Menu Assistance, Please!!

My sister-in-law and her two babies are moving from CT to NM next week to be closer to her parents... and since they are moving themselves, she has a bunch of people coming in next Sunday to help pack for the movers.

I volunteered to feed the crew. And I'd like some ideas!!

Here's what I know that might help:

  • She lives 90 minutes from me, but I can use her kitchen to cook, or reheat, if needed (I'll probably need to bring my own cookware, though)

  • I don't know how many people are coming
  • One person has a gluten intolerance, but I won't plan the menu around him... I just want to make sure there is something he can eat
  • I don't think there are any other dietary restrictions, but I don't know...
  • It's still pretty cold here, so I was thinking something warm would be nice...
  • The dishes may be packed so I plan to bring plastic or paper that we can use

So I was thinking...

  • a stock pot of chicken chili that I could reheat when I get there?
  • Beef Chili with optional fritos, cheddar cheese, sour cream and chopped onions?
  • Both chilis, and a green salad?
  • A big batch of chicken salad and choices of bread?
  • deli meats and bread and cheese for make-your-own sandwiches with a green salad as a side with blue cheese and dried cranberries or cherries?
  • A noodle casserole of some kind?

What do you think?

(when I know the head count, I'll let you know!!)
