldn't put it in the refrigerator because it will "weep" and the crust will get soggy. So which was is the right way.

I know you will know the answer out there. Thanks

Don't refrigerate it.....do you refrigerate marshmallows? You should have baked that meringue long enough to pasteurize the whites.

I finally got around to trying my idea. I didn't bother with making a crust, too hot to turn the oven on, so I decided to double the recipe and call it a pudding...lol I used an 8 oz can of crushed pineapple, 1 1/4 C orange juice and a cup of apricot nectar. Since I didn't need meringue I used whole eggs (beat well). This stuff is very tasty and needs to be chilled. I love it! Sitting here eating the rest tonight while posting this. Only thing I might try when I make the next batch is to add a little grated orange rind, just for stronger flavor. No whip cream on hand or I would be having some on this right now. Nancy

Not for my DH! Doesn't like much of anything citrus. He'll choose Apple, Peach, Berry, Chocolate or nothing over lemon. I love lemon anything (as long as it's well done), however, I don't like meringue so often skip the pie or scrape it off. I'd rather have real whipped cream on mine! Hmmm.....I have some lemons and haven't made my EX's grandmother's Lemon Bars in a long, long time!! I may have to dig out the recipe! They were so good. She never used a recipe for anything so when I was trying to figure it out, I had to stand in the kitchen with her and slow her down to guess/estimate the quantities of the ingredients! You're not cooking it enough? Your using the wrong measuring cup ( I have done that...grabbed the 1/3 cup measure rather than the half cup)....the moon is full? your mother in law put a curse on you? hard to say....I went through a period when I couldn't make a pop over pop for anything! Annie, I am all set to make this pie for tomorrow's dinner, but I am not sure about exactly how much to do tonight. You said, " unless you macerate the lemon slices for 24 hours, the pie turns out bitter." So, do I stop just after slicing and straining out the juice, or after boiling? Do they just sit out or should they be in the 'fridge? Mine will get a bit less than 24 hours at this point, but I guess that's better than 2 hours, right? I cannot wait to taste this pie. I've been salivating since you posted the pics and description. AND this will be my first time to abandon my standard BH&G cookbook pie crust and try Nathan's Never Fail Pastry.

Don't cover it.....and I hope your meringue went to the edges and touched the crust, or it will shrink.
When I make a meringue topped pie I put the meringue on a few hours before serving.

Don't worry, I'll be right there to test it for you, and you won't worry about having to store it at all. (grin)

I'm with LindaC, I wouldn't refrigerate it, or cover it, especially if it's to be served tomorrow.

Yeah, I know, the food safety people are going to be all over me about this, with the eggs and milk in the filling, egg whites in the meringue, but I still wouldn't refrigerate it.
