Ideas for leftover caramel sauce?

I always make AnnT's bread & butter pudding for Easter, but always have caramel sauce leftover. Any suggestions on what else to use it with. Can I freeze it?

Linda, it is really good eaten by the spoonful. That is how my leftovers usually end up getting eaten.

It is also wonderful served over ice cream, over warm apple pie, gingerbread cake, brownies, etc.....

Grilled Pineapple with Caramel Sauce
Serves 4

1 Pineapple
1/4 cup caramel sauce

Cut the mean skin of the pineapple off and core. Cut the pineapple in half. Then slice the pineapple halves into 1/2" slices. If you have skewers, skewer the pieces of pineapple. Heat the grill pan over medium heat. Put the pieces or skewers of pineapple onto the grill pan. Let grill for about 3 minutes and flip and cook an additional 3 minutes on the other side. While the pineapple is grilling, drizzle a serving plate with half the caramel sauce. Once the pineapple is cooked, remove and place on the serving plate. Drizzle the top of the pineapple with the remaining caramel sauce. Serve as is or over ice cream.

I think it would be good on puffy French Toast or maybe waffles with whipped cream. I use flour in my French toast recipe, and so it has a kind of batter coating. If you have a candy mold, you could possibly melt some chocolate and use the sauce for a filling, but you would probably need to thicken the sauce with a bit of gelatin. Lars

Clare, no reason why you can't make a chocolate bread pudding out of your leftover Chocolate Cake. Just cut up the cake into cubes and mix in to the egg and cream mixture, sprinkle with sugar and bake. I've used spice cake and gingerbread cake in bread puddings before. With the chocolate bread pudding I'd serve a sauce. The caramel would work, but this vanilla sauce is wonderful with a chocolate bread pudding. Home Cookin Chapter: Recipes From Thibeault's Table Vanilla Custard for Bread PUdding ================================ 2 cups light or coffee cream 3 tablespoons flour 1/2 cup white sugar 1 egg beaten vanilla extract Bring milk to a boil. Mix the flour and sugar and mix into beaten egg. When milk is hot slowly pour the milk into the egg mixture, stirring constantly. Pour mixture back into the pot and cook over low heat until thickened. Stirring constantly. Remove from heat and add vanilla. Custard should be pouring consistency. Cover the surface with plastic wrap and refrigerate.

I would grate all into the bowl of the food processor, then mix with say 3 8 oz blocks of cream cheese, add some garilic powder ( halt a teaspoonful or more), a tablespoon of worchestershire, a couple of Tablespoons of dry parsley...perhaps some hot sauce....maybe a jag of sherry, mix, divide into 4 or 5 parts, roll into chopped nuts....wrap well and freeze. Save as a hostess gift, or bring out at St pat's day. thaw still wrapped in the refrigerator.

I freeze excess cream and use it later to make ice cream or custards. When I make waffles, I like to substitute cream for 1/4 of the milk, and you can do the same for pancakes. If you use it in biscuits, they will be more like scones, which you already make. Waffles and pancakes that are made with partial cream are much fluffier than regular ones.

Make desert crepes and fill them with bananas and caramel sauce or some other combination such as the one Glenda suggested. Sprinkle with powdered sugar.

BTW, the bananas should be sauteed in butter and maybe flambed.

Oat meal....toast...ice cream....
Anything you can think of....
But just eating it from a spoon seems so sinful...

Hmm I just had some of mine...Flourless chocolate cake..whipped cream and strawberries...caramel sauce over all..

Linda, I usually make a "half batch" though..but with company I thought I'd need more..nope...They didn't know what they were missing....LOL

BTW (once more), crepes are an easy impromptu dessert once you have tried it a couple of times. It used to be a favorite of mine and my friends who got together for informal meals on the weekend.

That stuff is good! I've made Ann's bread and butter pudding twice now. Amazing. I would put the leftovers on french toast if there was any left.

Brownies, spoons, and apples won out last evening. My neighbor had just mixed up a batch of brownies and found out her oven wasn't working, so she brought them over to bake here. So the guys had warm brownies with caramel sauce(they are both chocoholics) and us gals had mostly spoonfuls, but a little bit of apple with it.
