cream puffs--help, please

I have tried for years to make a decent cream puff, but I have never been successful at the shells. I tried again this morning and suffered another failure. Now, I have some delicious bavarian cream filling and no puffs.

I use the typical mixture of 1 c. water, 1 c. flour, 1/2 c. butter, and 4 eggs. Bake at 400 for 25 min. They puff nicely and turn a beautiful brown, but they fall as soon as I take them from the oven.

Does anyone have a recipe for the shells that I can try?

Or a suggestion for what I am doing wrong?

How big are you making them? I make mine about golf ball sized and they go for 20 - 25 minutes. If yours are larger, maybe they just need to go a little longer so they hold their shape. I like mine to be almost past golden brown but certainly not burnt.

"However, if they are removed from the oven too soon, the structure of the shell has not solidified, and it will collapse. However, when you think they are done take one out of the oven and check it by breaking open and checking the interior walls. If wet and eggy, return to the oven as necessary. Remove when done and cool on a wire rack."

Turn off oven and let pan sit on open door to cool slowly so they do not collapse.

Thanks for your nice comments! We actually used BM Advance paint (just had the store use the formula for the BM Aura color Paper Mache) on the cabinets because we wanted the look and durability of an oil paint but without the yellowing and the smell! The smell would go away in a few days of course, so it was the yellowing that was more of a concern (especially with a whitish color - I would not be happy if the color I spent so long picking out changed to a yellowish color!). We had the cupboards painted with a sprayer, and the painters said it went on really well, and we're happy with the finish - nice and smooth and with a really pretty sheen (not too shiny, not too flat). It was more pricey - but not Farrow and Ball pricey, and we figured for the small extra amount it was worth the investment. The trim will be stained to match the cabinets. The crown molding is the same as the cabinets. The backsplash is still up in the air - but the bottom part (the 4" or so wood piece) will most likely be painted the same as the cabinets, and the beadboard will be slightly darker (maybe same as the walls, maybe a little lighter). Best of luck!! I think it's great that you're painting boards...I would do the biggest boards you can - that seemed to make a difference for us (it's hard to tell on a little piece of wood).

That tagliatelle does look good, doesn’t it? And easy! And regarding the use of mint in a savory recipe, I made a new-to-me chicken and dumplings over Christmas which called for mint, and it was quite tasty. I can’t remember if the mint went in the chicken stock or the dumplings, but it didn’t taste minty.

If you like blue, you might try using a blue gray finish on your island cabinets only? It seems like so many try to attain a finished kitchen that reminds one of the old sienna color photographs. No one really wants to live in shades of brown and gray all over the world. That can be monotonous. I really like the backsplash slocoja shared in her photo. I bit of shiney is really pretty with the silver chrome appliances, but maybe limit it to one or 2 lines thru the center of your backsplash, and than use the choice for your countertops in the backsplash. I think you might enjoy that more long term. Especially since you have so many different heights of window frames, cabinet trim, lines of molded cabinet doors and vertical lines in your windows... Do a couple of lines of your silver, or even a dusty blue or blue gray even if you can find it(goes with any other color you can think of for the next 3 decades, like blue jeans do? LOL) if you like that amongst the backsplash which matches your counter top, and let your island be the color you have planned in your picture if so... That way your eyes won't tire of all the movement in the kitchen, so many angles on your backsplash, the reflection etc.. I would do it at the height that splits your outlets in half, one to 3 lines of horizontal mini tiles. Very pretty!!

I’m interested in Paint colours. I noticed the green accent pillow on your sofa... How do you feel about green on your walls and ceiling? Edited to add: I also think a rug would be an awesome addition to the living room, like Z mentioned. Size it so that all of your furniture sits on it -- front legs minimum, back legs ideally.

When you're mixing the ingredients in the pot you have to make sure to mix long enough to dry the batter a bit. I continously mix for 4 or 5 minutes before removing from heat.

I've never had a problem.

I agree with the above help. Mix well..you've made it if you go a few more minutes past your arm falling off. LOL
And turn off the oven and open the door to let dry out a bit more with no heat. I live in a mostly damp climate. Those are my tricks too.

I make cream puffs A LOT, :)

If they fall, you are not baking them long enough - or you live in an extremely humid area.

Here is my method:

Boil 1 cup water with 1 stick real butter. Add 1 cup all purpose unbleached flour and stir in until it forms a ball - I use a silicone heat safe spatula. I mash the ball around a bit to make sure all the flour is incorporated.

Remove from heat for 10 minutes (set a timer!)

I then toss the mixture into my KitchenAid with the paddle attached. I beat one egg in at a time, scrapping down the bowl if needed. Beat each egg in well - 4 eggs in all.

I heat my oven to 400Âº and line my baking sheet with parchment paper.

I use a large size cookie scoop (just a bit smaller than an Ice cream scoop) to portion out the dough. I usually get around 15 at that size.

I also like to make them in a smaller size using a regular sized cookie scoop. I can get almost 40 at that size.

I usually bake them at least 30 minutes. Maybe a bit longer for the large size.

Every oven varies - you cannot bake them for an exact time - go off of color and feel.

You want them a deep golden brown.
