Sushi making do's and don'ts

Hubby and little man love sushi but I can never get that restaurant quality in my kitchen. My biggest complaint is that the nori tends to go soft if the sushi is not eaten immediately. I have a feeling that the soggy nori is a result of warm rice and/or the moisture in it. So, sushi experts, here are a few questions for ya:

1) Do you cool the rice completely before putting it on a sheet of nori? I don't particularly like rice completely cooled. Is warm rice a DON'T?

2) A video I saw suggested after adding mirin "fan the rice with one hand, and toss the rice with the other". I understand fanning the rice is to help moisture evaporate quickly. I find it very difficult to fan with one hand and toss the rice with the other. Why can't I just use an electric fan to do the job? Is electric fan a DO or a DON'T?

3) I notice the recipes also call for non-metal bowl for mixing the rice. Most of my mixing bowls are metal so I often end up using one of them. What's wrong with a metal bowl?

4) Do you have a favorite "recipe" for a sushi dipping sauce? I often use just soy sauce, sesame oil, and a pinch of chili powder. Little man can't handle hot spice so wasabi is out of the question.
