What's with cupcake recipes?

I'm looking at a page from a magazine (Woman's Day?) that had a bunch of cupcake recipes. Two recipes for vanilla base cupcakes side by side

both have 2.5 flour, 2tsp vanilla, 1 cup buttermilk, 3 eggs, 1/2 tsp salt and baking powder

then the differences (Boston Creme pie cupcakes vs. creamsicle cupcakes - they are basically both dressed up vanilla cupcakes)

3/4 cup oil vs. "3/4 cup butter (1.5 stick)"

2 cup sugar vs. 1 1/4

1/2 tsp baking soda vs. 3/4

as someone who's trying to transition from box to scratch and doesn't have a lifetime to try all the variations to see why there are so many I find this extremely frustrating. And Martha Stewart Boston Cream vanilla calls for plain milk not buttermilk

I have no idea what to think
