What should I do with my yogurt?

I am attempting to make yogurt for the first time. I read a previous thread in which many of you gave advice, and I followed some/most of that advice. Except for the bit from Annie who uses her dehydrator. I thought "hey! I have a dehydrator, great". Until I realized mine has trays so unless I spread my yogurt out very thin, won't work. But I do have a proof function in my oven. I took its temp and it was about 110, so I decided that would work.

Two problems. First, I have to bake a loaf of bread. So I pulled the bowl of yogurt out and wrapped it in a towel. I'll put it back when the oven is cooled off again. I assume that might slow things down but otherwise be okay.

Second. As usual I was slow, plus this interruption in temperatures....it will have incubated for about six hours when I absolutely have to get to bed. If it isn't thick yet, what should I do? Leave it in the oven all night? Refrigerate it anyway? ?????

thanks, I hope its good!

Ann
