Need ideas for non-traditional chicken soup

OK, for all my vegetarian homies, I am not going over permanently to the dark side, but I am eating more meat due to accomodating my SO, and also I am on a restricted special diet due to health concerns and soy products and many of the cheeses are out for me, (along with a whole heck of a lot of other stuff including fruits, tomatoes, lemon, vinegar and anything else remotely acid) so I'm using more lean meat to round out my diet. Tonight we had a roasted whole chicken and now I have the carcass to make soup from. I am well versed in how to make the traditional chicken noodle soup. However, I am totally sick already of the flavors in that. I've had chicken, starch, and carrots for many, many meals.

Does anyone have a different kind of chicken soup? Unfortuanately, most pungent spices are out too, so no ginger, peppers, vinegar, lemon (darn it because Avgolemono would be YUM! But I can't do lemon), cumin, nutmeg, cloves, onions. Chicken chili is out, I can't even have mild green peppers. Only mild red peppers are OK, not the spicy kind.

Garlic is good. Green herbs are good. Almost all veggies are good except onions and tomatoes. Beans are mostly good. All starches are good, except rye.

I might do chicken corn chowder. That's all I can come up with. Anyone have any other chicken soup they make and like??
