Apricot Jam Makers!

Hi all
I love a good apricot jam so I thought I would have a go.
3kgs of fruit on the stove... I have a taste an there hard hard bits in it.
I am assuming they are the stringy bits from the seeds.

Does anyone else have this problem?
How can I fix this... ?

I don't suppose you have a food mill do you? You could run it through the food mill and then make something akin to apricot butter with the pulp. If you don't have a food mill, you can get the same effect with a strainer and something to push the jam through, but that would be a pain and kind of difficult to say the least.

I had a similar problem a couple of weeks ago when I was making pink applesauce. To get the pink sauce you have to leave the peel in when you cook up the sauce and I didn't have my food mill with me so I thought I could use the strainer method. I gave up and just kinda sifted through the cooled sauce and picked out whatever bits I could find.

I don't have a food mill... but will attach it with a stick blender tonight... Thanks ipink.

Making Apricot Jam from Dried

I've used dried apricots in a Winter Conserve and also in a double apricot butter with a mixture of fresh and dried apricots for more flavor. Some years it doesn't matter if you have fresh apricots or not because the flavor may not be sufficiently developed to be worth making into jam. The conserve was a combination of dried apricots, orange segments and grated peel, orange and lemon juices, golden raisins, crushed pineapple and toasted almonds. It was very rich and very good. I've not found sulphured apricots a problem in preserving. Obviously there's an aesthetic component as the non-sulphured tend to brown, but otherwise non-sulphured would also work well. For my taste Turkish apricots work better than California when using dried fruit for preserves. The Turkish I used were mild and sweet while the California tended to be mouth-puckeringly sharp. Carol

You don't even have to scrape it off. As Dave said, it's fine to eat. Of course, if you're serving it to company then you would want to scrape it. And, of course, if you were planning to gift, the appearance would be disappointing. This kind of browning, whether it's just the top layer or the entire jar over time, is also a function of exposure to light. Some fruit preserves are very susceptible to color changes - apricots, peaches, strawberries come to mind. A bit of ascorbic acid stirred into the jam before jarring can help prevent or retard this kind of color change. Also, storing in a dark cupboard away from light slows browning or darkening. Carol

Hi Ken and Zabby, Notes to self: 1) re-read a recipe you only tried once before, donÂt go by memory; 2) re-check GardenWeb posts for replies just before you begin. Ken, if I had caught your reply before starting it would have clicked that the BBB says be careful not to puree. The food mill did in fact do a good job of producing a puree without skins. Too bad the recipe didnÂt call for a puree LOL. Zabby, glad yours set up relatively well. My batch is still quite runny. Good suggestion regarding use on pancakes! I was also thinking it would go well over vanilla ice cream. This year was my first time working with fresh local (ok, provincial) Apricots. One of our local Farmers Markets restricts membership to growers within 100 kilometers. This year they made one exception for a grower from Beamsville to sell fresh produce we just canÂt grow here like Apricots, Cherries, Plums etc. He drives 500 Km to and from Ottawa each weekend and his stand is always crowded. I know this isn't so helpful after the fact, but when I make apricot jam, I half them, then use a grapefruit spoon on the areas where it looks like the pit may have left some residue (the hard bits). Some varieties of apricot seem to be worse for this than others, but unfortunately I don't ever seem to keep track and just buy what's ripe.
