Any new summer recipes to share?

Have you ever had watermelon salad? Yesterday I was listening to Science Friday on NPR. The host was interviewing the author of Cooking for Geeks: Real Science, Great Hacks, and Good Food. He mentioned a watermelon salad with Feta cheese. Since I had all the ingredients I decided to give it a shot. It was surprisingly good. Very refreshing! Reminded me of a Greek salad. The watermelon acted like a sweetened cucumber. It's basically cubed watermelon, a little sweet onion, Feta cheese, and a dressing made with olive oil and vinegar (I used white balsamic). It called for mint, but I didn't have any and don't really care for it unless it's in ice cream. Anyway, tonight I'm going to play with the recipe and add some serrano pepper, cilantro, and lime juice.
