Grilled Tomato Sauce From Steven Raichlen Like soup, tomato sauce is one of the dishes you're least likely to think of grilling. But there is a powerful reason to try this sauce. Beyond the mere novelty factor, grilling imparts a gutsy smoke flavor to the sauce and heightens the natural sweetness of the vegetables. Don't take just my word for it. For thousands of years, Mexicans have grilled tomatoes, onions and peppers to make rich-tasting salsas. I have adapted the technique to make an exceptionally flavorful tomato sauce. Serve the sauce over grilled polenta, with any simple grilled fish, or with just about any cooked pasta. Makes about 3 1/2 cups. 5 lucious, ripe red tomatoes 2 - 2 1/4 pounds total, cut in half crosswise, and stem ends removed 1 medium size white onion, peeled and cut into quarters 1 rib celery 4 cloves garlic, peeled and skewered on a wooden toothpick or small bamboo skewer 3 Tbs. extra virgin olive oil 1 tsp. oregano 1/2 tsp. hot pepper flakes 1 bay leaf 6 fresh basil leaves coarse salt (Kosher or Sea salt) freshly ground black pepper 1/4 to 3/4 cup chicken stock, vegetable stock or water Cook the tomatoes, onions, celery and garlic in greased and preheated grill (George Foreman grill) until nicely browned. You may need to cook the vegetables in more than one batch. Transfer the grilled vegetables and let cool. Finely chop the onions, celery and garlic by hand or in a food processor. If using a food processor, run machine in spurts. Heat olive oil in large non-reactive sauce pan over medium heat. Add the chopped onion, celery and garlic, oregano, hot pepper flakes and bay leaf and cook until lightly browned, about 5 minutes. Coarsely puree tomatoes and juices with the basil in a food processor. Add the tomato mixture to the sauce pan, with the vegetables. Bring to a simmer over medium heat, then let sauce simmer gently until thick and richly flavored 8-10 minutes. Season with salt and black pepper to taste. The sauce should be thick but pourable. If it is too thick, add a little stock or water. Remove and discard the bay leaf. The sauce can be refrigerated, covered up to 4 days. Or frozen for up to 2 months. Let the sauce come to room temperature then reheat it in a non-reactive sauce pan over medium heat, stirring often.

Yes, I'd be concerned with cross contamination as well - just as sushipup explained so well. I use a different mill for gluten-free flours (grains/beans/seeds) to avoid cross contamination and never use gluten-containing grains in it. I was hired to make a selection of GF cookies for Christmas for a person who has celiac disease, as a surprise from her husband. I wouldn't mill flour containing gluten in the kitchen for a week prior to making the GF foods, and throughly wiped down every surface in the kitchen before making anything GF. I use stainless steel bowls, rather than plastic to make sure there's NOTHING to cross contaminate things. My mother (now deceased) had celiac disease and I did a lot of food prep. to stock her freezer for her BEFORE there were so many things so readily available. There are a number of ingredients used in gluten-free baking that you're better off having than trying to substitute. These additional ingredients help to reduce dryness, increase volume and tenderness, and enhance flavor in baked goods and other foods. I was challenged to come up with cookie recipes, for a sorghum mill outside of town, that were made with "common" ingredients. WHAT, no xanthan gum, potato starch, arrow root, guar gum....??? But I did it! Instead of potato starch or potato flour I've used dried potato flakes (used for instant mashed potatoes), BUT, I made sure I found a brand at the health food store that didn't contain a lot of questionable ingredients. FYI - Potato FLOUR has a strong potato taste and I don't use it as much as potato starch. Potato STARCH, however, is often used in GF baking, especially in combination with other flours. I consider potato STARCH a staple ingredient for GF baking. Combining gluten-free flours with NUT FLOURS will increase protein and help mask the gritty texture often associated with GF flours. Nut FLOURS are made AFTER the nut oil has been expressed from the nuts and is a fine flour. Nut MEALS are made from the ground nut (oil included) and are more gritty than nut flour. You'll find the names are often interchanged, so buyer beware.... Ground almond meal can replace dry milk powder in recipes as a dairy-free alternative. The canola oil is important to the recipe. This was the answer to the same concern about canola oil, from a website that I get sent to Disney for trying to post. The canola oil story is a HOAX!! And that's all there is to it. Any "warnings" from an e-mail are 99 percent certain to be lies and hoaxes. Don't buy into it. "What we have here is a bit of truth about a product's family history worked into a hysterical screed against the product itself. There is no earthly reason to give any credence to this rumor -- Canola oil is not the horrifying product this widely-disseminated e-mail makes it out to be, nor has the FDA turned loose on the American public a health scourge worthy of being named one of the Four Horsemen of the Apocalypse. An appreciation of what this scare is based upon begins with a better understanding of what canola oil and how it came into being. The rape plant (Brassica napus) is a member of the mustard family, as claimed in the e-mail. However, before associations between rape and mustard gas set in too strongly, it should be noted turnip, cabbage, watercress, horseradish, and radish are also members of this family of plants. Rapeseed oil has been used for cooking for centuries in Europe, India, China, and Japan. As modern science is finding out, its previous use wasn't necessarily a guarantee of safety. Cooking at high temperatures with unrefined rapeseed oil now appears to be related to an increased risk of lung cancer because at high temperatures cooking oil gives off chemicals capable of causing mutations in cells. Unrefined rapeseed oil is particularly notable for this, but other oils also have this association. Those intent upon doing large amounts of wok cooking with any sort of cooking oil should therefore lower their frying temperature from the 240C to 280°C called for in Chinese cooking to 180°C. Rapeseed oil naturally contains a high percentage (30-60%) of erucic acid, a substance associated with heart lesions in laboratory animals. For this reason rapeseed oil was not used for consumption in the United States prior to 1974, although it was used in other countries. (Americans chose to use it as a lubricant to maintain Allied naval and merchant ships during World War II.) In 1974, rapeseed varieties with a low erucic content were introduced. Scientists had found a way to replace almost all of rapeseed's erucic acid with oleic acid, a type of monounsaturated fatty acid. (This change was accomplished through the cross-breeding of plants, not by the techniques commonly referred to as "genetic engineering.") By 1978, all Canadian rapeseed produced for food use contained less than 2% erucic acid. The Canadian seed oil industry rechristened the product "canola oil" (Canadian oil) in 1978 in an attempt to distance the product from negative associations with the word "rape." Canola was introduced to American consumers in 1986. By 1990, erucic acid levels in canola oil ranged from 0.5% to 1.0%, in compliance with U.S. Food and Drug Administration (FDA) standards. Hi guys! I'm 18, and I've struggled with weight all my life. I stumbled across this on youtube, and googled, and found this page. Needless to say, I'll be starting this tomorrow. I have tried clean eating, hour workouts 6 days a week, along with aerobics that I was doing at school at the time. I only lost 6 pounds.. maybe. I'm hopeful this will work. My physical therapist's husband had suggested I take a shot of ACV before every meal to help with acid reflux, and it will help with a lot of other things. I have many health problems, so I'm hoping this will help improve my quality of living. I will try to post regularly, if anyone comes across this and wants to see any results. My current weight is 238 pounds. I want to get into the 100's. All of my doctors tell me to lose weight, but never understand that I've tried. So I'm giving this one a try!
